HEALTHY BANANA BREAD MUFFINS



Healthy Banana Bread Muffins image

A banana bread muffin so light, fluffy and tender, you'd never guess it's made with mostly whole-wheat flour. Using very ripe bananas keeps the muffins moist and minimizes the amount of sugar you add.

1 cup whole-wheat flour (see Cook's Note)
1/2 cup all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
5 tablespoons coconut oil, melted
1/4 cup packed dark brown sugar
1/4 cup maple syrup
1 teaspoon pure vanilla extract
2 large egg whites, at room temperature
1 1/2 cups mashed very ripe banana (about 3 large bananas)
1/2 cup chopped walnuts, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a 12-cup muffin pan with paper liners. Whisk together the whole-wheat flour, all-purpose flour, baking powder, cinnamon, baking soda and salt in a medium bowl.
  • Whisk together the coconut oil, brown sugar, maple syrup, vanilla and egg whites in a separate medium bowl until well combined. Stir in the mashed banana. Add the dry ingredients to the wet and stir until combined. Stir in the chopped walnuts if using.
  • Fill the lined muffin cups about three-quarters of the way with the batter (a generous 1/4 cup in each; see Cook's Note). Bake on the center rack until a cake tester or toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. Let cool 10 minutes, then remove the muffins to a wire rack to cool completely.

1/2 cup vegetable oil

2 large eggs, at room temperature
1/8 teaspoon fine salt
1/2 teaspoon pure vanilla extract
3/4 cups chopped walnuts

Steps:

  • Preheat the oven to 425 degrees F.
  • Lightly brush a 12-muffin tin with butter and set aside.
  • Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.
  • Whisk the banana, oil, milk, eggs, salt, and vanilla in a large measuring cup with a spout or another bowl.
  • Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not overmix the batter or your muffins will come out dense. Gently stir in the nuts. Divide the batter evenly into the muffin tin.
  • Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes. Turn the muffins out of the pan and cool on the rack. Serve warm or at room temperature.

180g caster Sugar
1 egg
200g Plain Flour
1.5 teaspoons baking powder
75g melted butter
4 over ripe bananas

400g Icing Sugar
30g melted butter
150g cream cheese
Juice from 1/4 of a small lime (or lemon)
1 teaspoon of vanilla extract

Steps:

  • Preheat the oven to 180 C/ Gas 4
  • Mash the bananas and combine with the sugar, egg and melted butter.
  • Sieve in the flour and baking powder, mixing in as you go.
  • Pour into a banana bread case and place in the oven for 30 minutes, check the banana bread and remove once golden and risen.
  • Alternatively spoon into muffin cases and bake for 25 minutes, check on muffins and remove once golden and spongy.
  • Whilst the banana bread/muffins are cooling down. Begin to make the icing.
  • Whip together the melted butter and cream cheese. Then add 300g of the icing sugar and mix well.
  • Then add the lime juice and vanilla extract to the mixture. After this slowly add as much as required of the the rest of the icing sugar until the icing is sweet enough and you will know the texture is ready when a flattened tea spoon of icing is turned side ways it doesn't drip off.
  • Ice your Banana bread or Muffins once they have cooled down and add sprinkles (optional).

I have been working on this recipe for about a year now. I had several bananas were extremely ripe and I needed a recipe to use them. I was on the search for something healthy but still tastes good. I took several recipes that I had and kind of put them together.

1/4 cup melted butter
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
1 pinch salt
1 1/2 cups flour
2 tablespoons ground flax seed meal (optional)
1/4-1/2 cup mini chocolate chip (optional)

Steps:

  • Preheat oven to 350.
  • I use my kitchenaid for this -mix melted butter with bananas.
  • Add egg, vanilla, baking soda, salt, and Flax seed meal and mix well.
  • add flour and the chocolate chips last.
  • Pour into sprayed muffin tins, (I use a LARGE muffin tin and this recipe yields 6 large muffins).
  • Bake 45 mins or until a tooth pick comes out clean (the 45 mins is for the LARGE muffins).
  • Please note: I always add the flax seed meal and I try to remember the chocolate chips because it just gives them a little something extra (they tent to taste a little dry without the chocolate chips). I have omitted the sugar completely since I use VERY ripe bananas (if you want to add sugar it is 1 cup that I started with and then went to 1/2 cup and then reduced to none). I am slowly reducing the butter in this recipe, recently I reduced it to 2 tablespoons per batch. I always double if not triple this recipe!
