NO-BAKE GINGER COOKIES
One of my favorite desserts in England was a cake featuring chocolate and ginger. When I came home, I tried creating different recipes using these flavors. This is easy to make and tastes fantastic! -Jennifer Warner, Huntertown, Indiana

NO BAKE COOKIES I
Tasty no-bake cookies made with oatmeal, peanut butter and cocoa. Start timing when mixture reaches a full rolling boil; this is the trick to successful cookies. If you boil too long the cookies will be dry and crumbly. If you don't boil long enough, the cookies won't form properly.

- Put all ingredients in a food processor (or high-powered blender, just be careful not to over process them) and process until the dates and almonds are completely broken down and the mixture hold together when you press it between your thumb and finger.
- Using your hands, press the mixture together and transfer it to a sheet of wax or parchment paper. Roll the mixture so it is approximately 1/4″ thick. I used a slightly damp French rolling pin to do this. You can also just press it out with your hands if you prefer. If the mixture sticks to your hands, get them slightly wet.
- Use a gingerbread cookie cutter to cut the dough and transfer the cookies to the wax or parchment paper. Roll out excess dough to make more cookies. If you are short on time and the cuteness factor isn’t important to you, you can simply cut the cookies into squares. A pizza cutter would work great for this, or just use a knife.

- Add the ground almonds and ground walnuts to the food processor and blend for 5 - 7 minutes, until the mixture starts starts clumping together. At this point, it will be half-way to a nut butter, but we'll stop at this stage.
- Add the ground oats and blend for a further 1 - 2 minutes, until the oats are evenly distributed and absorbed by the nut mixture.
- In a small bowl, mix together the sweetener of choice, molasses, spices and salt. Add the sweet mixture to the food processor and blend until the "cookie dough" becomes smooth and clumps together into a single ball.
- Roll about 1 1/2 tbsp worth of the "cookie dough" into balls and put them onto a lined baking sheet. Refrigerate the balls while you prepare the icing of choice.

- I like to already have my peanut butter and oats measured out in separate bowls or containers. It's good to have them ready to go because once it's time for them, you better have them ready.
- In a medium pot, begin melting the butter over medium heat. Just before it's all melted, add in the milk, sugar, cocoa, and cinnamon if using. Stir this together so it's well combined. Now turn up the heat. As soon as the mixture comes to a boil, begin a timer (I used my phone). Allow the mixture to cook a full two minutes.
- Turn off the heat and stir in the vanilla and peanut butter. Once the peanut butter is mixed in, stir in the oats. Quickly plop the mixture into small mounds on wax paper, topping with a little sea salt if using.
