- Place diced bacon in large stock pot over medium-high heat. Cook until almost crisp; add onions, and cook 5 minutes. Stir in water and potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered for 15 minutes, or until potatoes are fork tender.
- Pour in half-and-half, and add butter. Drain clams, reserving clam liquid; stir clams and 1/2 of the clam liquid into the soup. Cook for about 5 minutes, or until heated through. Do not allow to boil.

Steps:
- Place a fine mesh strainer over a medium bowl and strain the 4 cans of minced clams, separating the meat from the juices.
- Using a 6-quart dutch oven or pot of similar size, fry bacon over medium-high heat until fat renders and the edges begin to crisp.
- Add onion and sauté until softened and translucent, about 3 to 5 minutes.
- Reduce heat to low and add carrots, celery and flour, stirring constantly for 3-5 minutes to avoid lumps.
- Add black pepper, thyme, reserved clam juices, chicken stock, diced potatoes, and bay leaf. Stir to incorporate, then cover and bring to a boil.
- Reduce heat to a simmer and let cook until potatoes are tender, about 15 to 20 minutes.
- Remove bay leaf and add cream. Allow chowder to simmer for an additional 10-20 minutes until soup has thickened to an appropriate consistency.
- Add in reserved clam meat and cook for an additional 2-4 minutes.
- Remove from heat and serve with oyster crackers

- In a heavy-bottomed saucepot, render the salt pork until just crisp. Remove and discard. Sweat the onion in the pork fat until tender. Add the potatoes and cover with milk. Bring to a boil and let simmer until potatoes are soft. Season with salt and pepper.
- In a separate pot, fitted with a steamer basket, bring the reserved clam juice to a boil. Add clams and cover. Steam for three minutes until all clams are open. Remove the clams as they open and transfer to a bowl. Add the steaming juices to the pot with the chowder. Using a stick blender puree to desired consistency. Adjust seasonings.
- Finely chop the drained canned clams. Fold into the chowder. Serve with steamed clams, parsley, sour cream and grape tomatoes, as garnish.
NEW ENGLAND CLAM CHOWDER DIP
After joking about making this dip in a previous video, I found it turned out amazingly well. Farewell, French onion dip - a new soup-inspired dip is in town. Garnish with more parsley and serve alongside puffed potato chips since potatoes are an important part of clam chowder!

- Preheat the oven to 400 degrees F (200 degrees C).
- Cook bacon in a dry saucepan over medium heat until bacon is crispy and fat begins to foam, 6 to 8 minutes. Remove a few tablespoons of bacon to reserve for the top. Add green onions, celery, and a pinch of salt. Cook and stir until vegetables just start to soften, about 2 minutes. Drain bacon grease if desired. Turn off heat and let mixture cool.
- Place cream cheese in a large bowl. Add the bacon-veggie mixture, clams, parsley, and 4 ounces Cheddar cheese. Season with Worcestershire sauce, black pepper, and Old Bay® seasoning. Mix until nicely combined. Transfer into a small baking dish; smooth out the top. Scatter the reserved bacon and remaining Cheddar over the dip. Sprinkle cayenne pepper on top to get a richer, browned top.
- Bake in the preheated oven until dip is heated through and top is browned, about 20 minutes. Heat under the broiler to further brown the top, about 1 minute more.

NEW ENGLAND CLAM CHOWDER
Be sure to wash the clams very, very well, to remove any grit. There's nothing worse than biting into a grain of sand when eating chowder. So give the clams a good scrubbing with a stiff brush under cold running water. I used Littleneck clams (about 3 dozen for this recipe) whose meat is about the size of a silver dollar, so I ran a chef's knife over them after they're cooked - but don't overdo it. You want distinct, large pieces of clams. Not tiny bits that no one know what they are. If using other clams that are smaller, you might not need or want to chop them. See note at end of recipe for using canned clams. Some versions use all whole milk, others use heavy cream. I like about one-third cream, but you can use all whole milk or all half-and-half. Skim or low-fat milk isn't recommended. Whatever you use, Just be sure not to let the chowder boil once you've added the milk to it, or it can break. For best results, let the chowder cool and refrigerate it for a few hours - I let mine sit 8 hours, to allow it to thicken. Rewarm it gently before serving. Be sure to serve with oyster crackers which people can float them on top. Crumbled saltines will work in a pinch. (Or make your own oyster crackers with the recipe at the end of this post.)

- Put clams in a pot. Add water, and cover. Turn the heat on and when the water starts to boil, reduce the heat to a low boil and let the clams steam until they open, about 6 to 8 minutes. Remove from heat and let cool.
- When the clams are cool enough to handle, pluck out the meat from the clam shells (discard any clams that don't open), and discard the shells. Strain the liquid through a fine mesh strainer, and set aside. Coarsely chop the clams and set them aside as well.
- In a soup pot or Dutch oven, heat the butter and bacon together over medium heat, cooking the bacon for about 3 minutes, until it just starts to curl. Add the onions and cook, stirring, until they're translucent and soft, 3 to 5 minutes. Add the diced potatoes and season with salt (lightly, as the clam broth you'll add later is salty), black pepper, and paprika. Stir a few times then add 1 ½ cups (375ml) of the clam broth. (Reserve and refrigerate any extra for later, in case you want to thin the soup.) Cover and simmer until the potatoes are tender, 6 to 8 minutes.
- Add the milk and cream, then the clams and gently warm until heated through, but do not boil. You can serve the chowder right away, stirring in the parsley just before ladling into bowls, or better yet, chill the chowder for several hours, which will give it time to meld and thicken. Rewarm it gently before serving. Taste for salt and pepper, adding more if you wish. If it's too thick after standing, thin with a bit of the reserved clam broth when rewarming it.

- Heat a large stockpot or Dutch oven over medium high heat. Add the bacon and cook until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate, reserving 1 tablespoon of the fat rendered in the pot.
- Melt the butter in the stockpot with the bacon fat. Add the garlic, onion and celery, and cook, stirring frequently, until the onions become soft but not brown, about 5-6 minutes.
- Whisk in the flour and stir for about a minute trying to get rid of any lumps. Gradually, stir in the white wine and reduce for about 1 minute.
- Add the potatoes, the clam juice, the liquid from the canned clams and the broth. Add the thyme sprigs and bay leaf and bring to a boil. Lower the heat and simmer until the potatoes become tender, about 10 to 15 minutes.
- When the potatoes are tender, stir in the half and half and the clams and season with salt and pepper. Bring to a gentle simmer (do not let the chowder come to a full boil) and simmer for about 2 minutes. Remove the thyme and bay leaf. If the chowder is too thick, add additional half and half until desired consistency is reached. Serve immediately garnished with chopped parsley and the reserved bacon.
