Steps:
- Preheat oven to 350 degrees.
- Put a spoonful of the melted butter in a baking sheet or dish and spread to coat the bottom.
- Combine the bread crumbs (1 cup) with the rest of the 6 tablespoons of melted butter.
- Salt and pepper both sides of the fish liberally (I used about 1 teaspoon kosher salt and 1/4 teaspoon pepper), and lay in the buttered baking dish.
- Spread bread crumbs - all of them - evenly over the top of the fish. I use my hands to sprinkle it on (it won't really stick like traditional breading - it's more like a topping).
- Bake for 15 minutes, or until fish is cooked thoroughly (and flakes easily).
- Serve with a squeeze of lemon juice and a garnish of fresh parsley, if desired.

NEW ENGLAND BAKED HADDOCK
This is my favorite way to cook haddock. The recipe was originally for baked stuffed shrimp, so you could use it for that also.

Steps:
- Place oven rack to the upper middle position. Preheat oven to 425°F.
- Line a 13x9 baking dish or sheet pan with foil or parchment paper. Set aside.
- Put the breadcumbs and paprika into a shallow bowl or plate.
- Pat dry the haddock fillets with paper towels to remove excess moisture. Rub on all sides with the olive oil, salt and pepper.
- Dredge the haddock fillets one-by-one in the breadcrumbs, pressing to coat thoroughly on both sides. Then place in the prepared pan in a single layer.
- Bake for 10-12 minutes or until it's opaque and flakes easily. The cooking time will vary depending on the thickness of the fillets. If the breading appears pale towards the end, you can broil them or the last minute or two
- Remove from the oven and garnish with lemon. Serve immediately.

NEW ENGLAND BAKED HADDOCK
A favorite traditional recipe from New England. Rich and buttery comfort food at its best, not a fish dish for dieters!

Steps:
- Preheat oven to 400 degrees Fahrenheit. In a large ziplock bag, crush crackers with a rolling pin until crumbs are fine with no big pieces. Melt butter in a microwaveable liquid measuring cup on med power to keep butter from separating, check butter every 10 seconds and set aside when melted. Cut the Haddock fillet in half to make 2 fillets. Season with salt and pepper on both sides. Pour a small amount of butter in a 8x8 or 8x10 baking dish to lightly coat the bottom of the pan, place Haddock fillets side by side in pan. Mix the cracker crumbs in a medium mixing bowl with the Parmesan cheese and parsley until combined well. Pour half the remaining butter into the crumb mixture and mix well until all the crumbs are coated evenly. Spread crumb mixture gently and evenly over the tops and edges of the haddock fillets. Drizzle any remaining butter over the crumb mixture. Place in center of oven and bake for 15 - 17 minutes until golden brown and bubbly around the edges. Remove from oven and serve with a lemon wedge.

- Place haddock fillets in a casserole or baking dish. Fold over the thinner end of the fish under itself to even out the thickness of the fish.
- Sprinkle fillets with a little kosher salt and some pepper. I don’t mind the black specks of pepper, but if you don’t want to add pepper, it’s fine.

- Combine bread crumbs and cheese in a wide, shallow bowl (I use a pie tin). Pour milk into a separate, small bowl.
- Dip each fillet into the milk, shake off excess, and then press the fillet into the crumb mixture, turning and pressing to ensure the fish is coated on all sides. Transfer to the baking dish.
- Pour the melted butter over the fillets. Sprinkle with salt and pepper, as desired. Bake for about 15 minutes (the thicker the fillet, the longer the cooking time). The fish is done when it is firm and flakes easily with a fork.
