This is my "superbowl fancy food" for my husband. I got the recipe from a Mardi Gras party. Great over rice or with hot buns.

8 slices bacon, diced
1/2 cup chopped yellow onion
1/2 cup chopped green onion
1 1/2 cups chopped green bell peppers
1 cup chopped celery
1 clove garlic, minced
2 (14 1/2 ounce) cans plum tomatoes, coarsely chopped,with juice
3 tablespoons tomato paste
1/2 cup chicken stock or 1/2 cup broth
1/4 cup red wine vinegar
1/2 teaspoon dry mustard
4 drops Tabasco sauce
1 teaspoon salt
fresh ground pepper
1/2 cup dry red wine
1 lb large raw shrimp, peeled and deveined

Steps:

  • In a large skillet over medium-high heat, fry bacon until crisp, about 6 minutes.
  • With a slotted spoon, remove bacon to a plate, leaving 2 tablespoons bacon drippings in (the best part!) Reduce heat to medium.
  • Add onions, bell pepper, celery, and garlic and sauté until tender, about 6 to 7 minutes.
  • Add tomatoes, tomato paste, stock, vinegar, mustard, Tabasco sauce, salt, and pepper.
  • Return bacon to pan.
  • Simmer over medium-low heat, uncovered, for 20 minutes, stirring occasionally.
  • Add wine and shrimp and cook until shrimp turn pink, about 5 minutes.

3 medium onions, chopped
1 large green pepper, chopped
2 celery ribs, chopped
6 tablespoons butter, divided
1 can (28 ounces) diced tomatoes, undrained
1 can (15 ounces) tomato sauce
1 cup picante sauce
1 tablespoon minced fresh parsley
3 tablespoons all-purpose flour
1 can (14-1/2 ounces) chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
2 bay leaves
3 pounds cooked medium shrimp, peeled and deveined
1 can (8 ounces) mushroom stems and pieces, drained
1/2 cup pimiento-stuffed olives
1/2 cup chopped green onion
Hot cooked rice

Steps:

  • In a large skillet, saute onions, green pepper and celery in 5 tablespoons butter until tender. Add the tomatoes, tomato sauce, picante sauce and parsley. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually add the broth, salt, pepper and bay leaves. Stir into the vegetable mixture. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., Add the shrimp, mushrooms, olives and green onions. Cover and cook 10 minutes longer or until heated through. Discard bay leaves. Serve over rice.

1/4 cup dry white wine
1 large onion, diced
1/2 cup diced celery
1 large red pepper, diced
1/2 medium green pepper, diced
2 garlic cloves, minced
1 cup sliced okra (Frozen or fresh work well.)
2 (14 1/2 ounce) cans diced tomatoes
1 tablespoon tomato paste
1 cup chicken stock or chicken broth
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
1/2 teaspoon celery seed
2 bay leaves
1 lb large shrimp, peeled and deveined
salt and pepper
brown rice, cooked

Steps:

  • In a large stockpot, heat the white wine over medium heat until it boils slightly; add in the onions, celery, peppers and garlic. Saute for 10 minutes.
  • Stir in the okra, tomatoes, tomato paste, broth, and seasonings. Bring to a boil, reduce the heat and simmer for 45 minutes.
  • Add in the shrimp and continue to cook for 5 to 6 minutes or until shrimp turn pink. Season with salt and pepper if desired.
  • Spoon stew into bowls and top with a scoop of cooked brown rice.

This New Orleans-inspired dish is one I've been making for clients for as long as I've been a personal chef and this recipe never fails to please!

2 tablespoons canola oil
2 tablespoons butter
1 medium onion (finely chopped)
1 medium green bell pepper (seeds and membrane removed finely chopped)
2-3 stalks (ribs) celery (you want about the same amount as green bell pepper)
4 cloves garlic (minced)
1 tablespoon Cajun seasoning (or to taste)
1 teaspoon dried thyme
1/2 teaspoon cayenne pepper
1 bay leaf
1 can (15-ounce) tomato sauce
1 cup water (approximately to rinse out the can)
1 tablespoon Worcestershire sauce
1 pound large shrimp (16-20 count, peeled and deveined, tail removed)
Tabasco sauce (to taste)
Salt and freshly ground black pepper (to taste)
2 tablespoons chopped fresh parsley plus sprigs for garnish
Lemon wedges
Cooked rice (for serving)

Steps:

  • Heat oil and butter over medium-high heat in a skillet or saute pan. Add the onion, pepper and celery.
  • Reduce heat to medium and cook approximately 10-12 minutes or until vegetables are very soft, adjusting heat as necessary so vegetables don't burn.
  • Add the garlic, Cajun seasoning, thyme, cayenne pepper and bay leaf. Stir briefly.
  • Add the tomato sauce, water and Worcestershire.
  • Bring to a boil. Reduce heat to low and simmer uncovered 8-10 minutes or until sauce thickens.
  • Stir in the shrimp and cook 1-2 minutes or until just firm.
  • Add hot sauce, salt and black pepper to taste.
  • Remove bay leaf, sprinkle with parsley and serve immediately with hot, cooked rice and lemon wedges.

A beloved classic, New Orleans style BBQ Shrimp is bathed in a buttery sauce that's kicked up with garlic, Worcestershire sauce, and Creole seasoning.

3 tablespoons plus 1 stick cold unsalted butter, cut into small pieces
6 cloves garlic, minced
1 1/2 pounds colossal (10 to 15 per pound) unpeeled shrimp , deveined
2 teaspoons cracked black pepper
1 1/2 teaspoons Creole seasoning
1/2 cup beer, preferably lager
2 tablespoons Worcestershire sauce
2 tablespoons hot sauce, preferably Crystal
1 tablespoon fresh lemon juice, from about half a lemon
Crusty French bread , for dipping

Steps:

  • Gather the ingredients.
  • Heat 3 tablespoons butter and the garlic over medium-high heat in a large (12-inch) skillet.
  • When the garlic is sizzling, add the shrimp, black pepper, and Creole seasoning and cook, stirring and flipping the shrimp, until lightly browned, about 2 minutes.
  • Add the beer and cook, while stirring and scraping with a wooden spoon, until the beer is reduced by half, about 1 minute.
  • Add the Worcestershire sauce, hot sauce, and lemon juice and bring to a simmer, stirring until sauce is reduced and shrimp are cooked through, 3 to 4 minutes.
  • Turn the heat down to low and slowly stir in the remaining butter, in small batches, to form a smooth and velvety sauce, 3 to 4 minutes.
  • Remove from heat, divide among bowls, and serve with crusty bread to dip in the buttery sauce.

  • In a large skillet melt the butter over medium-low heat. Add the garlic and sauté for 1 minute until it is fragrant and beginning to color.
