NO BAKE LEMON SQUARES
My mom got this recipe from her English neighbor, in the 1940's. It's so easy to make and tastes tart, yet with a sweetness to it. It's delicious and nice and refreshing. It certainly doesn't last long in our home; always have to bring some when visiting my brother! Bet you can't eat just one! Enjoy....makes a nice summer treat.

Steps:
- Line an 8" by 9 " square pan with a layer of graham crackers.
- In the meantime, squeeze the lemons and reserve all of the juice from the three lemons. Pour sweetened condensed milk into a medium sized bowl. Pour the lemon juice into the condensed milk and stir until smooth and creamy, about 60 seconds.
- Pour half of the lemon mixture over the prepared graham crackers; repeat with another layer of graham crackers over the lemon mixture. Pour the remaining lemon mixture over the second layer of graham crackers. Crush a couple of the crackers and sprinkle over the top. Place in refrigerator overnight. By morning, the mixture will have soaked into the crackers and also will have thickened to a yummy, mouth puckering dessert. Hope you enjoy this dessert as much as our family does.
NO BAKE LEMON CHEESECAKE SQUARES
This is one of the easiest lemony cheesecake recipes I've found. There's no baking; the cooking time is chilling time.

Steps:
- Mix together the graham cracker crumbs, butter, and sugar. Press half of the mixture into a greased 8x8" baking dish. Refrigerate for 1 hour.
- Place cream cheese in a large bowl. Blend in 1/2 cup of the milk with a hand mixer on medium speed. Add the remaining 1 1/2 cups milk and the instant pudding. Mix for 1-2 minutes or until smooth.
- Pour the pudding mixture over the crust. Sprinkle the remaining crumbs over the top of the pudding. Refrigerate for at least 3 hours, until set and completely chilled.
- Cut into 9 squares to serve.
