NEW POTATOES AND PEAS

New Potatoes and Peas image

Creamy new potatoes with tender and sweet peas are the perfect side dish for just about anything. Sautéed onion, fresh dill and scallions give an additional boost of flavor and make this dish taste like spring and summer any time of year.

Provided by Olga's Flavor Factory

Time 25m

Yield 4

Number Of Ingredients 6

3 lbs new potatoes (red or yellow small baby potatoes)
salt and ground black pepper, to taste
4 Tablespoons butter
1 small onion (or 1/2 large onion), chopped
8 oz frozen peas (petite or baby peas are my favorite)
1 Tablespoon dill and green onion, each (thinly sliced)

Steps:

  • Peel the potatoes and place in a pot, fill to the top with water. You can choose to keep the skin on the potatoes instead of peeling them. Salt to taste. Bring to a boil and cook until the potatoes are cooked through and tender in the center, about 15 minutes. Drain the potatoes.
  • Meanwhile, in a large skillet, melt the butter and add the chopped onion. Season with salt and ground black pepper to taste. Cook for about 5 minutes, just until the onion are translucent and tender.
  • Add the frozen peas, cooking in the skillet for 1-2 minutes, just until the peas heat through.
  • Add the dill and green onions, along with the cooked and drained potatoes. Mix gently to combine. Serve immediately.

NEW POTATOES IN WHITE SAUCE WITH PEAS RECIPE - (4.7/5)

New Potatoes in White Sauce with Peas Recipe - (4.7/5) image

Provided by msippigrl

Number Of Ingredients 7

3 pounds red new potatoes, peeled or scraped, then cut into 1 to 1 1/2" chunks (leave whole if small)
1 teaspoon salt
2 cups whole milk or half-and-half
1/2 cup all-purpose flour
Salt and black pepper, to taste
1/2 stick (4 T.) margarine or salted butter
1 cup frozen sweet peas, cooked

Steps:

  • Cover potatoes with water then add 1 tsp. salt and bring to a boil over medium/medium-high heat; cook until just tender. (Do not overcook or they will fall apart in the sauce.) Drain some of the water off, if needed, so that the potatoes are only about half covered. Stir 1 1/4 cups of the milk into the potatoes and bring back up to a boil. Meanwhile, in a small mixing bowl whisk together the remaining 3/4 cup milk and the flour until completely smooth. Once potatoes are boiling again, pouring in a thin stream while stirring rapidly, add the flour mixture to the potatoes and cook until thickened on medium/medium-low heat, stirring frequently. If sauce is not thick as preferred, it can be adjusted by whisking together a little more milk and flour and stirring it into the potatoes and sauce. When thickened, season with salt and freshly cracked black pepper. Add butter and cover the pot until it melts. Stir in the cooked peas and serve with fried pork chops and fresh, hot cornbread!

2 cups whole milk or half-and-half
1/2 cup all-purpose flour
Salt and black pepper, to taste
1/3 stick (5 1/2 tablespoons) margarine or salted butter
Parsley for garnish, optional

Steps:

  • Cover potatoes with water then add 1 teaspoon salt and bring to a boil over medium/medium-high heat; cook until just tender. (Do not overcook or they will fall apart in the sauce.) Drain some of the water off, if needed, so that the potatoes are less than half covered. Great accompaniment for pork chops or baked ham and cornbread.

EASY NEW PEAS AND POTATOES

Easy New Peas and Potatoes image

This is in response to a recipe request. This is a pretty basic recipe for New Peas and Potatoes. My great grandma had the best recipes, and this was one of them. We usually have this whenever we have a ham dinner. It is funny how you can have a recipe but it doesnt even come close to grandmas! LOL This is still a very good and cheap recipe. I love a lot more "gravy" with my potatoes and peas.

CREAMED POTATOES AND PEAS

Creamed Potatoes and Peas image

This Creamed Potatoes and Peas recipe is a classic side dish of potatoes and peas in a delicious cream sauce. It's delicious, easy, and great for any time of year.

Provided by Lauren Allen

Categories     Side Dish

Time 30m

Number Of Ingredients 8

1 pound baby red potatoes
1 cup frozen peas ((or fresh, *see note))
4 Tablespoons butter
1/4 cup all-purpose flour
1 cup milk
1/4 cup heavy cream (, or half and half)
1 teaspoon chicken bouillon
salt and freshly ground black pepper (, to taste)

Steps:

  • Wash and cut the potatoes into bite-size pieces. Add to a pot of boiling water and cook until fork tender, about 5-8 minutes. Be careful not to over-cook them--you don't want them to be too soft. Drain into a colander and set aside.
  • In the same pot, over medium heat, add the butter and melt. Stir in flour and cook for 1 minute, stirring constantly.
  • Slowly stir in milk, whisking the entire time, until blended and smooth. Cook, stirring, until slightly thickened. Add the chicken bullion paste and season with pepper and a little bit of salt.
  • Stir in heavy cream until you've reached a good gravy consistency.
  • Taste the sauce, and add more salt, pepper or bullion paste, as needed to reach a great flavor. Add another splash of milk, if needed, to thin the mixture.
  • Add potatoes and frozen peas and stir everything gently to coat. Serve warm.
