NEW ENGLAND CLAM CHOWDER

- Heat the butter in a large pot over medium-high heat. Add the onion and celery and saute until softened, mixing often. Stir in the flour to distribute evenly. Add the stock, juice from 2 cans of chopped clams (reserve clams), cream, bay leaves, and potatoes and stir to combine. Bring to a simmer, stirring consistently (the mixture will thicken), then reduce the heat to medium-low and cook 20 minutes, stirring often, until the potatoes are nice and tender. Then add clams and season to taste with salt and pepper, cook until clams are just firm, another 2 minutes.;
- Melt the butter in a large skillet and toss the bread cubes in the butter until browned and toasted, about 2 to 3 minutes. Add parsley and season with salt and pepper.;

- Melt butter in a large kettle or stock pot over medium heat. Add onions and saute until clear. Stir in flour and cook over low heat, stirring frequently, for 2 to 4 minutes. Set aside to cool.
- In a separate pot, bring clams and clam juice to a boil. Reduce heat and simmer for 15 minutes.
- In a small saucepan, cover peeled potatoes with water. Bring to a boil and cook until potatoes are tender, about 15 minutes. Drain and set aside.
- Slowly pour hot clam stock into butter/flour mixture while stirring constantly. Continue stirring and slowly bring to a boil. Reduce heat and add cooked potatoes. Mix in half and half, salt and pepper and chopped dill. Heat through but do not boil.

- In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 15-20 minutes., In a small bowl, combine flour and 1 cup half-and-half until smooth. Gradually stir into soup. Bring to a boil; cook and stir until thickened, 1-2 minutes., Stir in clams and remaining half-and-half; heat through (do not boil). Crumble the cooked bacon; sprinkle over each serving.

- Melt butter in a large kettle or stock pot over medium heat, add onions and cook until clear; stir in flour and cook over low heat, stirring frequently, for 2 to 4 minutes; set aside to cool.
- Cook peeled and chopped potatoes until tender; drain and set aside.
- If using shucked clams, in a separate pot, bring clams and clam juice to a boil; reduce heat and simmer for 15 minutes; OTHERWISE add clam juice and clams to butter,onion and flour mixture.
- Bring to a simmer while stirring constantly, continue stirring and slowly bring to a boil; reduce heat, add cooked potatoes.
- Mix in half and half, salt and pepper and chopped or dried dill, heat through but do-not boil, enjoy.

- Put the onion, celery, and potatoes in a large saucepan. Cover with water and cook over medium heat until the potatoes are just tender. Drain the water and set aside.
- Melt the butter over low heat in a large stockpot. Add the flour, salt, pepper, and garlic powder. Stir until the mixture starts to bubble. Pour the reserved clam juice into the pot and then add enough milk to make about 4 cups of liquid. Stir over low heat until thick.
- Add the cooked veggies to the pot as well as the clams and corn. Simmer on low heat for about 30 minutes, stirring occasionally. Remove the pot from the heat and stir in the sour cream. Let the soup sit for 5 minutes before serving.

- In a pan large enough to hold the clams, bring 3 cups of water to a boil. Add clams and cover the pot. Cook over medium high heat for 7-9 minutes. If any clams don’t open, discard. Remove clams from broth and transfer to a sheet tray. Reserve the broth. Strain through a fine sieve lined with a coffee filter or cheese cloth. Strain a few times to remove all traces of sand.
- Remove the clams from the shells. With a sharp knife, cut meat around belly and reserve. Then split the bellies lengthwise and scrape out and discard the contents. Cut bellies and add to the reserved chopped clams. Discard shells.
- In a large heavy bottomed pot over medium heat, cook diced salt pork and bacon until rendered and pork fat pieces are slightly browned. Add butter and melt.
- Add celery, onions, garlic and half the potatoes and cook for about ten minutes or until onions are translucent. Stir often. Add flour and cook for another minute.
