NINFA'S GREEN SAUCE

Provided by Adapted by Lisa Fain from a Houston Chronicle recipe

Number Of Ingredients 8

3 medium-sized green tomatoes, coarsely chopped
4 tomatillos, husked and chopped
1 to 2 jalapeños, stemmed and coarsely chopped
3 small garlic cloves
3 medium-sized ripe avocados, peeled, pitted and sliced
4 sprigs cilantro
1 teaspoon kosher salt
1 1/2 cups sour cream

Steps:

  • Combine chopped tomatoes, tomatillos, jalapeños, and garlic in a saucepan. Bring to a boil (tomatoes provide the liquid), reduce heat and simmer 10 to 15 minutes.
  • Remove from heat and let cool slightly.
  • Place tomato mixture with the avocados, cilantro and salt in food processor or blender and blend until smooth.
  • Pour into a bowl and stir in sour cream.

This was submitted to a local Methodist church's cookbook by Jack Lorenzo, Ninfa's son.Ninfa Lorenzo was the owner/chef of a Mexican restaurant with several locations around the Houston area.Everything that I've ever had at her restaurant is great- Tex-Mex at its finest!You may increase the amount of garlic,cilantro,or pepper sauce according to your taste.

1 ripe avocado (soft to the touch)
1/4 cup sour cream
1/4 cup milk
1 teaspoon onion, minced
1 garlic clove, mashed to a pulp with 1/4 t. salt
1 tablespoon fresh cilantro, minced
1/2 teaspoon hot pepper sauce
2 -3 tablespoons lemon juice

Steps:

  • Peel avocado and mash to a smooth pulp.
  • Add remaining ingredients and blend with a whisk.
  • Let stand for at least an hour before serving to develop flavor.
  • Serve with tortilla chips and enjoy!

When I was growing up in Houston, there was a wonderful restaurant in our neighborhood called Ninfa's. Our favorite sauce was the Avocado Sauce that they put on the table.

1 ripe avocado
1/4 cup sour cream
1/4 cup milk
1 teaspoon minced onion
1 garlic clove, mashed to a pulp with 1/4 teaspoon of salt
1 tablespoon of minced fresh cilantro (or 1/4 teaspoon of dry)
1/2 teaspoon hot pepper sauce
6 tablespoons lemon juice

Steps:

  • Peel the Avocado and smash to a smooth pulp. Add the remaining ingredients and blend with a wire whip. Let stand for at least an hour before serving.
  • Increase to taste garlic, cilantro or pepper sauce.

  • Roast the chiles and tomatillos under the broiler until blackened on both sides, about 10-12 minutes, turning once. Once blackened, place the chiles in a paper sack or plastic food-storage bag, close it tight and let the chiles steam for 20 minutes. Place the tomatillos in a blender.
  • After the chiles have steamed, remove from the bag and rub off the skin. Remove the stems and seeds from both the chiles and add to the blender.
  • Add the avocado, garlic, cilantro, lime juice, and water to the blender. Puree until smooth, then add salt to taste (I usually start with 1/2 teaspoon kosher salt). If too thick, feel free to thin it with more water.

  • Add the green or yellow tomatoes (or the salsa verde and water) to a heavy-bottomed saucepan along with the tomatillos, jalapenos, and garlic. Bring to a boil, then lower heat and simmer for 10 to 15 minutes, or until the tomatillos are tender. Remove the pan from the burner and let the mixture cool for about 15 minutes.
  • Transfer the contents of the pan into a food processor or blender with a metal blade. Add the avocados, cilantro and salt and blend until completely smooth. Use a rubber or silicone spatula to scrape the sauce from the food processor or blender into a mixing bowl and whisk in the sour cream or Greek yogurt until evenly coloured. Serve immediately or store in a jar or other container with a tightly fitting lid for up to a 4 days.
