Number Of Ingredients 18

MARINADE:
4 boneless skinless chicken breasts, pounded or cut to 1/2-inch thickness
1/4 cup vegetable oil
1/4 cup ranch dressing
1 1/2 tablespoon Worcestershire sauce
1/2 tablespoon vinegar
1/2 tablespoon lemon juice
1 1/2 tablespoon garlic, minced
1/4 teaspoon pepper
RANCH SPREAD:
1/4 cup Parmesan, grated
1/4 cup ranch dressing
PARMESAN CRUMB TOPPING:
1/2 cup Panko bread crumbs
1/4 teaspoon garlic powder
1/3 cup Parmesan, shredded
2 tablespoons melted butter
1 cup provolone, shredded

Steps:

  • Combine ingredients for marinade and pour over chicken. Marinate in refrigerator for 2 to 3 hours or overnight. Grill 12 to 15 minutes, until chicken is done. Set aside. RANCH SPREAD: Mix 1/4 cup of grated Parmesan and 1/4 cup ranch dressing. Spread 1 tablespoon onto each chicken breast. Then, top with provolone cheese. Mix bread crumbs, garlic powder, shredded Parmesan, and butter. The crumbs should be evenly moistened. Sprinkle on top of the provolone cheese. Position rack 6 to 8 inches from broiler. Preheat broiler. Transfer cooked chicken to oven-safe casserole dish. Place chicken under broiler and cook until cheese melts and crumb topping begins to turn light brown. Serve immediately.

One of my favorite dishes at the Longhorn Steakhouse is their Parmesan Crusted Chicken. This recipe is on point and just as good! The only thing missing from this awesome stay at home recipe is the wonderful wait staff they have. :)

Number Of Ingredients 18

4 chicken breasts, boneless, skinless 1/2" thick (pounded or cut to thickness)
MARINADE:
1/4 cup vegetable oil

Cook chicken until a thermometer inserted in the thickest portion of each breast reaches 160°F, about 8 minutes per side. Place chicken on a baking sheet lined with aluminum foil.
  • Stir together ranch dressing and 2 tablespoons of the Parmesan in a small bowl. Spread ranch mixture evenly over each chicken breast. Place 1 provolone slice over each breast.
  • Stir together panko, melted butter, and remaining 4 tablespoons Parmesan in a small bowl. Sprinkle mixture evenly over provolone on each breast. Broil until cheese is melted and panko is golden brown, about 2 minutes. Remove from oven, and sprinkle with chopped parsley.

  • Slice chicken breasts in half horizontally, and place into a zip top bag and add marinade. The chicken should marinate for at least 30 minutes, it is better if you allow it to marinate longer. I like to let mine marinate overnight when possible.
  • Heat a large skillet to medium heat. Add a vegetable oil. When the vegetable oil heats up add chicken. Cook the chicken for 6 to 7 minutes on one side, then flip over and cook on the other side for 4 to 5 minutes. The chicken should have a lightly browned outside edge.
  • While the chicken is cooking toss together the cheeses (Gruyere, white Cheddar, Parmesan, and Fontina). If you desire to make the cheese sauce by heating together the heavy cream and 1/2 cup of the cheese in a small skillet over low heat. Also, add the Panko breadcrumbs to a small bowl and add the melted butter. Toss the Panko breadcrumbs with the melted butter until they are lightly coated with butter.
  • Set your oven to broil. To assemble the chicken place chicken on an oven safe dish or pan and add about 1 tablespoon of cheese sauce to the chicken, then add shredded cheese blend, then top with buttered Panko Bread Crumbs. Do this for each of the chicken breasts. Place the chicken under the broiler and broil for 3 to 4 minutes or until the cheese begins to brown.
