PRIME RIB WITH PORT SAUCE

Prime Rib With Port Sauce image

This is a variation of 2 different recipes from Bon Appetit. It does take awhile, but the actual hands-on time isn't bad. I made this for Christmas Eve dinner and it was a HUGE hit.

Provided by mplsgirl

Categories     Meat

Time 2h45m

Yield 8-10 serving(s)

Number Of Ingredients 15

9 lbs prime rib roast
1 tablespoon olive oil
4 garlic cloves, crushed
6 medium onions, peeled and quartered
1/2 teaspoon salt
1/2 teaspoon pepper
2 1/2 cups beef broth
1 3/4 cups port wine
1 1/4 cups dry red wine
1 bay leaf
4 large fresh thyme sprigs
4 large fresh parsley sprigs
3 large fresh rosemary sprigs
2 tablespoons butter, room temperature
2 tablespoons flour

Steps:

  • Position rack in center of oven and preheat to 450.
  • Place beef, fat side up, in large roasting pan that has a cover. Rub with garlic, olive oil, salt, and pepper. Roast beef for 20 minute.
  • Reduce oven temp to 350. Place onions around beef. Cover and roast for about 2 hours or until meat thermometer inserted into center of meat reads 135. Baste every half hour or so.
  • After meat has been in 1 hour, combine broth, port, wine, and herbs in saucepan. Boil until mixture is reduced to 2 cups. Remove from heat and discard herbs.
  • Once beef is done, transfer to a platter with onions and tent with foil for 30 minute
  • Pour off fat from roasting pan and mix juices and browned bits into wine sauce. Bring to a boil. Mix butter and flour together and whisk into sauce to thicken.
  • Slice beef and serve with sauce.

THE NEELYS MEMPHIS-STYLE HICKORY-SMOKED BEEF AND PORK RIBS

The Neelys Memphis-Style Hickory-Smoked Beef and Pork Ribs image

Show: Down Home with the Neelys Episode: Sunday Supper Time does not include marinating time in fridge (8hrs). I used my gas grill, also using indirect cooking method.

Provided by Luvs 2 Cook

Categories     Pork

Time 6h45m

Yield 4-6 serving(s)

Number Of Ingredients 16

1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder
2 beef rib racks (4 pounds each)
2 pork spare rib racks (3 pounds each)
2 cups neely's bbq dry rub seasonings
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard

Steps:

  • For the rub: Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
  • For the ribs: Rinse and dry ribs. Place on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat. Liberally season both sides of the ribs with 1/4 to 1/2 cup Neely's BBQ Rub. Wrap ribs and refrigerate for at least 8 hours so flavors can permeate.
  • Preheat grill to 250 degrees F. using hickory and charcoal.
  • Use indirect heat and cook with the cover down.
  • Place ribs, meatier side down, on the grill away from the coals. Cook beef 2 hours, adding more coals as needed. Turn and cook for 45 minutes more, or until the ribs "bend" and the meat easily separates from the bone using a fork. Cook the pork ribs 3 hours. Turn and cook another hour, or until ribs bend. Remove from grill.
  • For dry ribs: Sprinkle extra Neely's BBQ seasoning over ribs, cut bones and serve.
  • For wet ribs: Coat ribs with Neely's BBQ sauce, cut and serve.
  • Barbecue Sauce: In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cooked uncovered, stirring frequently, for 1 hour 15 minutes. Yield: 3 1/2 cups.

NEELYS' PRIME RIB WITH RUBY PORT SAUCE

Neelys' Prime Rib with Ruby Port Sauce image

Categories     Sauce     Marinate     Roast     Low Sodium     Port     Simmer

Yield serves 6 to 8

Number Of Ingredients 15

4 cloves garlic, smashed and peeled
2 tablespoons kosher salt
2 tablespoons finely chopped fresh rosemary
2 to 3 tablespoons olive oil
2 teaspoons freshly ground black pepper
1/4 teaspoon crushed red-pepper flakes
One 8-pound bone-in prime-rib roast (3 or 4 ribs)
RUBY PORT SAUCE
3 tablespoons butter, divided
2 shallots, finely chopped
2 cloves garlic, minced
1 1/4 cups ruby port
4 cups beef stock, homemade or low-sodium
Kosher salt and freshly ground black pepper
(makes 2 cups)

Steps:

