NO-BAKE APPLE PIE
We always have an abundance of apples in the fall, so I like to make this easy pie. My husband has diabetes, and this recipe fits into his diet...but everyone enjoys it. -Shirley Vredenburg, Ossineke, Michigan

- In a large saucepan, mix gelatin, cinnamon, nutmeg and 1-1/2 cups water. Add apples; bring to a boil. Reduce heat; simmer, covered, until apples are tender, about 5 minutes., In a bowl, mix pudding mix and remaining water; stir into apple mixture. Cook until thickened, about 1 minute, stirring occasionally. Remove from heat; stir in nuts. Transfer to crust., Refrigerate at least 2 hours before serving. If desired, serve with whipped topping.

NO BAKE APPLE PIE BITES
Steps:
- In a medium sized saucepan over medium-high heat combine the diced apples, 1/2 cup of water, sugar, cinnamon, salt, nutmeg, allspice, lemon juice, and vanilla extract.
- Stir everything together and let the mixture cook with the lid on for about 8-10 minutes or until the apples have softened.
- Stir the mixture every few minutes and lower the heat if the apples start to stick to the bottom.
- In a small bowl whisk together the cornstarch and remaining 1/2 cup of water until the cornstarch has dissolved.
- Pour the cornstarch mixture over the apples then stir everything together.
- Continue cooking and stirring the filling for another 2 minutes or until it has thickened.
- Let the apple pie filling cool slightly before spooning it into the phyllo shells.
- Fill the phyllo shells with the filling then top them with the whipped cream and a sprinkle of cinnamon if desired.
- Serve immediately to prevent the phyllo shells from becoming soft.

- Mix all of the ingredients in a medium bowl.
- Allow to sit in the refrigerator for 30-60 minutes.
- Roll into balls. EAT!
- Store in an airtight container in the refrigerator for 3-5 days.

Steps:
- In a bowl, mix the pudding mix, milk, whipped topping, and a pinch of nutmeg.
- Layer the bottom of a 9x13 inch pan with 1 package cinnamon graham crackers. Top with 1/2 the pudding mixture. Layer with another package graham crackers. Spread the apple pie filling over the crackers. Top with another package graham crackers. Layer with remaining pudding mixture, and top all with remaining package of graham crackers.
- In the microwave, heat the vanilla frosting for about 10 seconds on High, until easily spread. Mix in cinnamon. Spread over the top layer of graham crackers in the pan. Cover, and refrigerate at least 12 hours.
