2 chicken breasts (boneless, skinless, cut into 2" bite size pieces)
1 zucchini (cut into 1" slices)
1 red onion (cut into 1" slices)
1/2 pint grape tomatoes
1 tbsp garlic (minced)
2 tbsp red wine vinegar
1 lemon (juiced)
1 tsp oregano
1/4 c olive oil
salt and pepper (to taste)

Steps:

  • Put diced chicken into a bowl. In another bowl whisk together the garlic, red wine vinegar, lemon juice, oregano and olive oil.
  • Pour over chicken, toss to coat. Marinate on the counter for at least 15 minutes, can leave in fridge overnight for stronger flavor.
  • When ready to cook put cut vegetables in a bowl and toss with 1 tbsp olive oil. Then sprinkle with some salt and pepper.
  • Measure skewers to ensure they are the right length to fit inside your air fryer basket first. Cut/break to fit.
  • Use wood skewers and alternate 1 pc. of chicken, then a tomato, zucchini, then onion piece until everything is used up.
  • Put prepared kebabs in air fryer basket at 380 degrees for 15-18 minutes flipping halfway through until chicken is done all the way through.

2 Pounds Boneless (Skinless Chicken Breast or Thighs)
1 Cup Water

Steps:

  • Place the trivet inside the foodi and pour the water into the foodi.
  • Add the chicken evenly on the trivet.
  • Use the pressure cooker lid and secure it to the Ninja Foodi.
  • Make sure the nozzle is moved to 'seal'.
  • Cook on high for 12 minutes. (chicken breast - 10 minutes)
  • Quick release the steam.
  • Carefully remove and shred with a fork.

Once you know how simple the Air Crisp basket with the Ninja Foodi is, you wont want to go back to baking chicken breasts any more! The delicious light lemon flavor and herbs makes this air fryer chicken a PERFECT dinner. Completely tender and never over cooked, turn your tenders into air fryer chicken nuggets or simply prep chicken for later meals like dips and casseroles. One of the best reasons to air fry is simply to rid yourself of overly greasy chicken - and while the marinade contains a bit of olive oil to stick those spices, protein packed chicken has never been healthier or easier!

1/4 cup lemon juice
1/3 cup olive oil
1 tablespoon minced garlic
2 teaspoons dried oregano
1 teaspoon coriander
1 teaspoon cumin
3/4 teaspoon nutmeg
2 chicken breasts (cut into 1" strips)
salt and pepper

Steps:

  • Add lemon juice, olive oil, garlic, oregano, coriander, cumin, nutmeg to a large bowl and mix well.
  • Add chicken strips to the mixture and spoon to evenly coat.
  • Let set to marinate, in the fridge for 20 minutes.
  • Preheat Ninja Foodi air crisp basket for 5 minutes at 360 degrees.
  • Place 1 inch chicken breast strips into pre-heated foodi basket.
  • Season chicken with salt and pepper.
  • Cook chicken tenders for 5 minutes at 360 degrees and flip, cooking or another 5 minutes on the other side (see note).
  • Remove chicken from foodi and serve immediately.
  • Please note that you may need to work in batches to get the chicken to fit into the foodi basket.

4 Medium Chicken Breasts
2 Tsp Extra Virgin Olive Oil
240 ml White Wine
200 ml Chicken Stock
2 Tsp Garlic Puree
1 Tbsp Chicken Seasoning
1 Tbsp Oregano
1 Tbsp Basil
1 Tbsp Thyme
2 Tsp Paprika
Salt & Pepper

Steps:

  • Load your seasonings into a mixing bowl and mix well.
  • Toss your chicken breasts in the seasonings making sure they are well coated.
  • Place the Ninja Foodi on sauté and add the extra virgin olive oil and give it a couple of minutes to get hot. When it is hot add in your herb crusted chicken breasts and sauté on both sides for a couple of minutes.
  • Cancel sauté, remove the chicken breasts, and deglaze the pressure cooker pot with white wine and chicken stock.
  • Add the air fryer basket into the Ninja and add the chicken breasts to it. Then place the pressure cooker lid on the Ninja Foodi and pressure cook for 5 minutes followed by 5 minutes of natural pressure release.
  • Release pressure, remove the liquid from the bottom of the pressure cooker and air fry for 5 minutes.
