Homemade angel food cake is worth the work. It is moist, unlike the sweet styrofoam available in the grocery bakery. A tube pan with a removable bottom is highly recommended.

1 ¼ cups cake flour
1 ¾ cups white sugar
¼ teaspoon salt
1 ½ cups egg whites
1 teaspoon cream of tartar
½ teaspoon vanilla extract
½ teaspoon almond extract

Steps:

  • Beat egg whites until they form stiff peaks, and then add cream of tartar, vanilla extract, and almond extract.
  • Sift together flour, sugar, and salt. Repeat five times.
  • Gently combine the egg whites with the dry ingredients, and then pour into an ungreased 10 inch tube pan.
  • Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.
  • Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan.

Every year for my birthday, my Gran would ask me "What kind of cake would you like me to bake you?", even though she knew what the answer would be: "ANGEL FOOD CAKE, PLEASE!!!!" You'll never buy angel food cake again, once you use this recipe. Rather than granular sugar for the entire recipe, confectioner's sugar is used. The cornstarch in the powdered sugar stabilizes the whites, making for a much lighter and dreamy angel food cake. Light as a feather, creamy-tasting, and NOT rubbery like store-bought versions, this is my "go-to" cake recipe for ALL special occasions. :)

1 cup cake flour (I use Softsilk or SwansDown brands)
1 1/2 cups confectioners' sugar (made from cane sugar)
1 1/2 cups egg whites (10-12 egg whites, room temperature)
1 1/2 teaspoons cream of tartar
1/4 teaspoon salt
1 cup granulated sugar
1 1/2 teaspoons vanilla extract
1/2-1 teaspoon almond extract

Steps:

  • .Heat oven to 375 degrees.
  • Stir together cake flour and confectioner's sugar; set aside.
  • In a large mixer bowl, beat egg whites, cream of tartar, and salt until foamy.
  • Add the granular sugar, 2 tablespoons at a time, beating at high speed until the meringue holds stiff peaks. (This takes up to 10 minutes.).
  • Gently fold in the extracts by hand.
  • Sprinkle the flour-confectioner's sugar mixture, 1/4 cup at a time, over the meringue, folding it in gently just until flour-sugar mixture disappears. DO NOT OVER-MIX OR CAKE WILL BECOME TOUGH!
  • Push batter into ungreased tube pan, turning it several times to fill pan evenly. Gently cut through the batter with a knife to remove air bubbles.
  • Bake 30-35 minutes or until the top springs back when touched lightly with finger.
  • Remove from oven and immediately invert the tube over weighted glass bottle; let hang upside down until cake is completely cool (about 2 hours.).
  • To remove cooled cake from tube pan, loosen first by moving table knife up and down against side of pan. Next, turn the pan over and hit one side; the cake will slip out onto the platter.

I always bought angel food cakes in the bakery section of the grocery stores until I needed one at the last minute, but I didn't want to put on my make-up to go to the store! LOL! I modified several recipes to what I had on hand, and here is what I developed. Even people who tell me that they do not like angel food cake, end up loving this recipe. It is wonderful served with berries or fruit, and it is also great all by itself in the morning with a cup of coffee or a cold glass of milk!

12 eggs, you will only use the egg whites
1 1/4 cups powdered sugar or 1 1/4 cups confectioners' sugar
1 cup all-purpose flour
1 1/2 teaspoons cream of tartar
1 1/2 teaspoons vanilla extract
1/2 teaspoon maple extract
1/4 teaspoon salt
1 cup sugar

Steps:

  • In a bowl, mix together the confectioner's sugar and the flour. Set aside.
  • Next, you must separate the egg whites from the yolks. You will need one and a half cups of egg whites and this always ends up being 12 large eggs for me. (Suggestion - crack each egg into a small cup, and then pour into a measuring cup. That way, if you do happen to break a yolk, you won't ruin the whole batch and have to start over. No egg yolks can be in the egg whites. Save the yolks for something else! I also have better results when I allow the egg whites to come to room temperature, but if you are crunched for time, don't sweat it!).
  • Pour the egg whites into a metal bowl (cannot be plastic) and set aside.
  • Dump in the cream of tartar, the vanilla extract, the maple extract and salt to the metal bowl of egg whites. Using an electric hand mixer, whip together until soft peaks begin to form - this usually take just a minute or two for me. I can never tell what a "soft peak" is supposed to look like, so I just keep going until it is thicker looking and kind of comes up with the beaters when I pull them out. (If you do not have an electric mixer, you can do this with a whisk. You will not need to go to the gym for any upper body training after this.).
  • Add the flour mixture a little at a time and mix with the electric mixer after each addition.
  • Add the sugar and mix well together with the electric mixer.
  • Pour it all into an ungreased tube cake pan.
  • Bake at 350 degrees for about 40 minutes. I tend to underbake mine just a little, since it will continue to brown slightly, after you remove it from the oven and allow it to cool.
  • I usually will run the end of a rubber spatula around the edge of the cake pan, after the cake has cooled slightly and has started to pull away from the sides of the pan. Dump it out onto a cake plate and try not to eat the entire thing while it is warm!

