NO BAKE CHOCOLATE HAYSTACK COOKIES
So good and easy to make! My siblings and I made huge batches of these cookies Sunday afternoons, and they were usually gone by Tuesday! The time for boiling the mixture is listed at 5 minutes, but if you cook it a little less, the cookies are chewier.

NO-BAKE HAYSTACK COOKIES
This recipe is as old as the hills, but still popular. I remember my deep regret when my school would serve them and I didn't have money to buy :(. Of course, it never occurred to me to ask my mom to make them, in spite of the fact that she was a fabulous cook. Anyway, I dusted it off the other day when I had a chocolate...

NO BAKE CHOCOLATE HAYSTACK COOKIES
These timeless kid-friendly gems are so easy. Just mix, let set and enjoy! The blend of coconut, chocolate and oats is a simple and easy treat for kids and the kids-at-heart. These babies are more like a cookie than a granola bar, but not as moist as a macaroon. The great part is they take just 10 minutes from start to eat, with no baking!

Steps:
- Add melted coconut oil and peanut butter in a medium mixing bowl and stir until combined. Add coconut sugar, cocoa powder, almond milk, sea salt, vanilla.
- If desired you can heat the peanut butter cocoa mixture on the stovetop over medium low heat to fully dissolve the coconut sugar, about 5-6 minutes. Sometimes I do this and sometimes I don't. Depends on how much time I have.
- Add oats to a large mixing bowl and top with peanut butter cocoa mixture. Stir until well combined.
- Using a small/medium cookie scoop, scoop the dough on a baking sheet lined with parchment paper. Use your hands to press the dough down a bit and form the cookies into a cookie shape.
- Place baking sheet in fridge until cookies are set, then serve. Store any leftover cookies in an airtight container in the fridge for 1-2 weeks.

NO BAKE SUGAR FREE CHOCOLATE COOKIES
Steps:
- Start by prepping a cookie sheet with parchment or wax paper . Set this aside while you work.
- In a saucepan on medium heat, combine together sugar alternative, milk, butter, unsweetened cocoa powder, and sugar free chocolate chips. Bring this to a boil stirring as it heats. Be sure to scrape the sides of the pan to reduce sticking. Once the ingredients begin to bubble, wait one minute and then remove the pan from the heat.
- Stir in the remaining ingredients, one at a time. Then use a teaspoon to scoop the batter and drop it onto the prepped cookie sheet from the first step. This should harden at room temperature within 45 minutes. Store the cookies in your refrigerator or freeze to take with you later on.

NO-BAKE CHOCOLATE HAYSTACK COOKIES -- LOWER SUGAR
I modified this from recipe#106005, because I wanted a lower-sugar cookie. My target was to try to get one cookie = 15g carbs, which is one dietary carb for those who are counting. Cooking (passive) time = cooling time. Chef#163441 deserves the credit for posting an awesome, yummy and easy cookie recipe!

- Melt chocolate chips using the double broiler over medium heat. You can use the microwave as well but be sure to do it in 15 second increments so you don't burn the chocolate.
- Once chocolate is melted turn the heat off and stir in the peanut butter. Mix until well combined and creamy.
- Remove from the heat and stir in your peanuts and chow mein noodles. I like to give the noodles a little "force" to break some of them into smaller pieces.*you can add in any other mix-ins you like but remember to increase chocolate amount to ensure proper coverage*
