Fans of classic quiche Lorraine will go for these smoky, Swiss-cheesy potatoes. Get out the bacon and give it a try!

8 slices OSCAR MAYER Bacon, cut into 1/2-inch pieces
2 green onions, chopped
1 pkg. (30 oz.) ORE-IDA Shredded Hash Brown Potatoes
1 pkg. (8 oz.) KRAFT Shredded Swiss Cheese, divided
4 eggs
1 cup half-and-half
1/4 tsp. ground red pepper (cayenne)
1/8 tsp. ground nutmeg

Steps:

  • Heat oven to 350°F.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add onions to reserved drippings in skillet. Cook and stir 1 min. Remove from heat. Add potatoes and bacon; mix well. Spoon half the potato mixture into 13x9-inch baking dish sprayed with cooking spray; sprinkle with half the cheese. Cover with remaining potato mixture.
  • Whisk eggs, half-and-half and seasonings until blended; pour over ingredients in baking dish.
  • Bake 30 min. Sprinkle with remaining cheese; bake 5 min. or until melted.

2 tablespoons olive oil
2 teaspoons minced garlic
1/2 teaspoon salt

1/8 teaspoon pepper

Steps:

  • In a large resealable plastic bag, combine all ingredients; shake to coat. Pour into an ungreased 13-in. x 9-in. baking dish. Bake, uncovered, at 450° for 35 minutes or until potatoes are tender.

4 pound small red potatoes
1/2 cup butter, cubed
1/2 cup minced fresh parsley

Steps:

  • Cook potatoes in boiling salted water for 20-30 minutes or until tender; drain. Cool for 5 minutes. Remove skins. In a large skillet over medium heat, cook and stir the potatoes in butter until lightly browned, about 20 minutes. Stir in parsley.

Love quiche? Try this dauphinoise-like bake that skips pastry in favour of new potatoes, bacon and a creamy cheese sauce

650g baby new potato
1 tsp olive oil
2 shallots , thinly sliced
200g thick smoked bacon rashers, chopped
4 large eggs
300ml milk
170ml pot double cream
100g cheddar or gruyère or a mix of both, grated
handful rocket , plus your favourite salad dressing, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Boil the potatoes for 10-12 mins until almost tender.
  • Meanwhile, heat the oil in a frying pan and fry the shallots and bacon until the shallots have softened. Beat the eggs, milk and cream with some seasoning.
  • Slice the potatoes thickly - you can skin them first if you like - and place in a large, shallow ovenproof dish.
  • Scatter over the bacon and shallots, then pour over the egg mixture and scatter on the cheese. Bake for 25-30 mins until set. Serve topped with dressed rocket.

QUICHE LORRAINE STYLE FRITTATA



Quiche Lorraine Style Frittata image

A simple breakfast or light lunch dish, this delicious frittata is inspired by the flavours of a Quiche Lorraine but without the added complication of pastry. A great dish to make if you want to use up leftover new potatoes or bacon or to make when the cupboards are nearly bare and you are just down to a few basics!

250 g British gems ((or other baby new potatoes))
90 g lardons ((or chopped up smoked bacon))
6 large eggs
50 g cheddar cheese ((or gruyere), grated)
Salt and pepper (to taste)
Small knob of butter
Parsley for garnish (optional)
Side salad (or baked beans!) to serve with the frittata

Steps:

  • Start by cooking the whole new potatoes in boiling water for 15 minutes - until they are just done. Drain and then chop into thick slices.
  • Meanwhile fry up the lardons in a non-stick frying pan over a high heat for 2 to 3 minutes until golden. Tip out onto a plate but don't wash up the pan yet!
  • Next crack all the eggs into a jug, add half the cheese and some salt and pepper and mix together thoroughly with a fork.
  • Put the frying pan back on the heat and add the sliced potato - cook for 2-3 minutes on each side until golden. Tip onto a plate.
  • Now give the frying pan a quick wash and dry, then put it back over a medium heat and melt a small knob of butter. When the butter is foaming, turn the heat down and add the eggs. Set a timer for 5 minutes.
  • While the egg is cooking in the pan, place the potato slices on top of the egg (some may sink - don't worry that's fine) and then scatter the lardons on top. Finally scatter over the remaining cheese.
  • Next turn your grill up to high and when the timer goes, pop the frittata under the grill to brown - this should take about 3 minutes, but watch your frittata carefully, you don't want it to burn!
  • Finally, serve your frittata scattered with parsley and with a side salad...or baked beans, if you prefer!
