MAKE AHEAD FRENCH TOAST
We have made this French Toast for Christmas brunch for twenty four years! It originally came from the East Coast. If you like your French toast firmer, then cut back on the milk.

Steps:
- In a large bowl, whisk together eggs, milk, cream and vanilla. Dip bread slices into egg mixture and place in a lightly greased 9x13 inch baking pan. Refrigerate overnight.
- The next morning: Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, combine butter, sugar, maple syrup and pecans. Spoon mixture over bread.
- Bake in preheated oven until golden, about 40 minutes. Let stand 5 minutes before serving.

FRENCH TOAST CASSEROLE
French Toast Casserole is perfect for prepping the night before and popping in the oven for a weekend or holiday brunch! An overnight French toast bake with cinnamon, vanilla and maple syrup and crispy cinnamon sugar topping.

Steps:
- Lightly grease a 9x9" pan.
- Cut or tear bread into 1" cubes and place in pan -- it will be full and that's okay!
- In a medium bowl, whisk together eggs, milk, maple syrup, cinnamon and vanilla. Pour over bread in pan, doing your best to evenly distribute the mixture over the bread.
- Using a spatula, press the bread down into the liquid the best you can.
- Cinnamon Sugar: In a small bowl, combine sugar and cinnamon. Sprinkle over bread.
- Cover and refrigerate at least 2 hours or overnight.
- Cover (with foil or a lid) and bake at 350 degrees F for 40 minutes. Remove cover and bake another 15-20 minutes until set in the middle and top is slightly crispy.
- Glaze: stir together powdered sugar and milk and drizzle over French toast, or serve with syrup, fruit, whipped cream or yogurt as desired.

EASY NIGHT BEFORE FRENCH TOAST RAPHAEL
My family and friends just love this recipe! It's easy, delicious, and you make it the night before so there is no work in the morning. Just pop it in the oven and by the time the table is set and coffee is on, it's ready! I believe this recipe came from the Best of Bridge cookbook. Great served with fresh fruit or yogurt. Can also be cooked in casserole dish on the barbeque so you don't heat up your house on a hot day!

Steps:
- Put half the bread into the bottom of a greased 9 x 11 pan.
- Dot cubed cheese on top.
- Cover with the rest of the bread.
- Combine remaining ingredients and pour over bread mixture.
- Cover and refrigerate overnight.
- Bake at 375 degrees for 45 minutes in the morning.
- Drizzle with more syrup over top when finished baking.
- Serve while hot.
- Another variation is to add a layer of your favourite fresh fruit.
- (peaches, blueberries, apples)on top the first layer of bread cubes.

- Cut baguette into 1-in. slices. Cut each slice in half. Arrange bread in a greased 11x7-in. baking dish. - Grease a 13 x 9 x 2 inch pan.
- Cut bread into 1 inch slices and arrange in one layer in bottom of pan.
- Beat eggs with remaining ingredients, except butter, and pour over bread in pan.
- Cover with foil and refrigerate 4-36 hours. To bake, uncover pan, dot with butter, sprinkle with cinnamon and sugar.

FRENCH TOAST CASSEROLE
French Toast Casserole is the easiest way to serve a breakfast favorite to a large group. This dish is easily prepared in 15 minutes, chilled overnight, and popped in the oven in the morning for a delicious brunch.

- Spray a 9x13 baking dish with cooking spray, set aside.
- Cut the 2 day old loaf of french bread into cubes and place in the bottom of the 9x13 baking dish.
- In a separate large mixing bowl combine eggs, whole milk, half and half, sugar, almond extract, cinnamon, salt, and allspice. Whisk together well.
- Pour egg mixture over the cubes of french bread in the 9x13 baking dish, making sure to soak all pieces as you are pouring. NOTE: If using optional pecans, go ahead and top the bread mixture in the casserole dish with ½ cup chopped pecans.
- In a separate medium mixing bowl combine the brown sugar, cold butter, and cinnamon. Use two knives to cut the mixture together until crumbly. Sprinkle over the top of the french toast casserole.
- Cover with foil and refrigerate overnight.
- When ready to cook the french toast casserole preheat the oven to 375 degrees. Uncover and place on the middle rack in the middle of the oven and cook for 35-40 minutes. Check to make sure the center of the french toast casserole is set and not jiggly. Continue to cook, checking every 5 minutes until the casserole is set in the middle.
- Remove from the oven and let sit for 5 minutes to allow it to completely set.
- Sprinkle powdered sugar over the top of the casserole and serve with maple syrup.
