This an easy tasty way of BBQing chicken. I know "canned soup?". Well go ahead and make your own sauce from scratch but in the heat I'll use canned every time!

1 can cream of asparagus soup
1 clove garlic, mashed
1 tablespoon fresh parsley, chopped
1/2 cup celery, chopped
1/2 cup sweet onion, chopped
1/4 teaspoon thyme
salt & pepper or Mrs. Dash seasoning mix, to taste
4 boneless skinless chicken breasts

Steps:

  • Mix all the ingredients except chicken.
  • Place each chicken breast on a square of double foil.
  • Distribute the sauce, close and seal the packages.
  • Place on BBQ on LOW heat.
  • Cook for 45 minutes to an hour, turn once.

4 whole skin-on, bone-in chicken breasts
1 cup barbecue sauce (such as Sweet Baby Ray's®)
kosher salt and coarsely ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking pan with heavy-duty foil to make cleanup easier.
  • Prepare chicken breasts by cutting off the rib meat if you wish and rinse and pat dry. Leave the skin on. Season chicken with salt and pepper and put in the pan.
  • Bake in the preheated oven until juices start to appear, about 10 minutes. Reduce oven temperature to 375 degrees F (190 degrees C). Remove the pan and generously pour 1/2 of the barbecue sauce over chicken. Continue to bake for 20 minutes. Repeat with remaining barbecue sauce and cook until no longer pink in the centers and skin is crispy, 15 to 20 minutes more.

These baked barbeque chicken drumsticks are ready in less than 50 minutes and taste sweet, tangy, and juicy. I used Baby Ray's® barbeque sauce for ease and convenience but feel free to use homemade barbeque sauce.

1 ½ pounds chicken drumsticks
¼ cup extra-virgin olive oil
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon cayenne pepper
1 ½ cups barbeque sauce (such as Sweet Baby Ray's®), or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
  • Mix olive oil, salt, pepper, paprika, garlic powder, onion powder and cayenne together in a large bowl. Add drumsticks and toss to coat. Spread out on the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes. Remove from oven and brush with barbeque sauce. Bake for 7 to 8 minutes. Flip drumsticks, brush with barbeque sauce, and bake an additional 7 to 8 minutes.
  • Set an oven rack about 6 inches from the heat source and turn on the oven's broiler.
  • Brush drumsticks with more barbeque sauce and broil for 3 to 4 minutes. Flip drumsticks, brush with barbeque sauce, and broil until chicken is no longer pink at the bone and the juices run clear, 3 to 4 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

These sticky, sweet BBQ chicken thighs in the oven are easy to make, especially when it's too cold outside to fire up the grill.

1 ½ cups brown sugar
½ cup barbeque sauce
½ cup ketchup
½ cup honey
¼ cup soy sauce
8 (5 ounce) boneless, skinless chicken thighs

Steps:

  • Whisk together brown sugar, barbecue sauce, ketchup, honey, and soy sauce in a large glass or ceramic bowl. Set aside 1/2 cup of the mixture and refrigerate for basting. Add chicken thighs to the remaining marinade and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 2 to 6 hours.
  • When ready to cook, preheat the oven to 425 degrees F (220 degrees C).
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade. Place chicken in a glass baking dish.
  • Bake in the preheated oven, basting occasionally with the reserved 1/2 cup marinade, until chicken is no longer pink in the center and the juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This is the most simple chicken recipe I've ever made. My mom came up with it and I tweaked it a tiny bit and we eat it at least 3 times a month. I honestly don't see how anyone could dislike this chicken. I recommend serving it with homemade mashed potatoes!

3 -4 chicken breasts, cut into approx. 2-inch strips
6 tablespoons butter, melted (not margarine)
1 cup progresso brand Italian seasoned breadcrumbs
1/4 cup shredded parmesan cheese (NOT the stuff in a can!)

Steps:

  • Preheat oven to 375 degrees.
  • Melt 2 T butter and pour into shallow baking dish.
  • Melt remaining 4 T butter in small bowl.
  • Dip chicken in butter (in bowl, not baking dish) and then dredge in bread crumbs.
  • Place coated chicken into baking dish.
  • Sprinkle cheese on top of chicken.
  • Cooking times vary according to the thickness of the chicken and your individual oven, so start checking for doneness after about 25 minutes. It takes about 35-40 in my oven.
  • Chicken is done when juices run clear and you can easily cut it with a fork.
