6 tablespoons sugar
2 tablespoons rum, optional
1 teaspoon cornstarch
1 teaspoon vanilla extract
4 medium nectarines, halved
1 pound fresh sweet cherries, pitted
Vanilla ice cream

Steps:

  • Preheat oven to 375°. In a small bowl, combine sugar, rum if desired, cornstarch and vanilla. Transfer to a greased 13x9-in. baking dish. Place nectarine halves, cut side down, over sugar mixture. Sprinkle with cherries., Bake, uncovered, 35-40 minutes or until bubbly and fruit is tender. Serve warm with ice cream.

2 tablespoons butter
2 tablespoons white sugar
1 pound nectarine, quartered and stone removed
4 cardamom pods
¼ cup double cream

Steps:

  • Heat butter and sugar together in a heavy saucepan over low heat until mixture turns light brown, about 5 minutes. Add nectarine quarters and cardamom pods; cook and stir over medium heat until nectarines are soft, about 18 minutes. Remove and discard cardamom.
  • Remove saucepan from heat and allow nectarine mixture to cool slightly. Transfer mixture to a blender or food processor and blend until smooth; place in the refrigerator until completely cooled, about 30 minutes.
  • Beat double cream in a glass, metal, or ceramic bowl until soft peaks form. Lift your beater or whisk straight up: the cream will form soft mounds. Spoon cream over chilled compote.

A lovely, not-too-sweet summer dessert that's equally delicious with peaches. Be sure to use only the ripest in-season fruit, and serve it warm, with a scoop of vanilla ice cream or a dollop of sweetened whipped cream.

4 cups sliced nectarines
1/2 cup cold water
1/3 cup unpacked light brown sugar
1 tablespoon cornstarch
1 tablespoon unsalted butter
1 cup all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 cup milk
4 tablespoons (1/2 stick) unsalted butter, softened
Cinnamon sugar for sprinkling

Steps:

  • Preheat oven to 350 degrees.
  • To prepare the topping: In a medium-size bowl, stir together the flour, the sugar, and the baking powder. Add the milk and the butter and beat until smooth.
  • To prepare the filling: In a large saucepan, combine all the ingredients. Cook and stir over medium heat until mixture is thickened and bubbly, about 5-10 minutes. Pour into an ungreased 13x9-inch glass baking dish. Spoon the topping over the filling and spread carefully and evenly with a rubber spatula. Sprinkle with cinnamon sugar. Bake 30-40 minutes or until topping is lightly golden and a cake tester inserted into the center of topping comes out clean.
