- Chop the walnuts finely into small pieces, then add them to a bowl along with flaxseed, oats, and chocolate chips. Give them a quick stir.
- Add the peanut butter, honey, and vanilla. Stir until combined.
- Refrigerate uncovered for 30 minutes.
- Using a cookie scoop, scoop rounded spoonfuls of the mixture. Put them in your palms and squeeze them to create more of a rounded shape.
- Put them in the freezer at least ten minutes before enjoying.

NO-BAKE WALNUT COOKIES (GRAIN-FREE & GLUTEN-FREE)
Whether you are in a rush to put together a snack or just don't feel like going through the whole baking process, these cookies are the ticket. Sometimes I crave something sweet but don't feel like bringing out my mixing bowls and almond flour and taking the time to bake something. Instead, I can throw together these delicious and healthy cookies, made entirely in a food processor or blender.

Steps:
- Add walnuts to food processor and blend until finely ground. Add in the remaining ingredients and blend until a dough forms, about a minute.Turn out the dough onto a piece of parchment paper. Using your hands, roll pieces of the dough into small balls, about 1 inch around, and space out on parchment paper. After all of the balls are formed, press down on each ball to form a flat cookie. Place in the freezer for at least 30 minutes before serving. Store in an airtight container in the freezer.
CHOCOLATE WALNUT KAHLUA BALLS (NO BAKE)
I have made these using dark rum, Grand Marnier and Bailey's Irish Cream, you can use any three with success.. I usually make these treats around the holiday season, but of coarse you can make them at any time. I make one batch using semisweet chocolate and one with white chocolate, these really should chill overnight before serving them, you'll be lucky if they make until the next day LOL! Yield is only estimated depending on the size of the balls --- you will LOVE these! :)

Steps:
- Stir the chocolate over simmering water in a double boiler until melted and smooth; remove from heat.
- Whisk in 1/2 cup sugar and corn syrup then the Kahlua.
- In a small bowl mix together the chopped walnuts and crushed wafers; add in the chocolate mixture and mix well.
- Shape into small balls.
- Place powdered sugar in a shallow bowl.
- Roll each ball in the powdered sugar to coat.
- Place in an air-tight container and refrigerate overnight.

- Cream the sugar and butter. Add flour, nuts, salt and vanilla. Mix well. Batter will be very crumbly.
