NICOLE'S TAILGATE PARTY CHICKEN SALAD

I am asked for this recipe every time I make it! A sure hit for summer picnics, wedding luncheons, anytime! Easy to make and tastes great. Serve plain or on croissants.

2 cups shredded cooked chicken meat
2 cups chopped celery
2 cups sliced almonds
2 cups small seasoned croutons
1 cup shredded sharp Cheddar cheese
4 hard-cooked eggs, peeled and chopped
2 cups creamy salad dressing, e.g. Miracle Whip ™

Steps:

  • In a large bowl, toss together the chicken, celery, almonds, croutons, Cheddar cheese and eggs. Mix in salad dressing until the ingredients are evenly coated. Cover and refrigerate overnight before serving for best flavor.

4 cups cubed cooked chicken breast
1-1/2 cups dried cranberries
2 celery ribs, finely chopped
2 green onions, thinly sliced
1/4 cup chopped sweet pickles
1 cup fat-free mayonnaise
1/2 teaspoon curry powder
1/4 teaspoon coarsely ground pepper
1/2 cup chopped pecans, toasted
16 whole wheat dinner rolls
Leaf lettuce

Steps:

  • In a large bowl, combine first 5 ingredients. Mix mayonnaise, curry powder and pepper; stir into chicken mixture. Refrigerate until serving., To serve, stir in pecans. Spoon onto lettuce-lined rolls.
