NIGERIAN CHICKEN STEW
The Nigerian Chicken stew is a thick, hearty stew made with bell pepper, tomatoes onions, aromatics, and seasonings.

Steps:
- Slice the tomatoes, peppers, and onions into two halves and place them in a sheet pan alongside the garlic cloves. Brush generously with oil and place in a 425F preheated oven and roast for 30 minutes or till slightly charred. Blend everything with the ginger root and set aside.
- Season the chicken with paprika, thyme, curry powder, salt, and pepper. Set aside.
- In a large skillet, heat oil over medium heat, add 2 tbsp from the diced onions, and cook till the oil becomes fragrant.
- Add the chicken legs and fry until they become well browned on both sides-about 10 minutes on each side. Remove from pan and set aside.
- Add the remaining diced onions inside the same pan where the chicken was fried. Cook till the onions become translucent. Add the blended sauce and bay leaves and cook for 5 to 10 minutes.
- Add the chicken broth, paprika, curry powder, rosemary, bouillon powder, black pepper, and salt to taste.
- Gently put the fried chicken in the sauce and leave to simmer until the chicken becomes tender about 20 minutes - a little more or less depending on how big your chicken is.
- Stir occasionally to prevent burning and adjust the thickness of stew with water or stock if necessary.
- Serve over white rice, pasta, couscous, or eat with freshly baked bread.

Steps:
- 1. In a bowl, mix all the seasonings and work into the chicken pieces. Cover and put into fridge for 15-30 minutes or longer if possible.
- 2. Preheat oven to 325F (160c)
- 3. Spray baking dish with cooking oil. Arrange pieces, spaced apart.
- 4. Bake for 45mins-1 hour. Turning 3-4 times.
- 5. Serve with steamed vegetables or any side dishes you like.

- Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
- Wipe the chicken drumsticks dry with paper towels. Arrange them in a single layer on the baking sheet.
- Prepare the rub: In a small bowl, combine the olive oil, kosher salt, chili powder and cayenne pepper to create a paste. Pour the paste over the chicken pieces and, using your hands or a pastry brush, coat the chicken on all sides.
- Bake the drumsticks until cooked through (their internal temperature should reach 165ºF) and juices run clear, about 40 minutes. Check them after the first 30 minutes and loosely cover them with foil if they seem to be darkening too fast on top.
- If you wish, garnish with chopped parsley and red pepper flakes, then serve.

- Preheat oven to 425 (I have also used broil sometimes. If you choose to broil, please keep an eye on it and flip it a couple of times to cook evenly.)
- Mix the entire dry rub except for the oil, place clean chicken in a clean bowl, and liberally sprinkle the rub on the already washed/clean chicken. Then sprinkle the oil on top as well. Wear gloves or use your clean hands and ensure the mix gets on every part of the chicken drumstick. Then place the marinated chicken on a (foiled lined) baking sheet and place in a 425 degrees already preheated oven.
- Bake for 25 – 30 minutes (or until the drumsticks are cooked through or the internal thermometer reads 165, set aside.) You may flip the drumstick in the middle of baking to ensure even baking. This is highly recommended if you choose to broil this chicken. (Sometimes, I usually do not flip the chicken especially if baking.)
- Serve with whatever you choose or eat like that. The last time I made these drumsticks, I did serve this with quinoa Jollof, and they were divine.
