NINJA 3 IN 1: CHICKEN PICCATO

Stove top/steam oven recipe. Artichokes are a great source of fiber. Stir 1 package (about 9 oz.) frozen artichoke hearts in with the capers, if desire.

2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 1/4 lbs boneless skinless chicken breast halves, thin-sliced
2 tablespoons olive oil
2 tablespoons butter
1 cup chicken broth
1 cup dry white wine
1/3 cup lemon juice
1/4 cup capers in brine, rinsed and drained
1 cup quinoa, uncooked, rinsed
1 1/4 lbs fresh asparagus, cut into 1/2-inch pieces

Steps:

  • Stir flour, salt, and black pepper on plate.
  • Coat chicken with four mixture.
  • Add oil and butter to pot.
  • Set to STOVETOP HIGH and heat until butter is melted.
  • Add chicken to pot.
  • Cook uncovered 10 minutes or until chicken is lightly browned on both sides.
  • Remove chicken from pot and place on roasting rack.
  • Add broth, wine, lemon juice, and capers to pot.
  • Stir in quinoa.
  • Place rack with chicken in pot, and place asparagus on rack with chicken.
  • Set OVEN to 300 degrees F. for 15 minutes.
  • Cover until chicken is cooked through, asparagus is tender, and quinoa breaks apart.
  • Remove asparagus and chicken from pot.
  • Stir quinoa mixture.
  • Turn off pot.
  • Let quinoa mixture stand.
  • Garnish with parsley.

1 large orange, cut in half and sectioned, reserving juice
1 medium grapefruit, cut in half and sectioned, reserving juice
1/3 cup red onion, chopped
3 tablespoons lime juice
1 tablespoon fresh cilantro, chopped
1/2 jalapeno pepper, seeded and minced
1 tablespoon honey
1 tablespoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon kosher salt
1 garlic clove, minced
1 tablespoon canola oil
4 boneless skinless chicken breast halves

Steps:

  • Coarsely chop orange and grapefruit sections. Stri orange, grapefruit, reserved juices, onion, 1 tablespoon lime juice cilantro, jalapeno pepper and honey in bowl.
  • Stir remaing lime juice, cumin, coriander, salt and garlic in another bowl.
  • Rub chicken with garlic mixture.
  • Pour oil into pot. Set to STOVETOP HIGH and heat oil.
  • Add chicken and cook 12 minutes or until browned on both sides and cooked through. turning over once halfway through cooking time. Serve with citrus salsa.

  • 1. I purchased my Ninja Cooking System thru QVC for a discounted price and received all these items (you see in photo) to go with it. You can purchase the Ninja on their online site as well as other retail stores too.
  • 2. STOVETOP: Allows you to sear and sauté. Searing & browning meat, and sautéing vegetables develops added flavors, color, and texture to your meals.
  • 3. FAST ONE-POT MEAL MAKING: The Ninja 3 in 1 Cooking System's Triple Heat Technology provides heat to both the sides & bottom of the pot that you to create complete meals all at the same time. [You can place uncooked noodles, sauce and frozen meatballs into the Ninja and it will cook to perfection in less than 1/2 hour.]
  • 4. LAYERED MEALS: You can make casseroles with every ingredient done properly --vegetables, crispy toppings, and meats prepared to perfection. Or you can use the roasting rack and place protein & vegetables on rack while starch is on the bottom. Again, they cook to perfection.
