NO BAKE PEANUT BUTTER BARS
These are no-bake peanut butter and crispy rice bars covered in chocolate.

- Butter a 9x13 inch baking dish. In a medium bowl, stir together the butter, peanut butter and confectioners' sugar until well blended. Mix in the rice cereal so that it is evenly distributed. Press the mixture into the prepared pan.
- In the microwave or over a double boiler, melt chocolate chips, stirring occasionally until smooth. Spread the melted chocolate evenly over the peanut butter bars. Refrigerate until set before cutting into bars.

NO-BAKE DARK CHOCOLATE SEA SALT PEANUT BUTTER BARS
Easy as 1-2-3, these bars can be adjusted to taste. Add a few more chocolate chips in the graham cracker base if you like or extra sea salt for that blast of flavor or more chocolate chips in the chocolate topping if you want a firmer topping. Refer to the written post for the fun video.

- Lightly grease a 8" x 12" pan or line the pan with parchment or aluminum foil (if you don't want the extra grease calories. That might make this recipe a little healthier. ;) )
- In bowl of stand mixer (or using electric hand mixer), beat the butter and 1 cup of the peanut butter until smooth and creamy. Then beat in the powdered sugar until smooth. Stir in the graham crackers and 1/2 cup of the dark chocolate chips. Pour and press this mixture into the baking pan into one even layer. Set aside.
- In sauce pan on low heat, add and melt remaining 1 cup of peanut butter, remaining 1/2 cup of chocolate chips, and vanilla. Do not burn or allow chocolate mixture to boil.
- Pour chocolate/peanut butter mixture over peanut butter/graham cracker base. Top with sea salt and chopped peanuts. Chill for at least 1 hour in the fridge until the chocolate is firm enough for cutting into bars.

- In a 8×8 square baking pan, line with foil, ensuring enough excess to create an overhang along the edges for easy removal of entire dessert later on. Lightly grease the lined pan and set aside.
- IN a bowl, combine the melt4ed butter, cracker crumbs, and powdered sugar. Stir to combine. Add the 3/4 cup creamy peanut butter and stir to combine well. Spread mixture into the bottom of greased/foiled pan.
- In a heavy saucepan over low heat, frequently stir 4 TB peanut butter with chocolate morsels until just melted. Immediately remove from heat and stir until chocolate mixture is smooth. Spread over the peanut butter leayer as evenly as possible. If desired, sprinkle top with a light dusting of flaky sea salt. Cover and chill until set, several hours.
- Remove entire dessert from pan using foil overhang, placing the dessert on a cutting board. Let sit 5-10 minutes or until you can easily slice through. Cut into small squares with a sharp knife (serrated works well.) Place in airtight container and keep chilled until ready to serve. Serve chilled or at moderate room temperature.

- 2. In a large bowl, mix together peanut butter, melted butter, maple syrup and salt until combined. Fold in crushed graham crackers. Pour peanut butter mixture into prepared pan (the filling will be loose). Refrigerate until firm, about one hour.
- 3. For the chocolate ganache layer, put heavy cream in saucepan and bring to a gentle simmer. Remove from heat and add in chocolate. Shake saucepan lightly so that the cream is covering all the chocolate and let sit for one minute (the warm cream will soften the chocolate). Stir together until chocolate and cream are combined. Spread chocolate over chilled peanut butter layer all the way to the edges.
