NICKEY'S SARDINES
I don't eat sardines very often but this is the way my DH taught me to make them...I used to just heat them served over rice with a little soy sauce. This is a lot more flavorful!

NICKEY'S CHICKEN N ASPARAGUS SOUP
A very light, simple chicken soup. Time does not include time to bring stock to boil ... might add another 5 minutes? Hehehe, I know I shouldn't write this here because you might not want to try it! Here's my friend's reaction even though I warned him that it was mildly flavored and easy on the stomach...and that he might want to add the very ingredients that he did! "About the soup...hehehe...I boiled the chicken in water for the broth, then added the chicken stock, shredded chx and asparagus. Well, the flavor just wasn't there and so I added a little salt then shoyu...something is missing...Aha, a little bit of dashi, the one with no MSG. Suddenly it changed the whole flavor! Auwe! Jam-up! And SO I decided to add sesame oil. Now this soup has gone through a metamorphosis...I call this soup: Oriental flavored Chicken Asparagus Soup. Guess I'll be bringing the soup to work for lunch."

Steps:
- Bring stock to a rolling boil in a medium size pot.
- Combine chicken and cornstarch paste in small bowl; set aside.
- Cut off and discard tough ends of asparagus. Diagonally slice tender parts into short lengths -- about 1 to1-1/2 inch lengths.
- Add the asparagus to the boiling stock. Bring to a boil and simmer for 2 minutes.
- Add the chicken to the pot, stirring to separate. Bring back to a boil and simmer for another 2 minutes.
- Add pepper to your taste. Serve hot.
- NOTE: A little cilantro to garnish and flavor is nice.

NICKEY'S SIMPLE YELLOW CAKE
An easy, very basic cake; I don't think you can hurt it. I've tried it with different extracts, alone and in combination, with candie sprinkles in it, and with cookie crumbs (Nickey's icebox butter cookie) layered on the bottom, incorporated within, and sprinkled on top ... all turned out fine:) Thinking of trying it without the pudding mix to see how that turns out.

- Preheat oven to 350 degrees F.
- Grease and flour a 13x9 inch pan.
- In a small bowl, sift together flour, baking powder, pudding mix and salt. Set aside.
- In a large bowl, cream butter, shortening, and sugar until light and fluffy.
- Beat in eggs, one at a time; then add vanilla.
- Slowly beat in the flour and the milk (Start with 1/3 of the flour mix, then 1/2 the milk, another 1/3 of the flour mix, the remaining milk, then the rest of the flour mix. Thoroughly combine without overmixing.
- Bake in 350 degree F for 30-35 minutes, or until toothpick inserted in center comes out clean.
- Cool for 10-15 minutes before removing to place on cooling rack.
- GLAZE: Beat the butter and shortening together, in a large bowl. Add the vanilla. Slowly add the cream until you get the desired consistency. Get a different 'look' by using food coloring :) Drizzle on cake.

NICKEY'S GARBAGE COOKIES
Yummmm! I love these cookies with a bit of bran flakes to give it a little crunch. I get 60 3-inch cookies.

Steps:
- Preheat oven to 350 degrees.
- Combine and sift flour, baking soda, and salt. Set aside.
- In a separate bowl, combine oatmeal, bran flakes, pecans, coconut, chocolate chips and cranberries. Set aside.
- In a large bowl, cream the butter. Add both sugars. Add egg, oil, and vanilla.
- Stir flour mixture into creamed mixture, blending well -- I add a third at a time.
- Add chocolate chips mixture.
- Drop by heaping teaspoonful onto ungreased cookie sheet. [The amount of cookies you get will depend on how large you make them.].
- Bake at 350 until cookies are lightly browned, about 15 minutes depending on your oven. Wait a few minutes then transfer to a wire rack and cool completely.