3/4 cup - 1 cup (98g-130g) cake flour OR all purpose flour*
1 3/4 cups (362g) sugar, divided
1/4 tsp salt
1 1/2 cups egg whites, room temperature (about 10-12 large egg whites)*
1 1/2 tsp cream of tarter
1 1/2 tsp vanilla extract

Steps:

  • Preheat oven to 375°F and have an ungreased tube pan. 2
  • . Combine half of the sugar, flour and salt and sift them together 5 times. Set aside.
  • . Whip egg whites with a mixer on low speed until they get frothy, then add the cream of tartar and vanilla extract.
  • . Increase speed to medium and continue whipping, adding remaining sugar 1 tablespoon at a time. Wait 5-10 seconds between each addition to give time for the sugar to incorporate.
  • . Increase to medium-high speed and whip until it reaches stiff peaks.
  • . Using a rubber spatula, gently fold the flour mixture into the egg whites 1/4 cup at a time. Sift the flour mixture again as you add it to the egg whites. Repeat until all the flour mixture has been added.
  • . Pour the batter into the ungreased pan and smooth evenly, then run a knife through the batter to break up any air bubbles. I like to run it around the outside wall and inside wall of the pan as well. Air bubbles that sit against the sides of the pan can give it little air pockets on the edges once baked.
  • . Bake until lightly golden on top and a toothpick inserted in the middle comes out clean, about 28-30 minutes.
  • . Immediately after removing from the oven, turn the cake upside down to cool. Your tube pan should have little feet to rest on white it cools. Allow it to cool for about an 1 hour.
  • 0. Once cooled, turn it right side up and run a knife or spatula along the outside and inside walls of the pan to loosen it. Invert the cake onto a serving plate.
  • 1. Slice the cake with a serrated knife and use a careful sawing motion so that you don't smash the cake. Serve as is or with fresh fruit, whipped cream or other toppings. Cake is best when stored at room temperature in an air tight container for 3-4 days.

1 and 3/4 cups (350g) granulated sugar*
1 cup + 2 Tablespoons (133g) cake flour (spoon & leveled)
1/4 teaspoon salt
12 large egg whites, at room temperature*
1 and 1/2 teaspoons cream of tartar
1 and 1/2 teaspoons pure vanilla extract
optional: confectioners' sugar for dusting, whipped cream, and berries

Steps:

  • Adjust the oven rack to the lower middle position and preheat oven to 325°F (163°C).
  • In a food processor or blender, pulse the sugar until fine and powdery. Remove 1 cup and set aside to use in step 3; keep the rest inside the food processor. Add the cake flour and salt to the food processor. Pulse 5-10 times until sugar/flour/salt mixture is aerated and light.
  • In a large bowl using a hand mixer or a stand mixer fitted with a whisk attachment, whip egg whites and cream of tartar together on medium-low until foamy, about 1 minute. Switch to medium-high and slowly add the 1 cup of sugar you set aside. Whip until soft peaks form, about 5-6 minutes. See photo and video above for a visual. Add the vanilla extract, then beat just until incorporated.
  • In 3 additions, slowly sift the flour mixture into the egg white mixture using a fine mesh strainer, gently folding with a rubber spatula after each addition. To avoid deflating or a dense cake, don't add the flour mixture all at once. Sift and very slowly fold in several additions. This is important! Pour and spread batter into an ungreased 9 or 10 inch tube pan. Shimmy the pan on the counter to smooth down the surface.
  • Bake the cake until a toothpick inserted comes out clean, about 40-45 minutes. Rotate the pan halfway through baking. The cake will rise up very tall while baking. Remove from the oven, then cool the cake completely upside-down set on a wire rack, about 3 hours. (Upside-down so the bottom of the tube pan is right-side up, see photo and video above.) Once cooled, run a thin knife around the edges and gently tap the pan on the counter until the cake releases.
  • If desired, dust with confectioners' sugar. Slice the cake with a sharp serrated knife. Regular knives can easily squish the cake. Serve with whipped cream and fresh berries.
  • Store leftovers in the refrigerator for up to 5 days.
