I make this recipe every year and its the only one I actually enjoy. The mincemeat isn't as sweet or as rich as normal mincemeats, and they can be happily eaten by diabetics (like myself). Merry Christmas. Thanks to Splenda for the original recipe, some years back

8 oz raisins
8 oz currants
8 oz sultanas
5 oz candied peel
1 pkg chopped almonds
1 pkg stem ginger (diced)
1 cooking apple (cored, peeled & diced)
2 tsp mixed spice
1/2 tsp nutmeg
1 orange (finely grated zest and juice)
1 lemon (finely grated zest and juice)
8 Tbsp sweetener
5 oz vegetarian suet
10 Tbsp cold water (if needed)
3 pkg shortcrust pastry (or home made equivalent)

Steps:

  • 1. Mix all ingredients together in a bowl and cover with cling film. Leave for at least 12 hours to marinate
  • 2. Pre heat oven to lowest heat, and place all mixture in oven proof tin/dish.
  • 3. Cover the tin/dish with tin foil and put in oven
  • 4. Cook for three hours, checking every half to hourly and adding the water tablespoon by tablespoon to gain he perfect consistency of your choice.
  • 5. Pack into sterilised jars
  • 6. Roll pastry and fill with mincemeat, cook for about 15 to 20 minutes on about 190
  • 7. Store unused mincemeatin a fridge and use within four weeks

This traditional, old-fashioned dessert is a unique blend of savory and sweet made with real meat, apples and dried fruits, and plenty of spice.

Number Of Ingredients 12

1 lb. beef (see notes below)
3/4 tsp salt
1 1/2 lbs. (about 3 cups) of apples that have been peeled and chopped
1/3 cup suet chopped into small pieces (or tallow, or coconut oil, or butter, depending on what you have available) See notes below.
3/4 cup apple cider
1 Tbs ground mace (or you can substitute nutmeg if you don't have mace)
1/2 Tbs. ground cinnamon
1/2 tsp. ground nutmeg
1/2 cup raisins
1/2 dried currents (or you can substitute an additional 1/2 cup of raisins if you don't have currents)
3 Tbs. chopped candied citron pieces (optional)
Pie pastry for top and bottom crust to fit a 9inch pie plate (See notes below)

Steps:

  • If using ground beef, brown the meat in a saucepan over medium heat. If you are using other cuts of raw beef, boil the beef until it is cooked and then chop it into small pieces. Or, if you are using left over beef that has already been cooked, you can chop the meat into small pieces. After chopping the beef, add the salt to the meat.
  • In a large bowl, combine chopped apples, chopped suet (or your suet substitute) cider, spices, and fruit. Add the beef and apple cider and mix well until all ingredients are thoroughly combined. (If you want to be more authentic, you can chop up all of the ingredients together at this point to mince them finely.)
  • Line a 9 inch pie plate with pastry and then pour in the mincemeat.
  • Add the top crust, sealing the edges with a fork and cutting slivers in the top to let out steam. If you want an extra golden brown crust you can brush the top of the pie with some egg.
  • Bake in a 400 degree oven for about 45 minutes until the crust looks golden brown.

  • Peel and chop the clementines, and chop about 1 tbsp of the clementine skin really really finely. Discard the rest, or add to some vodka to make orange extract (it'll take about 8 weeks to infuse - the longer you leave it, the stronger the flavour will be).
  • Add the clementines and chopped peel, along with all the other ingredients except the cornflour, to a pan.
  • Bring to the boil and then turn the heat right down, cover the pan and simmer gently for about 10 mins. Take the lid off, mix about 1 tbsp of the mixture with the cornflour in a separate bowl, then pour the cornflour paste back into the pan. Simmer for another 5 mins until thickened. Taste a little (be careful - it will be very hot!), and adjust the sweetness to your liking, stirring in more xylitol if you wish. Allow to cool.
  • Meanwhile, make the pastry: Add the butter, flour and xylitol to a food processor and pulse until the mixture starts to look like breadcrumbs (a little tip: don't wait for fine "breadcrumbs", it's best when it looks a little "bitty" like it is lots of different sizes of breadcrumbs in the bowl). Turn the food processor on and gradually pour the water, 1 tbsp at a time, in through the spout. Wait for at least 30 secs between each tablespoon to see if the dough starts to come together. Once it has come together into a rough ball, stop the food processor, take the dough out and bring it together until smooth. Press into a disc, cover with cling film, and leave to rest in the fridge for at least 15 mins, but ideally 30 mins.
