COCONUT POTATOES
Tasty creamy potatoes in coconut milk. Can be served with with almost any main dish.

Steps:
- Heat the olive oil in a large skillet over medium-high heat. Cook the potatoes in the hot oil until browned on all sides, about 10 minutes. Remove from skillet and reserve.
- Reduce the heat to medium, and cook the onions in the skillet until translucent, 2 to 4 minutes. Stir the garlic, ginger, turmeric, cumin seeds, and salt and pepper into the onions. Cook until fragrant, about 1 minute. Return the potatoes to the skillet and cook until almost done, about 15 minutes.
- Pour the coconut milk over the potatoes; stir in the tomato puree and chopped parsley. Cook until potatoes are cooked through and sauce has thickened, about 5 additional minutes.

CREAMED PEAS AND NEW POTATOES
Just a recipe a local farmer suggested to me to use with his potatoes and peas. I slightly modified it and it's very tasty.

Steps:
- Bring a large pot of water to a boil over high heat. Boil potatoes for 15 to 20 minutes, or until tender. Drain.
- In a medium saucepan, bring 1 cup water to a boil. Simmer peas in boiling water for 6 to 7 minutes, or until tender (do NOT overcook). Drain.
- Using the same saucepan, melt butter over medium heat. Stir in flour to make a thick paste; gradually whisk in milk, stirring constantly until slightly thickened. Season with salt and pepper to taste. Now add potatoes and peas to the sauce; simmer for about 5 minutes, stirring often. Serve immediately.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 8-12 minutes. Drain., Meanwhile, place peas and water in a small saucepan. EASY NEW PEAS AND POTATOES
This is in response to a recipe request. This is a pretty basic recipe for New Peas and Potatoes. My great grandma had the best recipes, and this was one of them. We usually have this whenever we have a ham dinner. It is funny how you can have a recipe but it doesnt even come close to grandmas! LOL This is still a very good and cheap recipe. I love a lot more "gravy" with my potatoes and peas.

Steps:
- Melt the butter in a pan, and then add flour and mix and let cook for a minute.
- Add in milk next to make a white sauce, this sauce isnt meant to be really thick, but some people prefer it thicker.
- Season with salt and pepper to taste.
- Then pour sauce over potatoes and warm the potatoes.
- Once heated through, throw peas in and serve.

- 1. In a big sauce pan cook the peas, potatoes and water and a dash of salt until tender, when cooked I always mash a potatoe to help thichen broth. Add the milk or half and half, butter and salt, pepper and onion powder, cook on medium low heat for 20 min. or so. serve in soup bowls and you'v got a nice old fashion dinner, with some crusty rolls to go with it.
