LOBSTER ROLLS
I grew up in Nova Scotia where seafood was cheap. My Mom and grandmothers had some pretty inventive ways of making lobster 'not-boring!' Now, lobster is a treat and costs a fortune. I've paid over ten dollars for one of these lobster rolls in Cape Cod and it wasn't half as good or half as big as the ones my Mom taught me to make. This is a wonderful summer (or winter) treat and makes a fancy luncheon to impress your friends. (And no, I don't eat the green stuff in the lobster!)

Steps:
- Lightly butter the insides of the buns or rolls and line with lettuce leaves. Set aside.
- In a medium bowl, stir together the mayonnaise, lime juice, hot pepper sauce, salt and pepper until well blended. Mix in the green onion and celery, then lightly mix in the lobster so it just gets coated without falling apart.
- Stuff the lobster filling into the buns and sprinkle parsley, basil or tarragon lightly over the filling.

CLASSIC LOBSTER SALAD
Steps:
- Gather the ingredients.
- Toss the cooked, diced lobster meat with lemon juice and the celery.
- Gently stir in mayonnaise and then season with salt and pepper, to taste.
- Mound the lobster salad on lettuce leaves with a wedge of avocado, cucumber and tomatoes.
- This lobster salad can also be used as the sandwich filling for a lobster roll in a sweet bun or in traditional toasted hot dog buns with lettuce.

Steps:
- 1. Steam lobster tails for 10 minutes or until bright red.
- 2. Let cool then cut down the center of the underside of the tail and remove. Chop and put in bowl.
- 3. Slice eggs into small pieces in an egg slicer and place in bowl with lobster meat.
- 4. In another bowl mix together all remaining ingredients.
- 5. Pour this creamy mixture into lobster and egg bowl and combine. Be careful not to crush eggs.
- 6. Spread a heaping spoonful or two onto your toasted bread and top with tomato and lettuce if desired. Enjoy your yummy lunch!

- Use only crisp lettuce leaves. Wash carefully, roll in clean towel, chill in refrigerator
