EASY CRANBERRY AND APPLE CAKE



Easy Cranberry and Apple Cake image

12 ounces fresh cranberries, rinsed and picked over for stems
1 Granny Smith apple, peeled, cored, and diced
1/2 cup light brown sugar, lightly packed
1 tablespoon grated orange zest (2 oranges)
1/4 cup freshly squeezed orange juice
1 1/8 teaspoons ground cinnamon, divided
2 extra-large eggs, at room temperature
1 cup plus 1 tablespoon granulated sugar
1/4 pound (1 stick) unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
1/4 cup sour cream
1 cup all-purpose flour
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F.
  • Combine the cranberries, apple, brown sugar, orange zest, orange juice, and 1 teaspoon of the cinnamon in a medium bowl. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs on medium-high speed for 2 minutes. With the mixer on medium, add 1 cup of the granulated sugar, the butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.
  • Pour the fruit mixture evenly into a 10-inch glass pie plate. Pour the batter over the fruit, covering it completely. Combine the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, until a toothpick inserted in the middle of the cake comes out clean and the fruit is bubbling around the edges. Serve warm or at room temperature.

1/2 cup Organic Pecan Pieces
1/2 cup Organic Butter (melted)
2 Organic Cage free Eggs - beaten in advance
1 teaspoon Organic Vanilla Bean Powder

Steps:

  • ) Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch pie pan.
  • ) Combine the flour, sugar, and salt. Stir in the cranberries and pecans, and toss to coat.
  • ) Stir in the butter, beaten eggs, and vanilla powder.
  • ) Spread the batter into the prepared pan.
  • ) Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a wooden pick inserted near the center comes out clean.
  • ) Allow cake to cool
  • ) Add caramel sauce and Enjoy!

1 1/2 c sugar
4 eggs
3 c sifted flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 c milk
1 c cranberries, chopped
1 c pecans, chopped
GLAZE:
MIX 2 CUPS CONFECTIONERS SUGAR
CRANBERRY JUICE

Steps:

  • 1. Cream shortening and sugar thoroughly. Add eggs, one at a time, beating well after each addition. Sift flour, baking power and salt. Add sifted ingredients to creamed mixture alternating with milk, blending well. Fold in cranberries and pecans. Spread in greased and floured tube pan.
  • 2. Bake 350 degrees for 1 hour. When cool simply sprinkle with confections' sugar.
  • 3. GLAZE: MIX CONFECTIONERS' SUGAR WITH ENOUGH CRANBERRY JUICE UNTIL LIKE HEAVY CREAM. 4 cups all-purpose flour

3 teaspoons baking powder

6 tablespoons shortening or butter
1 1/2 cup orange juice
2 eggs, well beaten

Steps:

  • Combine cranberries, nuts, and orange peel. Set aside. Mix dry ingredients in large mixing bowl. Cut in shortening. Stir in orange juice and eggs. Fold in cranberry mixture. Spoon into two greased and floured loaf pans. Bake at 350 degrees F for 60 minutes or until wooden pick inserted in the center comes out clean. Cool 15 minutes. We eat this colorful, moist cake at our women's church meetings. It's really easy to make and very tasty. The almond flavoring really blends well with the cranberries. I buy bags of cranberries when there are sales during the holidays, then freeze some so I can enjoy this treat all year round. For those with hard nut allergies, leave them out, or try sunflower seeds or peanuts. Vanilla extract can be substituted for almond extract.

Steps:

  • For the cake: Mix the flour with the sugar and the salt. Mound on the table and make a well in the center. Place the egg in the center and distribute the butter in small pieces around the flour. Chop with a knife to combine and the knead by hand into a smooth dough. Shape into a ball and wrap in plastic wrap. Chill for about 30 minutes.
  • Roll the dough on a floured work surface to the size of the pan and place it on a buttered baking sheet. Prick with a fork several times.
  • Preheat the oven to 200°C (approximately 400°F).
