NIGELLA LAWSON EASY CHOCOLATE PISTACHIO FUDGE

Nigella Lawson Easy Chocolate Pistachio Fudge image

So easy and quick...great for an instant chocolate fix. Make these and put them directly into the freezer. This fudge stays nice and smooth but be sure to keep these cool. I use walnuts when I don't have pistachios.

Time 20m

Yield 60 pieces

Number Of Ingredients 5

350 g dark chocolate, chopped (70 %cocoa solids)
1 (397 g) can sweetened condensed milk
1 tablespoon butter
1 pinch salt
150 g unsalted shelled pistachios

Steps:

  • Line a 23cm/9 inch square pan with foil and grease lightly -- I use the spray. Scatter nuts on the bottom of the prepared pan.
  • Place the chocolate, condensed milk, butter and salt in a glass bowl and microwave on MED(50%) for about 4 minutes. Stir every minute until just melted.
  • Pour the mixture on top of the nuts. You can smooth the top, if you want it to look tidy.
  • Nigella recommends to let the fudge cool in the fridge til set, but I put it directly in the freezer. (So I can eat it sooner!) It can be eaten directly from the freezer, as it doesn't freeze hard.
  • Cut into 2cm x 3cm pieces. Very rich and satisfying!

CHOCOLATE PEANUT BUTTER FUDGE SUNDAE

Chocolate Peanut Butter Fudge Sundae image

I've saved this to last, and for good reason: it is the ultimate ice cream sundae. Obviously, if you're not a peanut-eater, it won't be for you, but for everyone else it is the stuff of dreams. Last time I made this sauce, I nearly had to make another batch, I'd eaten so much before even getting the ice creams out of the freezer. Talking of which, obviously you should choose whichever flavors of ice cream you want. Even if you are reduced to just plain old, same old vanilla, you have a party right here. I made a jar of this for a friend to take home for her supper recently. As soon as she'd had it she sent a text saying "Bottle that sauce, make millions". Well maybe, but until then, here's the recipe:

Time 10m

Yield 4 servings for very lucky people

Number Of Ingredients 8

2/3 cup sweetened condensed milk
2/3 cup semi sweet chocolate chips
1/2 cup smooth peanut butter (recommended: Skippy)
4 scoops toffee or caramel ice cream
4 scoops chocolate ice cream
4 scoops vanilla ice cream
4 tablespoons or 1/4 cup salted peanuts, roughly chopped or left whole to taste
4 chocolate cigar cookies

Steps:

  • Put all the sweetened condensed milk, chocolate chips, and peanut butter into a saucepan and put it on the heat to melt, stirring occasionally. In about 2 minutes you should have your sauce ready. When everything has melted add 3 to 4 tablespoons of boiling water to thin the sauce.
  • Get out 4 sundae glasses and put a scoop of toffee or caramel ice cream in each, followed by 1 of the chocolate and then another of vanilla.
  • Pour over some chocolate peanut butter fudge sauce and sprinkle with salted peanuts.
  • Stick a chocolate cigar cookie in each sundae glass, hand them round and wait for people to weep with gratitude.

CHOCOLATE PISTACHIO FUDGE

Chocolate Pistachio Fudge image

I am willing to believe that a confectioner wouldn't call this proper fudge, but it tastes divine, and you won't need a sugar thermometer or have to test for frightening soft or hard ball stages. I like this best made slightly less express, but with no greater effort, by stashing it in the deep freeze. It goes really grainy and fudgy this way. If I'm not handing this straight round at a party or with coffee after dinner, I might keep half in my freezer and put the other half in one or two boxes for Christmas presents. Make sure they stay cold, though.

Time 2h10m

Yield 64 pieces of rich fudge

Number Of Ingredients 4

12 ounces 70 percent dark chocolate, chopped or 12 ounces semisweet chocolate, chopped
1 (14-ounce) can condensed milk
Pinch salt
1 cup shelled pistachios

Steps:

  • Melt the chopped chocolate, condensed milk and salt in a heavy based pan on a low heat.
  • Put the nuts into a freezer bag and bash them with a rolling pin, until broken up into both big and little pieces.
  • Add the nuts to the melted chocolate and condensed milk and stir well to mix.
  • Pour this mixture into a 9-inch square foil tray, smoothing the top.
  • Let the fudge cool and then refrigerate until set. You can then cut into small pieces approximately 3/4 by 1 3/4 inches or cutting 8 by 8 lines in the tin to give 64 pieces.
  • Once cut you can keep it in the freezer, no need to thaw just eat straight away.

VANILLA FUDGE

Vanilla Fudge image

For some reason this is known in the Antipodes (and I got this recipe from a Kiwi) as Russian Fudge and, although I like this name better, I feel that it perhaps leads the rest of us to expect something altogether more exotic, when this is the plain, comforting, yet temple-achingly sweet, confection of my childhood. I confess that even listing the ingredients below makes me hyperventilate slightly. I am no stranger to excess, but even I baulk somewhat at the amount of sugar and so on needed. But it does make an awful lot of fudge: as you can see, my portion control is rather erratic, but I reckon you can get 77 pieces out of it. I also have to preface this recipe with a warning: fudge is not exactly difficult to make, but it is dangerous. Unless you proceed with caution you will burn your pan and yourself. Never leave the pot, and make sure there are no children nearby. Mobile telephones are banned for the duration, too. You need to use your own instinct as to how long to cook the fudge. The recipe I was given indicated it took 20 minutes; my fudge was ready after 12. Just make sure you have a bowl of cold water nearby. Drop small amounts of the molten fudge into the water and if it sets (known as soft ball stage) it's ready. Or you can use a sugar thermometer, which will indicate 'soft-ball stage'. The final whisking is what turns what is a pan of toffee (though you could leave it like this if you want smooth fudge) into grainy texture traditional fudge - or what the Scots call Tablet - demands. I highly recommend adding some sea salt flakes - I imagine two teaspoons should do it - but since I made this for my daughter (and children are nothing if not traditionalists) I didn't dare stray from convention. For US cup measures, use the toggle at the top of the ingredients list.

Provided by Nigella

Yield Makes: approx. 77 pieces

Number Of Ingredients 6

250 grams soft butter
1 x 397 grams can condensed milk
175 millilitres milk
2 tablespoons golden syrup
800 grams granulated sugar
2 teaspoons vanilla

Steps:

  • Fill a small bowl or jug with ice cold water and put near the stove. Grease a tin of approx. 30 x 20cm / 12 x 8 inch or 25cm / 10 inch square, or use a throwaway foil tin, as I have in the picture. Put all the ingredients, apart from the vanilla, into a large, heavy bottomed pan and bring to the boil, stirring constantly. Boil for 12-20 minutes, still stirring all the time, until the mixture is golden and, when a bit is dropped into the water, it turns solid but still squidgy, i.e., till soft-ball stage (see intro). How long this takes depends on how ferociously it bubbles as well as on the properties and dimensions of the pan. This is hot work! When the fudge is at soft-ball stage, very carefully remove the pan from the stove and stir in the vanilla. Preferably using an electric whisk beat for about five minutes, by which time the fudge will have thickened to the texture of stiff peanut butter - this is quite steamy and strenuous - and pour and push into the prepared tin. Smooth the top as well as you can. Put in the fridge to cool, but don't keep it there for more than 2 hours, or it will set too hard, then remove and using a sharp knife, cut into squares. This is not a geometrically accurate term, as you can see from my cutting skills.
