GRANDMA'S OLD ITALIAN SPAGHETTI SAUCE WITH MEATBALLS
Grandma's sauce is an old recipe that she brought over from Italy. It is a long process with strange ingredients, but they all come together to make the best sauce I have ever had. The long process is worth your trouble the minute you take your first bite.

Steps:
- Heat 2 tablespoons of olive oil over medium heat in the bottom of a large saucepan, and fry the garlic cloves 5 to 8 minutes, until brown and fragrant. Remove the garlic cloves and set aside. Place the pig's feet and pork neck bones in the saucepan and fry, turning occasionally, until the meat and bones have browned, about 15 minutes.
- Return the garlic cloves to the saucepan, and stir in the tomato paste and 1 1/2 cups of water. Bring to a boil, and pour in the tomato puree. Reduce heat to low, and simmer for about 3 hours, stirring from the bottom often to prevent burning, until the pig's feet are tender and the mixture begins to thicken. Stir in the sugar, pepper, and baking soda. Continue to simmer while you prepare the meatballs.
- Soak the torn bread with 1 cup of water in a bowl. Squeeze excess water out of the bread, and place the bread in a large bowl with the 6 beaten eggs, ground pork, ground veal, and ground beef. Mix thoroughly and form into 24 meatballs about 2 1/2 inches in diameter.
- Heat 1 tablespoon olive oil in a large skillet over medium heat, stir in the minced garlic and chopped fresh basil, let them cook for about 1 minute, and then add the meatballs. Season with salt and pepper to taste, and fry them on all sides until brown, about 15 minutes, working in batches, if necessary.
- Place the browned meatballs, along with the oil, garlic, and basil from the skillet into the sauce, stirring lightly to avoid breaking them. Add the whole hard-boiled eggs, and simmer for about 1 1/2 more hours, until the meatballs are cooked, the sauce is thick, and all the flavors have blended.

WEIGHT WATCHERS 0 PT. HOMEMADE SPAGHETTI SAUCE
I found this recipe back in 2002 in the Weight Watchers Community Recipe Swap. Because it is all vegies and seasonings it has 0 points. I tweeked the recipe to my liking and have been making it since then - even when I'm not watching my points. It makes about 6 cups (1 1/2 cups per serving). I also add 2 Turkey Italian Sausage links to the sauce to up the points value to 2 pts. per serving. I then serve it over 1 cup of Ronzoni Smart Taste pasta for 3 more points. Gets you a good size portion for a total of 5 points. My husband also likes it. It does get a little watery looking but the flavor is there and is a good size portion.

- Saute the diced onion and green pepper in a large cooking pot using the cooking spray 5 or so minutes (until soft). Add the garlic and cook another minute or so. Add all other ingredients and simmer for 30-45 minutes.
- (As I explained above - I cook 2 Italian sausage links and cut into small pieces and add when adding all other ingredients (or cut off the casing and brown it). Serve over your choice of pasta (I use Ronzoni Smart Taste Spaghetti at 170 calories w/ .5 gram fat and 5 grams fiber - 3 pts for 1 serving (2 oz uncooked))).
QUICK & EASY NINJA FOODI SPAGHETTI

- Use the sear/sauté function on the Ninja Foodi to sauté the garlic and onions with the olive oil.
- Add the ground sausage. Brown the meat until cooked through and break up the sausage into desired size. Stir in the salt & Italian seasonings.
- Once meat is cooked, turn off the sear function and add the broth. Stir and scrape up any pieces of meat off of the bottom of the cook pan.
- Add the grape tomatoes and crushed tomatoes. There is no need to stir the ingredients. Gently add the water to the pan.
- Break up the spaghetti noodles in half and loosely layer in criss cross pattern. It is important to loosely layer the pasta to avoid it clumping together and to properly cook during pressure cooking.
- Add the pressure cooking lid and set the vent to the seal position.
- Set the pressure cook time to zero and press start. The time to come to pressure will be about 10 minutes or so. Once the pressure has been reached, set a timer for 10 minutes and allow for natural pressure release.
- After the 10 minutes of natural pressure release, switch the vent to release any remaining pressure. Then carefully remove the lid.
- Gently stir the pasta. Allow for a few minutes of rest time for any extra liquid to absorb.
- Serve with basil and freshly shredded pecorino or parmesan cheese if desired.

Only 1 WW point!!! I love to whip this up in the morning when I'm rushing around to get ready for work. I just set it up and can forget about it for a few minutes. - Heat a 6" or 8" good quality nonstick pan that has been sprayed with nonstick spray over low-medium heat. Pour in egg whites.
- Sprinkle with fresh spinach and feta. Cover with pan lid. Let set for 5 minutes or so, while checking for doneness. This would be when you no longer see uncooked egg whites settling on top of the omelette.
- Fold omelette in half onto plate and top with salt and pepper to taste.
