EASY NO-BAKE CHEESECAKE PARFAITS



Easy No-Bake Cheesecake Parfaits image

When it comes to digging your spoon into a tall glass of deliciousness, there's no party quite like a cheesecake parfait party. Sweeten up the deal by bypassing the oven in favor of this 15-minute no-bake cheesecake.

Two (8-ounce) packages cream cheese, at room temperature
1 cup plus 3 tablespoons chilled heavy cream
1/2 cup (8 tablespoons) sugar
1 tablespoon plus 1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
2 teaspoons lemon zest
1/4 cup sour cream
1 1/2 cups crushed graham crackers
1 1/2 cups fresh fruit, such as strawberries, blueberries or raspberries

Steps:

  • Beat the cream cheese, 3 tablespoons heavy cream and 5 tablespoons sugar in a stand mixer fitted with the paddle attachment until smooth. Add 1 tablespoon vanilla extract and the lemon juice and zest. Beat until light and creamy, about 3 minutes.
  • Whisk together the remaining 1 cup heavy cream, 3 tablespoons sugar, 1 teaspoon vanilla extract and the sour cream in a large bowl with a handheld electric mixer (or a stand mixer fitted with the whisk attachment) on high speed until soft peaks form.
  • Add a layer of crushed graham crackers to the bottom of each parfait glass. Top the graham crackers with a layer of the cheesecake, then a layer of fruit (see Cook's Note). Top each parfait with a dollop of the whipped cream and serve.

3 medium nectarines, chopped
1/4 cup granulated sugar
2 tablespoons orange-flavored liqueur or orange juice
4 oz (half of 8-oz package) cream cheese, softened
1/3 cup powdered sugar
1 teaspoon vanilla
1 cup whipping cream
4 cinnamon graham cracker rectangles, coarsely crushed

Steps:

  • In small bowl, mix nectarines, granulated sugar and orange liqueur. Let stand 15 minutes or until syrup forms.
  • In medium bowl, beat cream cheese, powdered sugar and vanilla with electric mixer on medium speed until smooth. Add whipping cream; beat on low speed until blended. Beat on high speed until stiff peaks form.
  • To serve, divide half of the fruit among 4 (8-oz) parfait glasses or dessert dishes. Top with half of the cream cheese mixture and half of the graham crackers. Repeat layers. Serve immediately.
