NOODLE SOUP FOR NEEDY PEOPLE

I have to say, to be prescriptive about a noodle soup seems to be against the ethos of what you're actually cooking. When I need a noodle soup, believe me I am in no mood to start weighing and measuring. I heat some broth, of some description or other, and throw in a variety of vegetables that are skulking about in the fridge and the most soothing noodles I can find. You can add other things, some chicken strips or, at the end, some fine rags of raw tuna or salmon, but I generally want the vegetably broth and noodles by themselves. The protein element, while so desirable in so many ways I'm sure, is not what I'm after here. But anyway, I throw down a blueprint here. Don't get caught up in it, but follow it if it feels helpful.

6 ounces udon noodles (dried, from a packet)
3 cups chicken or vegetable or dashi broth
1 teaspoon brown sugar
1 star anise
1 teaspoon minced ginger
2 tablespoons soy sauce
3/4 cup bean sprouts
3/4 cup sugar snaps
3/4 cup sliced shiitake mushrooms
2 heads baby bok choy, finely sliced
2 tablespoons freshly chopped cilantro leaves

Steps:

  • Cook the noodles according to packet instructions and while the water is boiling fill a nearby saucepan with stock, brown sugar, star anise, ginger and soy sauce. (When the noodles are done, just drain them and put half in each bowl.)
  • When the flavored stock comes to a boil, add the vegetables. They should be cooked before 2 minutes are up.
  • Pour half into each bowl, over the cooked and drained noodles and sprinkle with cilantro.

COLD CURE SOUP

This soup started life as quite a different thing. I'd made a traditional Persian chicken, cinnamon and Seville-orange stew and realized that it was the scented broth I loved the most. So I cut to the chase. A supermarket packet of chicken wings, a stick of cinnamon, a carrot, an onion, a knob of ginger and the juice and zest of an orange left to simmer on the stove make a restorative broth that delights, soothes and helps fight off winter blues. I like it sprinkled with chopped cilantro and chilies, but you could make more of a meal of it by adding shredded chicken and noodles. (This recipe originally called for a Seville orange, but we've modified it so it can be made with a combination of orange and lime juice. If you have access to Seville oranges, all the better!)

3 pounds chicken wings
1 carrot, peeled and halved
1 onion, peeled and halved
1 cinnamon stick
1 3-inch knob of ginger, peeled
1 tablespoon Maldon salt or 1 1/2 teaspoons table salt
1/4 cup fresh citrus juice (2 parts orange juice to 1 part lime juice), plus zest in strips
Chopped cilantro, for garnish
1 small red chili pepper, seeded and cut into fine rings, for garnish

Steps:

  • In a large stockpot, combine chicken, carrot, onion, cinnamon, ginger and salt. Add 3 quarts water, orange zest and juice.
  • Place over high heat, and bring to a boil, then reduce heat to low. Simmer, uncovered, until liquid has reduced to about half and chicken flavor is strong, 1 1/2 to 2 hours.
  • Pour through a fine mesh strainer into a bowl, and discard solids. Allow broth to cool, then refrigerate overnight. When ready to serve, remove layer of solidified fat from surface, and wipe surface of congealed soup with a paper towel to remove traces of grease. Soup may be covered and refrigerated for up to three days.
  • To serve, warm soup, ladle into mugs or bowls, and garnish.

6 1/2 cups chicken stock
1 heaping tablespoon tom yam hot and sour paste
4 kaffir lime leaves, finely chopped, optional
1 stalk lemongrass, bottom, inner part only, roughly chopped
1 lime, juiced
4 tablespoons fish sauce (nam pla)
2 to 3 small jalapenos or fresh red or green chiles, finely chopped
1 teaspoon sugar
1 1/2 cups plus 2 tablespoons, straw or button mushrooms, halved or quartered
1 pound (2 ounces) peeled, raw shrimp
Five 1-inch pieces small scallions, sliced thin
1 bunch cilantro, leaves chopped

Steps:

  • In a medium saucepan, heat chicken stock, tom yam paste, lime leaves, lemon grass, lime juice, fish sauce, chiles, and sugar. Once it has come to a boil, add mushrooms and simmer for 2 minutes. Add shrimp and scallions and cook for 2 to 3 minutes allowing the shrimp to cook but still be tender. Sprinkle with cilantro and serve immediately. Place extra cilantro on the table for people to add more.

175 g dried udon noodles
750 ml vegetable stock or 750 ml dashi stock
1 teaspoon soft dark brown sugar
1 star anise
1 teaspoon grated gingerroot
2 tablespoons soy sauce
75 g bean sprouts
75 g sugar snap peas
75 g sliced shiitake mushrooms
2 baby pak choi, finely sliced
2 tablespoons chopped fresh coriander, to serve

Steps:

  • Cook the noodles according to packet instructions, then drain and divide between two serving bowls.
  • Meanwhile, bring the stock, sugar, star anise, ginger and soy sauce to the boil in a saucepan.
  • Add the vegetables and simmer for two minutes, or until just tender.
  • To serve, pour the vegetable mixture over the noodles in each bowl and sprinkle with coriander.

1 1/2 cups chicken broth
1 5-ounce chicken breast, sliced into strips to yield about 3/4 cup
1 tablespoon soy sauce
1 tablespoon sake, sherry or white wine
1/2 teaspoon minced ginger
1/4 cup baby corn in 1-inch pieces
1 long red chili, seeded and finely sliced into rings
1 scallion, finely sliced into rings
1 cup baby spinach
8 ounces fresh or cooked udon noodles
1/2 cup sugar snap peas

Steps:

  • In a large saucepan over medium-low heat, heat chicken broth. In a nonstick skillet over medium-low heat, cook chicken strips without any oil until they are opaque, then add soy sauce and sake, allowing them to reduce slightly. Add chicken and sauce to broth.
  • Increase heat to medium, and bring to a boil. Add ginger, corn, chili, scallion, spinach, noodles and peas. Simmer mixture for a minute or two until vegetables are tender and noodles, if fresh, have cooked, or if cooked, are reheated. Serve.
