Number Of Ingredients 8

1/4 cup cocoa
2 cups sugar
1/2 cup milk
1/2-1 cup margarine
1/2 cup peanut butter
3 cups quick-cooking oatmeal
1 teaspoon vanilla
1/8 teaspoon salt

Steps:

  • Bring first 4 ingredients to a boil.
  • Cook for 1 minute.
  • Remove from heat.
  • Add remaining ingredients.
  • Mix well and drop by teaspoon onto wax paper.
  • Let cool.
  • Note: After I have let them cool, I put them in the fridge.
  • They seem to harden better, plus they taste good that way.

1 package (8 ounces) cream cheese, softened
2 tablespoons chocolate frosting
4 cups crushed gingersnap cookies (about 80 cookies)
3/4 cup miniature semisweet chocolate chips
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 cup confectioners' sugar

Steps:

  • In a large bowl, beat the first six ingredients until blended. Shape into 1-in. balls. Roll in confectioners' sugar. Flatten to 1/4-in. thickness with bottom of glass. Refrigerate 30 minutes or until firm., Store cookies between pieces of waxed paper in an airtight container in the refrigerator. Freeze option: Freeze cookies in freezer containers separating layers with waxed paper. To use, thaw at room temperature before serving.

  • In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.

These No Bake Monster Cookies are a take on the classic chocolate peanut butter no-bake confection with monstrous amounts of added goodness and cut into bars.

6 tbsp butter (softened)
6 tbsp sugar
1/4 cup brown sugar
3/4 cup creamy peanut butter
6 tbsp quick cooking oats (pulsed in food processor)
1 tsp vanilla extract
1/2 tsp salt
1 1/2 cup quick cooking oats, ​ (not ​pulsed in the food processor)
1/2 cup plus 2 tablespoons miniature M&M's, (divided)
1 cup semi-sweet chocolate chips
3 tbsp heavy cream

Steps:

  • Prepare an 8-inch baking dish by lining it with either foil or parchment paper. Set aside.
  • In a large mixing bowl, cream together the butter and sugars. Add peanut butter and mix well.
  • Add in the 6 tablespoons of quick cooking oats (pulsed in food processor), vanilla, and salt. Slowly add the 11⁄2 cups of oats. Fold in 1⁄2 cup of M&M's.
  • Press the mixture into the prepared pan.
  • Melt the chocolate chips and heavy cream in a small bowl in the microwave, stirring every 30 seconds. Once the chocolate is smooth, spread it over the cookie dough mixture. Sprinkle with the remaining 2 tablespoons of M&M's.
  • Cover and refrigerate for at least 2 hours or until set. Cut into squares.
