2 (3 ounce) packages cream cheese, softened
1/2 cup margarine or 1/2 cup butter, softened
1/2 teaspoon vanilla
1/2 teaspoon peppermint extract
6 cups powdered sugar (1 1/2 lb.)
1/4 cup hot water
4 ounces semisweet chocolate, melted
1/4 cup margarine or 1/4 cup butter, softened
3 eggs
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
3/4 cup milk

Steps:

  • Heat oven to 350F.
  • Grease and flour two 9-inch round cake pans.
  • In large bowl, combine cream cheese, 1/2 cup margarine, vanilla and peppermint extract; blend until smooth.
  • Add powdered sugar alternately with hot water, beating until smooth.
  • Blend in chocolate.
  • In another large bowl, combine 2 cups of the frosting mixture and 1/4 cup margarine; blend well.
  • Beat in eggs 1 at a time, beating well after each addition.
  • Add flour, baking soda, salt and milk; beat until smooth.
  • Pour batter evenly into greased and floured pans.
  • Bake at 350F.
  • for 30 to 40 minutes or until toothpick inserted in center comes out clean.
  • Cool 5 minutes; remove from pans.
  • Cool completely.
  • To assemble cake, place 1 layer, top side down, on serving plate; spread with about 1/4 of frosting.
  • Top with second layer, top side up.
  • Spread sides and top of cake with remaining frosting.
  • Yield: 12 servings High Altitude: Above 35000 feet: Increase flour to 2 1/2 cups and use 1 1/2 cups of frosting mixture in cake.
  • Bake as directed above.

1 2/3 cups sugar
2/3 cup shortening
1 1/4 cups milk
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla or almond extract
5 egg whites
Chocolate Buttercream Frosting

Steps:

  • Heat oven to 350°F. Grease and flour bottom and sides of rectangular pan, 13x9x2 inches, 2 round pans, 9x1 1/2 inches, or 3 round pans, 8x1 1/2 inches.
  • Beat all ingredients except egg whites and Chocolate Buttercream Frosting in large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 2 minutes, scraping bowl occasionally.
  • Beat in egg whites on high speed 2 minutes, scraping bowl occasionally. Pour into pan(s).
  • Bake rectangle 40 to 45 minutes, 9-inch rounds 30 to 35 minutes, 8-inch rounds 23 to 28 minutes or until toothpick inserted in center comes out clean or until cake springs back when touched lightly in center. Cool rectangle in pan on wire rack. Cool rounds 10 minutes; remove from pans to wire rack. Cool completely.
  • Frost rectangle or fill and frost layers with Chocolate Buttercream Frosting.

For a perfect cake, make sure designated "room temperature" ingredients truly are; this helps ensure that the batter is fully incorporated so the cake bakes evenly.

3/4 cup/170 grams unsalted butter (1 1/2 sticks), at room temperature
1 1/4 cups/250 grams granulated sugar
2 large eggs plus 1 large egg yolk, at room temperature
1 tablespoon vanilla extract
1 1/2 cups/190 grams all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
3/4 cup/180 milliliters whole milk
3/4 cup/170 grams unsalted butter, at room temperature
2 1/2 cups/310 grams confectioners' sugar
1/2 cup/45 grams cocoa powder
1/2 cup/120 milliliters sour cream
2 ounces/55 grams bittersweet chocolate, melted and cooled
1 1/2 teaspoons vanilla extract
Pinch of fine sea salt
Sprinkles, for finishing (optional)

Steps:

  • Lightly grease a 9-by-13-inch pan with nonstick spray. Heat the oven to 350 degrees.
  • Make the cake: In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light and fluffy, 4 to 5 minutes. Beat in the eggs one at a time, then the egg yolk, scraping the sides of the bowl after each addition. Mix on medium speed until fully incorporated, about 1 minute. Add the vanilla extract and mix to combine, 15 to 30 seconds.
  • In a medium bowl, whisk the flour, baking powder, baking soda and salt to combine. Add about 1/3 of the flour mixture to the mixer and mix on low speed until incorporated, about 30 seconds. Add about half the milk and mix on low speed until incorporated, about 15 seconds more. Repeat with another batch of flour mixture, the remaining milk, then the remaining flour mixture until fully incorporated.
  • Transfer the batter to the prepared pan and spread in an even layer. Bake until a toothpick inserted into the center comes out clean and the cake is golden and separating from the pan at the edges, 30 to 35 minutes. Cool completely.
  • Meanwhile, make the frosting: Add the butter to the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed until light and fluffy, 3 to 4 minutes. Remove the bowl from the electric mixer, and sift the confectioners' sugar and cocoa into the bowl with the butter. Stir with a spatula a few times to incorporate slightly. Return the bowl to the mixer and beat on medium speed until smooth and uniform in color, 1 to 2 minutes. Add the sour cream and melted chocolate and mix on low speed until combined, about 30 seconds. Add the vanilla and salt and mix to combine.
  • Spread the frosting on the cooled cake in an even layer. Garnish with sprinkles, if desired.
