FOIL-BAKED PORK CHOPS AND VEGGIES
I had some pork and random veggies and 2 very little picky eaters. What one eats for veggies the other will not, in wrapping the meals individually before cooking I was able to modify to their tastes.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lay out two 18-inch square pieces of aluminum foil on a work surface.
- Place potatoes, carrots, and zucchini on 1 piece of foil. Pour oil over the vegetables and sprinkle with seasoning; toss gently to combine. Place pork chops on top of vegetables. Cover with the second piece of foil and crimp the edges to seal the foil packet.
- Bake in the preheated oven for 1 hour. An instant-read thermometer inserted into the center of the chops should read 145 degrees F (63 degrees C).

- Preheat oven to 425°F. Season the pork chops with salt and pepper, and set aside.
- In a small bowl, mix together the butter, thyme, and garlic. Set aside.
- In a cast iron skillet, heat the olive oil over medium heat. When the skillet is really hot, add the pork chops. Sear until golden, about 2 minutes per side.
- Pour the garlic butter mixture over the pork chops. Place the skillet in the oven, and cook until the pork chops reach an internal temperature of 145ºF, about 10-14 minutes. The time depends on the thickness of your pork chops.*
- Remove from the oven. Using a spoon, pour some of the butter sauce left in the skillet onto the pork chops before serving.

BAKED BREADED PORK CHOPS

- In a small bowl, beat together the eggs and milk. Pour the flour in another small plate and set aside.
- In a separate small bowl, mix together the breadcrumbs, Parmesan, parsley and garlic powder.
- Preheat the oven to 375°F. Line a baking sheet with aluminium foil sprayed with cooking spray. Set aside.
- Coat the pork chips first in flour, then in the egg wash, then in the breadcrumb mixture. Place on the baking sheet.
- Bake in the preheated oven for 30 minutes.

- Mix first 4 ingredients. In a large skillet, heat 1 tablespoon oil over medium heat; brown pork chops on both sides. NEVER-FAIL BAKED PORK CHOPS
I'm not a big fan of pork chops, but these get prepared at least once a week in our house. Quick, easy and SO good!!

Steps:
- 1. Spray 9x13" pan with cooking spray. Mix together the bread crumbs and parmesan cheese.
- 2. Dip each pork chop into melted butter, then coat with crumb mixture. Place into pan with chops not touching if possible. Drizzle remaining butter (if any) over top of chops.
- 3. Bake uncovered at 350 degrees for about 35 minutes until chops are nicely browned.
BREADED BAKED PORK CHOPS
This is a great, basic recipe for breaded baked pork chops. Feel free to experiment with different seasonings and breading. We just did a batch using honey-wheat bread crumbs which gave a slightly sweet taste that balanced our chosen Cajun seasoning.

- Season pork chops with garlic powder and seasoning salt. Dredge chops in flour; shake off excess. Dip into beaten egg. Lift up so excess egg drips back in the bowl. Press into bread crumbs to coat both sides. Place the breaded chops, unstacked, onto a plate.
