This Is a great way to take that left over dried up pork and make it into a creamy, crunchy sandwich. Made with celery, onions, peppers and maple dressing! WINTER BLOSSOM'S OFTEN REQUESTED HAM SALAD
I have been making this salad for years and recently traveled from NJ to Oklahoma to make a batch for one of my friends. I have also Overnighted this salad to a friend in Dallas who simply loves it. Of course, I pack it in dry ice. It's fast, simple and great for a cocktail party on party rye, on toast or a bagel for breakfast, on rye with lettuce, thinly sliced onions and dill (or sweet)pickles and mayo for lunch or with pea soup and sandwich for dinner. It's down right Yummy!!! And make no changes to the ingredients because the salad will not taste the same.

Steps:
- Process the ham in a food processor until finely chopped but not pasty, about 6 or 7 pulses. You may need to do this in batches. Place the finely chopped ham in a large bowl and continue processing the remaining ham.
- Add the mayonnaise, onions, relish, and mustard to the processed ham. Mix well and, if the mixture is too dry, add more mayonnaise. Refrigerate until serving. The dried onions absorb some of the moisture from the mayonnaise and relish so you may need to add more mayonnaise before serving.

- In a large shallow dish, combine jalapeno, lime juice, fish sauce and brown sugar. Add pork; turn to coat. Refrigerate, covered, 3 hours or overnight., Drain pork, discarding marinade. TANGY PORK NOODLE SALAD WITH LIME AND LOTS OF HERBS
This light, bright salad, full of lettuce, leafy herbs and silky rice noodles, is seasoned with just enough ground pork to add richness without weighing it down. The fish sauce and citrus juices make it intense and tangy, while the honey softens its gingery bite. This salad is best served when freshly made and still very crisp, but won't suffer much from sitting out for an hour or two.

- In a small bowl, whisk together lime zest and juice, orange juice, 2 tablespoons fish sauce, honey and a small pinch of salt. Pour half of the mixture into a large bowl and whisk in 3 tablespoons grapeseed oil and the shallots. Set both mixtures aside.
- Cook noodles in salted water and according to package directions. Rinse under running water to remove any excess starch, then drain well and add to bowl with shallots, tossing well. Set aside while preparing remaining ingredients.
- Heat remaining 1 tablespoon grapeseed oil in a large skillet over medium-high heat. Add garlic, ginger and chile, and cook until lightly golden and aromatic, about 1 minute. Add pork and stir, breaking up pieces with a wooden spoon. Cook without stirring too often, until browned, about 8 minutes. Pour in lime juice mixture from the small bowl. Simmer gently until most of the liquid is evaporated, stirring to coat pork in the glaze, another 1 minute. Remove from heat and set aside to cool slightly.
- Add pork, cucumbers, scallions, cherry tomatoes, bean sprouts and herbs to the noodles and toss well to combine. Taste and add more fish sauce, lime juice or both. Just before serving, toss in lettuce, and serve sprinkled with red-pepper flakes with lime wedges on the side.

- Pre-heat oven to 350 degrees F.
- Combine flour, salt and pepper in sturdy plastic bag.
- Spread each chop with mustard, coating well on both sides (using your fingers is easiest).
- Add mustarded chops, a couple at a time, to bag of flour and shake to coat well.
- Brown chops in skillet in hot oil.
- Remove lightly browned chops to non-stick or lightly greased baking dish or pan.
- Pour undiluted soup evenly over tops of chops.
- Bake for 40 minutes.