  • Mash the garlic and salt with a mortar and pestle until a paste is formed. Add the rosemary, and smash all together. Scrape the paste into a small bowl along with the olive oil, black pepper, and crushed red pepper.
  • Spread the herb-and-garlic paste all over the meat. Cover with plastic wrap, and place in the fridge to marinate for at least 8 hours. Allow the meat to come to room temperature for 1 to 2 hours before roasting. (This will ensure even cooking.)
  • Preheat your oven to 450 degrees F. Adjust a rack to the middle of the oven.
  • Remove the plastic wrap, and place the meat in a large roasting pan. Roast for 20 minutes, then reduce the oven temperature to 350 degrees, and continue to cook until a thermometer inserted into the thickest part of the roast without touching the bone reads 125 degrees for medium rare, or continue to cook until it reaches 130 to 135 for medium, about 2 hours and 20 minutes more.
  • Remove the roast from the oven, tent with foil, and let rest for 20 minutes before carving.
  • Serve with the ruby port sauce (recipe follows).
  • RUBY PORT SAUCE
  • Melt 2 tablespoons of the butter in a medium saucepan set over medium heat. Once the butter foams, toss in the shallots and garlic, and sauté until soft and tender, about 3 or 4 minutes. Pour the port and beef stock into the saucepan, and bring to a simmer. Let reduce for about 20 minutes, or until you have about 2 cups of brothlike sauce. Whisk in the remaining tablespoon of butter for a touch of added thickness and gloss. Season to taste with salt and pepper.
  • Note
  • Get the rib rubbed with the spices the day before, and set aside in the fridge.

NEELY'S DRY BBQ RIBS

Provided by Food Network

Categories     main-dish

Time 10h18m

Yield 4 servings

Number Of Ingredients 5

3 to 4 pounds spare ribs
4 ounces Neely's Seasoning Mix, recipe follows
8 ounces paprika
4 ounces sugar
2 teaspoons onion powder

Steps:

  • Trim the spare ribs, removing the upper brisket bone and any excess fat; this will produce a St. Louis-style rib. Rinse the ribs and season with Neely's Seasoning, and then cover and refrigerate for 4 to 12 hours.
  • Indirect cooking in a barbecue pit is recommended to prevent burning. Cook at 250 degrees F (curled side of ribs facing up) for the first 3 hours, and then increase the temperature to 300 degrees F for the final 3 hours. Sprinkle the ribs with Neely's Seasoning Mix during the last 30 minutes of cooking.
  • Mix all ingredients together in a bowl.

NEELY'S SOUTHWEST STYLE RIBS

Provided by Patrick and Gina Neely : Food Network

Categories     main-dish

Time 6h15m

Yield 4 to 6 servings

Number Of Ingredients 26

2 tablespoons ancho chili powder
2 tablespoons smoked paprika
2 tablespoons dried oregano
1 tablespoon chipotle chili powder
1 tablespoon garlic powder
1 tablespoon ground mustard
1 tablespoon ground cumin
2 tablespoons kosher salt
1/2 teaspoon freshly ground black pepper
2 (3-pound) slabs pork spareribs
Hickory chips
Southwest Barbecue Sauce, recipe follows
1 tablespoon canola oil
1 yellow onion, diced
3 cloves garlic, diced
2 tablespoons tomato paste
2 tablespoons reserved spice rub
2 cups ketchup
1/4 cup water
1/2 cup apple cider vinegar
1/2 cup peach nectar
1/2 cup light brown sugar
2 tablespoons dry mustard
1 lemon, juiced
1/2 tablespoon Worcestershire sauce
Pinch kosher salt and freshly ground black pepper

Steps:

  • Mix all the dry ingredients together in a small glass bowl to create the spice rub. Reserve 2 tablespoons of the spice mixture for the BBQ Sauce.
  • Rinse and the dry ribs, then put on a clean cutting board and pull off the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat. Liberally season both sides of the ribs with the spice rub. Wrap the ribs with plastic wrap or foil and refrigerate for at least 2 hours so flavors can develop and permeate the meat.
  • Soak the wood chips in water for 1 hour before grilling.
  • Preheat the grill to 250 degrees F. Using the hickory and charcoal, set up the grill for indirect heat.
  • Arrange the ribs, meatier side down, on the far side of the grill away from the coals. Close the cover of the grill and cook the ribs for 3 hours. Turn and cook until the ribs bend, about 1 more hour.
  • You will need to check on the charcoal and chips during the smoking process and replenish as needed. You will also need to maintain a temperature of 250 degrees F.
  • Remove ribs from grill to a cutting board and sprinkle with more spice rub. Cut each slab into individual ribs and transfer to a serving platter. Serve the ribs with Southwest Barbecue Sauce.
  • For dry ribs: Sprinkle Neely's BBQ seasoning over the ribs, cut between the bones and serve.
  • Heat the canola oil in a medium saucepan over medium heat. Add the onion and garlic and saute until the onions are soft. Stir in the remaining ingredients and simmer until thick and the sauce is flavorful, about 1 to 1 1/2 hours. Taste for seasoning and add salt and pepper, if necessary.
