1 quart chicken stock
½ teaspoon salt
½ teaspoon dry mustard
½ teaspoon liquid smoke flavoring
½ teaspoon paprika
½ teaspoon ground black pepper
½ teaspoon garlic powder
2 tablespoons butter
1 cup milk
8 ounces shredded Cheddar cheese
1 cup grated Parmesan cheese

Steps:

  • Combine macaroni, chicken stock, salt, dry mustard, liquid smoke, paprika, pepper, and garlic powder in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in butter, milk, Cheddar cheese, and Parmesan cheese until melted. Mixture will be soupy at first.
  • Select the "Keep Warm" setting on the Instant Pot® and allow macaroni to sit, uncovered and stirring occasionally, until all liquid has been absorbed and consistency is smooth and creamy, about 15 minutes.

4 cups chicken broth
4 Tablespoons butter
½ teaspoon salt
1 cup whipping cream
2 cups sharp cheddar cheese (shredded)
½ cup shredded Mozzarella cheese
½ cup shredded Parmesan cheese
½ teaspoon garlic salt
½ teaspoon parsley
½ teaspoon dry mustard

Steps:

  • Place macaroni in Instant Pot. Pour chicken broth over macaroni so that all macaroni is covered by liquid.
  • Cut butter into small pieces and place on top of pasta. Add salt.
  • Place lid on top of Instant Pot and secure in place.
  • Move vent to SEALING position.
  • Press MANUAL button and set timer for 4 minutes.
  • When finished cooking, allow for a 5 minute NATURAL RELEASE, then move the venting to VENTING to quickly release the remaining pressure. (Some foam might come out of the vent, just use a paper towel to quickly wipe it off)
  • Remove lid and add whipping cream, cheddar cheese, mozzarella cheese, and Parmesan cheese. Add in seasonings and mix together until the cheese is all smooth and melted.
  • Serve warm.

This is absolutely fantastic, if I do say so. It's the first recipe I made in my 6 qt. Instant Pot, by combining some recipes I found with ingredients I had on hand. If you want to use a different shape pasta (not spaghetti, linguini, etc), cut the cooking time listed on the package in half. Enjoy!

1 lb rotini pasta (500g package)
4 cups chicken broth (900 ml/1 tetra brick)
3 tablespoons butter
1 1/2 cups evaporated milk (1 can, I use partly skimmed)
2 cups cheddar cheese
salt & pepper, to taste

Steps:

  • Put pasta, broth, butter, and salt in pot.
  • Set Instant Pot to "pressure cooker" or "manual" on high for 5 minutes. After pot gets up to temperature, it will cook.
  • When time is up, release steam. If it spits out broth, release steam a little slower.
  • Set pot to "saute" and add evaporated milk.
  • Gradually stir in cheese. Add pepper to taste.

water, to boil pasta in
1 teaspoon chicken bouillon
1/4 cup butter
1/4 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper, freshly ground
2 1/2 cups skim milk
2 cups old cheddar cheese, low fat, grated
1/4 cup seasoned breadcrumbs (optional)

Steps:

  • Preheat oven to 375°F.
  • Bring water to a boil and add chicken bouillon. Cook pasta in water for 1-2 minutes LESS than the package instructs. You want it to be more al dente than what you would typically cook it to.
  • Meanwhile, add butter, flour, garlic powder, seasoned salt and pepper to a saucepan. Stir together until butter is fully melted. Whisk in milk and stirring constantly, bring to a boil. Remove from heat and stir in cheese until melted. Set aside.
  • Strain pasta when done. Return to pot and stir in cheese sauce.
  • Spray 4 litre (4 quart) casserole dish and pour in pasta and cheese sauce.
  • Sprinkle breadcrumbs over top and bake for 20 minutes.
  • *** If you don't want to bake this, cook pasta to desired doneness, mix with sauce and serve.

Kosher salt and ground black pepper
2 large eggs (, beaten)
12 ounces (355ml can) evaporated milk
1 teaspoon ground mustard
1 teaspoon Sriracha sauce or Frank's hot sauce ((optional))

Steps:

  • Pressure Cook Elbow Macaroni: Add 1lb (454g) elbow macaroni, 4 cups (1L) cold water, and a pinch of kosher salt in Instant Pot pressure cooker. Close the lid, then turn Venting Knob to Sealing Position. Pressure cook at High Pressure for 4 minutes, then Gradual Quick Release. Carefully open the lid.*Pro Tip: There is a slight chance that a tiny amount of foam will come out with the steam. Have a towel handy.
  • Mix Wet Ingredients: While the macaroni is pressure cooking, mix the wet ingredients in a medium mixing bowl. Beat 2 large eggs, then mix in 1 tsp ground mustard, 1 tsp Sriracha, and 12 ounces evaporated milk. Mix well.
  • Make Mac & Cheese: Keep heat on low or medium low (Instant Pot: use keep warm function). Give it a quick stir and see if there is excessive liquid in the pot. Drain if necessary.
