The famous Neiman Marcus Chocolate Chip Cookies, with the secret ingredient - ground Oats! I've been making these for years and they're always a crowd favorite! They have an irresistible flavor and a delicious chewy texture.

2 1/2 cups (225g) rolled oats ((Old Fashioned))
1 3/4 cups (248g) all-purpose flour*
1 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 cup (226g) unsalted butter, (softened but still slightly firm)
1 cup (215g) dark brown sugar
1 cup (200g) granulated sugar
2 large eggs
2 tsp vanilla extract
1 (12 oz.) pkg. semi-sweet chocolate chips
1 (4 oz.) milk chocolate bar, (chopped)
1 1/2 cups (170g) chopped walnuts ((optional, I don't add these))

Steps:

  • Preheat oven to 375 degrees. Add oats to a food processor. Process oats until they are very finely ground, nearly to a flour, about 2 - 3 minutes.
  • Add ground oats to a large mixing bowl along with flour baking soda, baking powder and salt. Whisk 20 seconds. Set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment cream together butter, brown sugar and granulated sugar until well combined.
  • Mix in eggs one at a time then blend in vanilla. With mixer set on low speed slowly add in dry ingredients and mix just until nearly combined.
  • Add in chocolate chips, chopped chocolate and walnuts if using and mix (you can set a few chocolate chips aside first if you want some to press into tops of dough for looks).
  • Scoop dough out 2 oz. at a time (nearly 1/4 cup) and shape into rounds (at higher altitude I recommend making taller dough balls, so more of an oval shape, for less spread).
  • Transfer 9 dough balls to an 18 by 13-inch baking sheet lined with a silicone liner or parchment paper, spacing them about 3-inches apart (refrigerate dough that's not currently baking).
  • Bake in preheated oven until nearly set but slightly under-baked, about 10 minutes.
  • Let cool several minutes on baking sheet then transfer to a wire rack to cool. Repeat process with remaining dough. Store cookies in an airtight container.

Steps:

  • Measure oatmeal and blend in a blender to a fine powder.
  • Cream the butter and both sugars.
  • Add eggs and vanilla.
  • Mix together with flour, oatmeal, salt, baking powder and soda.
  • Add chocolate chips, grated Hershey Bar and nuts.
  • Roll into 1 inch balls and place 2-inches apart on a cookie sheet.
  • Bake for 10 minutes at 375° or until golden.

½ cup unsalted butter
1 cup packed brown sugar
3 tablespoons white sugar
1 egg
2 teaspoons vanilla extract
1 ¾ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons instant espresso coffee powder
1 ½ cups semisweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
  • In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the egg and vanilla. Sift together the flour, baking soda, baking powder, salt and espresso powder; stir into the creamed mixture. Finally, stir in the chocolate chips.
  • Drop dough by heaping tablespoonfuls onto the prepared baking sheet. Cookies should be 1 1/2 to 2 inches apart. You should have 12 to 15 large cookies.
  • Bake for 8 to 10 minutes in the preheated oven. For crispier cookies, bake 2 minutes longer. Remove from baking sheets to cool on wire racks.

1/2 cup unsalted butter, softened
1 cup dark brown sugar
3 tablespoons granulated sugar
1 egg
2 teaspoons pure vanilla extract
1 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups flour
1 1/4 teaspoons instant espresso powder, crushed
8 ounces semi-sweet chocolate chips

Steps:

  • Cream the butter with the sugars until fluffy.
  • Beat in the egg and the vanilla extract.
  • Combine the dry ingredients and beat into the butter mixture. Stir in the chocolate chips.
  • Form large round patty's 1/4 inch thick. Place onto a greased or parchment lined cookie sheet.
  • Bake at 375 degrees for 8 to 10 minutes for soft & chewy, or 10 to 12 minutes for crispier cookies.
  • Romove from oven and allow cookies to set for an additional 2 minutes before transferring them to a wire rack for cooling.
  • *Be sure to use Rumford Baking Powder- (It's aluminum free and doesn't have the bitter taste found in other brands).
  • Because the batter is so thick they do not work well as small cookies (smaller cookies can get too hard). If desired drop large spoonfuls of dough directly onto cookie sheet, then form dough to correct size and shape.
  • Stick to 8 minutes in the oven, this cookie remains chewy even after it cools. For crispier cookies Bake 1-4 minutes longer.
  • Don't forget the coffee or the cookie will taste too sweet. Using a clean pill crusher to get the Instant expresso to the right consistency, works perfect.

This recipe supports the Mae West theory which esposes that: "too much of a good thing can be wonderful". The recipe is from one of my favorite books, the Neiman Marcus cookbook. They are just the thing to have with a tall glass of lemonade on a hot summer day.

3 1/2 cups semi-sweet chocolate chips
1/2 cup butter (1 stick)
1 cup sugar (light brown)
2 eggs (large)
1 1/2 cups flour (all purpose)
1/3 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat the oven to 300°F.
  • Melt 2 cups of chocolate chips in a double boiler and set aside.
  • Place the butter and brown sugar in a work bowl, and with an electric mixer beat on medium speed for about 30 seconds, until the mixture is fluffy.
  • Turn the mixer speed to low and slowly add the melted chocolate and eggs, mix until incorporated.
  • In another bowl, sift together the flour, cocoa powder, baking powder and salt; add to the work bowl while beating on low speed until the four is mixed inches.
  • Mix in the remaining 1 1/2 cups of chocolate chips.
  • Prepare a cookie sheet by greasing or use non-stick spray.
  • Drop cookies on the baking sheet using a 2 tablespoon measure, drop about three inches apart.
  • Gently press down on the dough with the back of a spoon to spread out into 2-inch circles.
  • Bake for about 20 minutes or until the cookies are nicely browned atound the edges.
  • Bake a little longer for crisper cookies.
