NECTARINE TART
A beautiful dessert made from any great summer fruit - figs, nectarines, apricots, plums - that, yes, takes a little time. The reward is in the wow factor you get from the result - and in the flavors it provides. Brushing the pastry with a slick of good preserves before you add the fruit will create a thick syrup on the bottom that helps keep the pastry from becoming soggy. Then cut the fruit into quarters or eighths, depending on their size, then crowd the wedges so that they stand at attention in tight concentric circles on a pastry shell. Dust the whole thing with sugar and baste the top with melted butter. Cook and cool the finished tart, then serve with crème fraîche, whipped cream, or a few scoops of your favorite ice cream.

- Blend flour, salt and 2 tablespoons sugar in a bowl or food processor. Dice 8 tablespoons of the butter. Use a pastry blender or two knives to blend flour mixture and butter, or pulse them together in a food processor to make a crumbly mixture. Beat the egg yolk with 3 tablespoons cold water. Dribble it over the flour mixture, then stir or pulse slowly until the mixture starts clumping together. A bit more water may be necessary. Gather dough in a loose ball and form into a disk on a lightly floured surface.
- Heat oven to 375 degrees. Roll out dough and line a 10-inch loose-bottom tart pan. Line pastry with a sheet of foil and spread pastry weights or dry beans on top. Bake 12 minutes. Meanwhile, melt the remaining butter, cooking it on low until it turns a light nut brown. Pit fruit (except figs) and cut in eighths or, if fruit is small, fourths. After 12 minutes, remove foil and weights from pastry. Return pastry to oven and continue baking until it is lightly browned, another 8 to 10 minutes. Remove pastry from oven and increase temperature to 400 degrees.
- Brush pastry with preserves. Arrange fruit in tight concentric circles, starting by placing it around the perimeter, skin side down, against the vertical sides of the pastry and standing it up as much as possible. Brush with melted butter. Dust with remaining sugar. Bake about 35 to 40 minutes, until edges have browned but fruit has not collapsed. Cool before serving with crème fraîche.

NECTARINE TART
This is simple and delicious and works with any stone fruit. Try it with plums or peaches. This is good at room temperature or chilled and is great with a bit of whipped cream or ice cream.

- Preheat oven to 350 degrees.
- Peel the nectarines and cut into slices. Toss with the lemon juice and a few pinches of sugar if the fruit is not too sweet. If the fruit is sweet and fresh skip the sugar. Set aside.
- Cream the sugar and butter in a bowl until light and fluffy. Add the flour, baking powder, salt, and eggs and beat until combined.
- Spoon batter into a 10 inch pie pan (it will look like there is not enough batter but there is). Place the nectarine slices on top of the batter packing them in tightly. Sprinkle lightly with lemon juice and some sugar, depending on the sweetness of the fruit.
- Bake 50 to 60 minutes until golden brown. Cool. Refrigerate if desired. Sprinkle a bit of powdered sugar on top if desired.

- Preheat oven to 375°. In a large saucepan, combine 3/4 cup sugar and cornstarch. Gradually stir in apple juice until smooth. Stir in plums and nectarines. Cook and stir until mixture comes to a boil; cook 1-2 minutes longer or until thickened and bubbly. Reduce heat; simmer, uncovered, for 5 minutes. , Remove from the heat; cool for 10 minutes. Pour into a greased 13x9-in. baking dish. , In a large bowl, whisk flour, baking powder, baking soda, salt and remaining 1/2 cup sugar. Cut in butter until crumbly. Make a well in the center; stir in buttermilk just until a soft dough forms. Drop by tablespoonfuls over fruit mixture. Bake until golden brown, 30-35 minutes. Serve warm, with ice cream if desired.

PLUM AND NECTARINE PIE
This is posted in response to a request for recipes with plums! Yum! Adapted from BH&G. If you wish, use an already made pie crust!

Steps:
- For filling, in a large mixing bowl stir together sugar, the 3 tablespoons flour, vanilla, cinnamon, and nutmeg.
- Add the plum and nectarine slices; gently toss plums and nectarines until coated.
- Set filling aside.
- For pastry, in a large mixing bowl stir together the 2 cups flour and salt.
- Using a pastry blender, cut in the shortening or lard until pieces are the size of small peas.
- Sprinkle 1 tablespoon of the water over part of the flour mixture, then gently toss with a fork.
- Push moistened dough to the side of the bowl.
- Repeat, using 1 tablespoon of water at a time, until all is moistened.
- Divide dough in half.
- Form each half into a ball.
- On a lightly floured surface, use your hands to slightly flatten one ball of dough.
- Roll dough from center to edges, forming a 12-inch circle.
- Wrap the pastry around the rolling pin.
- Unroll onto a 9-inch pie plate.
- Ease pastry into the pie plate, being careful not to stretch it.
- For top crust, repeat rolling with remaining dough.
- Transfer the filling to the pastry-lined pie plate.
- Trim the bottom pastry even with rim of pie plate.
- Cut slits in top crust to allow steam to escape.
- Place top crust on filling.
- Trim top crust 1/2-inch beyond edge of plate.
- Fold top crust under bottom crust; flute edge.
- Brush with milk and sprinkle with cinnamon-sugar.
- To prevent overbrowning, cover the edge of pie with foil.
- Bake in a 375 degree F oven for 25 minutes.
- Remove the foil.
- Bake for 20 to 25 minutes more or until top is golden.
- Cool pie on a wire rack.
NECTARINE AND PLUM TARTLETS

- Make pastry:
- Combine flour, sugar and salt in processor. Add butter; using on/off turns, cut in until mixture resembles coarse meal. Add 1/4 cup ice water and process using on/off turns until moist clumps form. Gather dough together. Divide dough into 6 equal pieces. Flatten into disks. Wrap each in plastic. Chill until firm, at least 1 hour or overnight.
- Position rack in center of oven and preheat to 400°F. Roll out each dough disk on floured surface to 5 1/2-inch round. Transfer rounds to 4 1/2-inch-diameter tartlet pans with removable bottoms. Press dough onto bottoms and up sides of pans. Place pans on baking sheet.
- Make filling:
- Toss nectarines, plums and sugar in large bowl. Arrange fruit in crusts. Bake tartlets 10 minutes. Reduce heat to 350°F and continue baking until fruit is tender and beginning to bubble and crusts are golden, about 40 minutes longer. Transfer tartlets to rack and cool completely. Place berry in center of each.
- Stir jelly in heavy small saucepan over low heat until melted. Brush warm jelly over tartlets. (Can be prepared 1 day ahead. Let stand at room temperature.)

- Preheat the oven to 200C/400F and spray a 9 inch tart tin with cooking spray. I use Wilton Bake Easy.
- Place the flour, sugar and salt into your food processor. Drop in cubes of cold butter around the whole bowl. Pulse for a few seconds at a time until you have a mixture that resembles coarse breadcrumbs. Add in water, 1tbsp at a time, pulsing in between for at least 20 seconds. (you pulse for longer because you may think you need more water, but in actual fact it will come together if you keep pulsing!). I normally need 4tbsp of water.
- Alternatively you can place flour, sugar, salt and butter into a large bowl and use a pastry blender or your fingers to rub the butter and flour mix together until you have breadcrumb texture. Then add water 1tbsp at a time and mix with your hands until it comes together. I would advise the food processor method.
