A super fast, super easy to make cookie made with chewy oatmeal, rich cocoa and creamy peanut butter. They're perfectly fudgy and always just too good to resist! A childhood favorite that I'm still making all the time.

1/2 cup (113g) salted butter
1 3/4 cups (350g) granulated sugar
1/3 cup (32g) unsweetened cocoa powder
1/2 cup (120ml) milk
1 tsp vanilla extract
2/3 cup (160g) creamy peanut butter
3 cups (275g) quick oats ((don't use old fashioned oats))

Steps:

  • Line two baking sheets with parchment paper or set out approximately 29 cupcake liners.
  • In a 2.5 to 3 quart medium saucepan combine butter, sugar, cocoa, and milk.
  • Set over medium heat, and cook stirring frequently until it reaches a full boil.
  • Allow mixture to boil 60 seconds without stirring.
  • Remove from heat, immediately add in vanilla, peanut butter and quick oats.
  • Stir mixture until well combined then, using a medium (2 Tbsp) cookie scoop or two spoons drop mixture onto lined baking sheets or into cupcake liners.
  • Allow to rest at room temperature until set, about 20 - 30 minutes (to speed up setting refrigerate).
  • Store cookies in an airtight container at room temperature.

¼ cup cacao powder (or cocoa powder)

Steps:

  • Line 2 large baking sheets with parchment paper. Set aside.
  • In a saucepan, melt the butter over medium-high heat. Add the milk, sugar, and cacao powder and stir until it starts to boil. Set a timer and let the mixture boil for 2 minutes. Then, turn off the heat.
  • Add in the vanilla, almond butter, and oats, and stir until everything is combined.
  • Using a medium sized cookie scooper, scoop the cookies onto the baking sheet. Then flatten the cookies using a spoon to desired thickness.
  • Let the cookies cool at room temperature for about 30 minutes, or chill in the fridge for about 20 minutes until firm.

2 eggs
1 teaspoon vanilla extract
1 cup butter
2 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In medium bowl, combine flour, salt, baking soda, and baking powder. Stir with fork so all ingredients are mixed.
  • In large bowl, combine sugars, and butter. Mix until smooth. Add eggs and vanilla and beat until smooth and fluffy.
  • Add 1 cup of dry ingredients at a time to mixture until all is incorporated. Stir in chocolate chips. Drop cookies onto ungreased cookie sheet and bake for about 10-15 minutes or until edges are golden brown.

My all-time favorite cookie recipe! Just a few ingredients and no time in the oven for these delicious No-Bake Cookies. Yes, I cook and bake every day, but my favorite cookie is a No-Bake Cookie!

2 cups sugar
1/2 cup milk
1/2 cup unsalted butter
1/4 cup cocoa powder
3 cups oats
1 cup creamy peanut butter
1 tablespoon vanilla extract

Steps:

  • In a large pot add sugar, milk, butter, and cocoa powder. Slowly bring to a boil while whisking. Once at a boil allow to boil for one minute (I set a timer and stopped the whisking).
  • Remove from heat and add in oats. Mix well. Add in peanut butter, mix well. Last add in vanilla extract and mix well.
  • Lay out parchment paper on the counter and spoon out the dough into cookie shapes. Allow to set for 15-30 minutes.

This recipe for chocolate no bake cookies are the classic cookie you remember, made with or without peanut butter-even with or without oats.

3 cups 330 g certified gluten free quick-cooking oats ((See Recipe Notes))
1/4 cup unsweetened cocoa powder ((natural or Dutch-processed))
8 tablespoons unsalted butter ((or virgin coconut oil))
2/3 cup milk
2 cups granulated sugar
1/8 teaspoon kosher salt
4 ounces unsweetened chocolate (chopped)

Steps:

  • Line large baking sheets with unbleached parchment paper and set aside. In a large mixing bowl, place the oats and cocoa powder, and toss to combine. Set the bowl aside.
  • In a medium-size, heavy-bottom saucepan, place the butter or coconut oil, sugar, milk, and salt. Whisking frequently, bring the mixture to a rolling boil over medium-high heat.
  • The mixture will bubble quite a lot. Just continue to whisk. Allow the mixture to boil for a full 2 minutes, whisking frequently.
  • Remove the saucepan from the heat, add the chopped chocolate and mix until the chocolate is melted, and the mixture is smooth.
  • Create a well in the center of the oats in the large bowl and pour in the sugar mixture. Mix to combine well.
  • The mixture will be thick but soft. Allow it to sit at room temperature for 5 to 10 minutes to allow it to begin to firm up.
  • Using a large ice cream scoop or two spoons, scoop the cookie dough in 2 tablespoon portions onto the prepared baking sheets, about 1-inch apart from one another. Spread each gently into an approximately 2-inch round.
  • Allow the cookies to set at room temperature or in the refrigerator. After about 30 minutes, you should be able to peel them off the parchment paper.
  • Store the finished cookies in a sealed glass container at room temperature or in the refrigerator.

  • 1. In a large iron skillet, melt margarine on medium heat. Add sugar, milk, and cocoa. Stir constantly until mixture begins to boil. Boil for exactly 1 1/2 minutes without stirring. Remove from heat and add peanut butter. Stir in completely and then stir in the oatmeal one cup at a time. When thoroughly mixed, drop by teaspoonful onto waxed paper or clean dry surface. Set up time is appoximately 5 minutes.
