NIF'S GRILLED SRIRACHA GARLIC BREAD
We wanted to make something to go with our grilled steak and lobster and this was a terrific addition that was made up as we went along. Enjoy!.

Steps:
- Preheat gas BBQ to low heat. You can just use one part of your grill for this and cook meat, etc. on the other part.
- Mix together the mayo, parmesan cheese, garlic cloves, basil and chili sauce. Spread the mixture over each half of the loaf.
- Set the bread halves on the grill, cut side up, over low heat. You want the topping to heat up and the bottom to brown up a bit and crisp. It takes about 10 - 15 minutes. If you want to, you can place the bread on a top rack while you cook everything else. Just make sure it doesn't dry out.

Steps:
- Combine water, Sriracha and yeast in a large bowl; let stand 5 minutes until frothy.
- Lightly spoon flour into dry measuring cups; level with a knife. Add 2 3/4 cups flour, salt, and egg to yeast mixture; stir until a soft dough forms. Turn dough out onto a floured surface. Knead until smooth and elastic (about 8 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel sticky).
- Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size. (Gently press two fingers into dough. If indentation remains, dough has risen enough.) Punch dough down; cover and let rest 5 minutes.
- Roll dough into a 14 x 7-inch rectangle on a lightly floured surface. Roll up the rectangle tightly, starting with a short edge, pressing firmly to eliminate air pockets; pinch seam and ends to seal. Place roll, seam side down, in an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Lightly coat surface of dough with cooking spray; cover and let rise in a warm place 30 minutes or until doubled in size.
- Preheat oven to 375 degrees.
- Bake for 40 minutes or until lightly browned on bottom and loaf sounds hollow when tapped. Remove from pan, and brush with melted butter. Cool on a wire rack.

NIF'S CHEESY FRESH HERB AND GARLIC BREAD
I came up with this because I had some fresh herbs on hand and wanted to make garlic bread. This is what I got! You can also use a teaspoon of each kind of dried herbs if you don't have fresh, but it won't be quite the same. Also, use whatever cheese you have on hand - this is just what I had. I hope you like it. Enjoy!

Steps:
- Cut bread in half horizontally. Open loaf.
- Mix mayo, butter, garlic, rosemary, basil,parsley, green onion, salt and pepper.
- Mix cheeses together in a bowl. Put half of the cheese mixture in the mayo mixture and stir.
- Spread half of the mayo mixture on each half of the loaf. Sprinkle remaining cheese on top.
- I placed this over indirect heat in my BBQ for about 20 minutes, until heated through and the cheese was melted. I was cooking the steak on the other half of the BBQ so it was easy to keep an eye on it.
- You could bake this in the oven at 350F, but I didn't want to list how long you would bake it for because I didn't make it that way. I would guess 15 minutes.
SRIRACHA GARLIC BREAD
Adapted from a recipe on Bon Appetit, that basically said just add Sriracha sauce to butter and slather on bread. I've put in some measurements. Add or subtract to taste. I posted ingredients for about 6 slices of bread.

Steps:
- Mix butter, minced garlic and Sriracha sauce together in a small bowl.
- Spread over slices of French bread on both sides.
- Place bread on foil lined cookie sheet. Sprinkle over 2 tbls. of the Parmesan cheese.
- Broil 3 minutes on low. Turn slices over and sprinkle with the rest of the cheese and broil for another three minutes or so, until the cheese melts and the bread is golden brown around the edges. Keep an eye on them, they can go from golden brown to burnt quickly.
- Enjoy!

- Cut the bread into 8 slices.
- In a small bowl, combine the butter and the garlic powder.
- Spread on one side of each slice of bread.
- Place bread, buttered side up, on a grill over medium heat for 2 minutes or until browned.
- Turn and grill 2 minutes longer or until browned.
- Yield: 8 servings.

NIF'S GRILLED HAWAIIAN CHICKEN SKEWERS
This is a dish that I made up as I went along! It's easy and uses ingredients that most of us have on hand. There is probably enough marinade for twice the amount of chicken. I wasn't going to have a chance to stir the chicken so I wanted to make sure that it covered all of the chicken. I served this over brown basmati rice. The marinating time is not included. ****NOTE: I do not recommend marinating this for more than 2 hours. I find it gets a grainy texture if marinated too long. Enjoy!

- Mix all marinade ingredients and add chicken. Marinate for 1 to 2 hours, no more.
- If you are using wooden skewers, be sure to soak them in water for 2 hours.
- Heat grill to medium-high.
- Alternate chicken, pineapple and pepper pieces on skewers. Place on grill until chicken is cooked through, about 5 minutes on each side.
