1 package (0.3 ounce) sugar-free lemon gelatin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1-3/4 cups water, divided
5 medium tart apples, peeled and sliced
1 package (0.8 ounce) sugar-free cook-and-serve vanilla pudding mix
1/2 cup chopped nuts
1 reduced-fat graham cracker crust (9 inches)
Whipped topping, optional

Steps:

  • In a large saucepan, mix gelatin, cinnamon, nutmeg and 1-1/2 cups water. Add apples; bring to a boil. Reduce heat; simmer, covered, until apples are tender, about 5 minutes., In a bowl, mix pudding mix and remaining water; stir into apple mixture. Cook until thickened, about 1 minute, stirring occasionally. Remove from heat; stir in nuts. Transfer to crust., Refrigerate at least 2 hours before serving. If desired, serve with whipped topping.

4 apples, peeled, cored, and diced into small pieces
3 tablespoons of brown sugar, use 4 tablespoons depending on how sweet you like your filling
Juice of half a lemon
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/8 teaspoon salt, nutmeg, and allspice
1 cup water, divided
3 tablespoons cornstarch
15 mini phyllo shells
Whipped cream, store bought or homemade will work

Steps:

  • In a medium sized saucepan over medium-high heat combine the diced apples, 1/2 cup of water, sugar, cinnamon, salt, nutmeg, allspice, lemon juice, and vanilla extract.
  • Stir everything together and let the mixture cook with the lid on for about 8-10 minutes or until the apples have softened.
  • Stir the mixture every few minutes and lower the heat if the apples start to stick to the bottom.
  • In a small bowl whisk together the cornstarch and remaining 1/2 cup of water until the cornstarch has dissolved.
  • Pour the cornstarch mixture over the apples then stir everything together.
  • Continue cooking and stirring the filling for another 2 minutes or until it has thickened.
  • Let the apple pie filling cool slightly before spooning it into the phyllo shells.
  • Fill the phyllo shells with the filling then top them with the whipped cream and a sprinkle of cinnamon if desired.
  • Serve immediately to prevent the phyllo shells from becoming soft.

1 cup oats (gluten-free if desired)
1/4 cup applesauce
1 tablespoon chia seeds
1 tablespoon ground flax
1 teaspoon cinnamon
1/2 cup dried apples (can also use fresh)
2 tablespoons water

Steps:

  • Mix all of the ingredients in a medium bowl.
  • Allow to sit in the refrigerator for 30-60 minutes.
  • Roll into balls. EAT!
  • Store in an airtight container in the refrigerator for 3-5 days.

2 (3.4 ounce) packages instant vanilla pudding mix
1 quart milk
1 (8 ounce) container frozen whipped topping, thawed
1 pinch nutmeg
4 individual packages cinnamon graham crackers
2 (21 ounce) cans apple pie filling
1 (16 ounce) can prepared vanilla frosting
1 pinch cinnamon

Steps:

  • In a bowl, mix the pudding mix, milk, whipped topping, and a pinch of nutmeg.
  • Layer the bottom of a 9x13 inch pan with 1 package cinnamon graham crackers. Top with 1/2 the pudding mixture. Layer with another package graham crackers. Spread the apple pie filling over the crackers. Top with another package graham crackers. Layer with remaining pudding mixture, and top all with remaining package of graham crackers.
  • In the microwave, heat the vanilla frosting for about 10 seconds on High, until easily spread. Mix in cinnamon. Spread over the top layer of graham crackers in the pan. Cover, and refrigerate at least 12 hours.
