Here is another great RR recipe. This is also delicious with ground sausage or ground sirloin. I substituted regular shredded mozzerella instead of the fresh mozerella that RR used because I don't care for the flavor of fresh mozzerella.

1 lb ziti pasta
1 medium onion, diced
2 tablespoons extra virgin olive oil
4 garlic cloves, minced
28 ounces plum tomatoes
4 -5 basil leaves, torn
3 tablespoons butter
3 tablespoons flour
2 cups milk
1 bay leaf
2 cups mozzarella cheese
1/4 cup parmesan cheese
fresh nutmeg
salt and pepper

Steps:

  • Preheat oven to 350.
  • Boil ziti just shy of al dente.
  • Place a medium sauce pan on medium-high head and add EVOO.
  • Cook onion and garlic 4-5 minutes, then add the tomatoes. Smash the tomatoes with the back of a large spoon, then add basil, salt and pepper and simmer 15 minutes.
  • Heat a separate medium sauce pan on medium-high heat then add, butter and alllow to melt.
  • Add flour and brown 2-4 minutes, then stir in bay leaf, salt and pepper and cook 5 minutes on low heat. Remove bay leaf.
  • Mix red sauce with pasta and transfer to a casserole dish.
  • Top with white sauce, and both cheeses.
  • Bake 25-30 minutes at 350 degrees.

1 lb ziti pasta
2 tablespoons olive oil
1 medium onion, chopped
4 garlic cloves
1 (28 ounce) can plum tomatoes
5 leaves basil
salt and pepper
3 tablespoons butter
3 tablespoons flour
2 cups milk
1 dried bay leaf
1/4 teaspoon nutmeg
1 large fresh mozzarella ball
1/4 cup parmigiano-reggiano cheese

Steps:

  • Preheat oven 400°F
  • Place a large pot of water over high heat and bring up to boil to cook the ziti. Once boiling, add some salt and the pasta, and cook just shy of al dente. Drain thoroughly.
  • While the water is coming up to a boil, start the red sauce: Place a medium-size saucepot over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Add the onion and garlic, and cook, stirring every now and then until the onions start to get tender, about 3-4 minutes.
  • Add the tomatoes and smash them up into small pieces with a potato masher or with the back of a spoon. Add the basil and season with some salt and pepper. Bring up to a bubble and simmer for 15 minutes.
  • Once you have the red sauce working, make the white sauce: Place a medium-size saucepot over medium heat and melt the butter. Add the flour, stir to combine and cook for about a minute. Whisk in the milk, add the bay leaf and season with some salt, pepper and a couple of grates of nutmeg. Bring up to a bubble, turn the heat down to low and gently simmer, stirring frequently, for 5 minutes. Remove the bay leaf and discard.
  • Combine the cooked ziti with the red sauce in the pot the pasta was cooked in and transfer everything to a baking dish. Top with the white sauce. Sprinkle the mozzarella and grated Parmigiano over the top, transfer to the oven and bake for 25-30 minutes.

1 pound hot Italian turkey sausage, casing removed
1 medium onion, chopped
3 cloves garlic, chopped
1 (28-ounce) can diced tomatoes
6 ounces pesto
15 ounces ricotta cheese
1 (9-ounce) package washed spinach
Butter, for baking dish
2 cups shredded mozzarella, plus more for topping
1 1/2 cups grated Parmesan, plus more for topping

Steps:

  • Preheat oven to 375 degrees F.
  • Bring a large pot of salted water to a boil over high heat. Add ziti and cook until al dente. Drain in a colander.
  • In a large skillet over medium heat, saute turkey sausage. Add onion and garlic and saute until the sausage is cooked through. Use your spoon to break up the sausage while it cooks. Add the can of diced tomatoes and pesto and let simmer for 10 minutes.
  • Add the ricotta cheese, spinach, Parmesan and mozzarella to a large bowl, and stir to combine.
  • Butter a 4-quart baking dish, add the cooked pasta, then sausage mixture and cheese mixture. Top with a sprinkling of mozzarella and Parmesan.
  • Bake until completely heated through and golden and crisp on top, about 20 minutes.

I am half Italian, was raised eating the finest Italian-American cuisine, and have filmed almost 2000 recipe videos, so when you consider all of those facts, it seems incredible that I have never posted a video for baked ziti. Hopefully I make up for that long wait by posting what I think is the best version of it.

¾ pound hot Italian sausage
¾ pound sweet Italian sausage
2 tablespoons olive oil
1 large yellow onion, diced
½ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
2 (24 ounce) jars prepared marinara sauce
2 cups water
1 (16 ounce) package ziti pasta
1 drizzle olive oil
1 ½ cups whole-milk ricotta cheese
8 ounces mozzarella cheese, cut into small cubes
1 cup grated Pecorino Romano cheese
1 teaspoon chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Cut down the length of each sausage with a sharp knife. Remove and discard casings.
  • Heat olive oil in a large saucepan set over high heat. Add sausages and onion. Cook, stirring occasionally and breaking up with a spatula, until the sausage begins to brown, and the onion turns translucent, 5 to 7 minutes. Add oregano, thyme, and rosemary and cook for 1 minute more. Pour in marinara sauce. Pour 1 cup water into each jar to rinse out remaining sauce; add to the saucepan. Stir together and bring sauce to a simmer.
  • Reduce the heat to medium-low, and let simmer, stirring occasionally, for 1 hour. Taste for seasoning and adjust if needed. Turn off heat and reserve until needed. Before using, skim any excess fat that rises to the surface.
  • While sauce simmers, bring a large pot of generously salted water to a boil. Add ziti and cook, stirring occasionally, for 1 or 2 minutes less than the directions on the package call for, about 8 minutes. Drain well and transfer into a large mixing bowl.
  • Carefully add the meat sauce and stir until thoroughly combined. Let rest for 5 minutes.
  • Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease a large 9x15-inch or 9x13-inch casserole dish with a drizzle of olive oil.
  • Use a slotted spoon to transfer half of the pasta and sauce mixture to the prepared dish, then use a spatula to even out into a uniform layer. Top with 1/2 of the ricotta cheese, 1/2 of the mozzarella cheese, and then 1/2 of the grated Pecorino Romano cheese, being sure to distribute evenly. Top with the rest of the pasta and sauce mixture and give the pan a little shake to settle the sauce. Repeat the cheese application.
  • Bake in the center of the preheated oven until the cheese is melted and the casserole is piping hot, 30 to 35 minutes. Remove from the oven and let cool 10 to 15 minutes before serving. Top with parsley.

1 medium onion, chopped

1-3/4 cups spaghetti sauce

6 tablespoons water
1 tablespoon minced fresh parsley
1-1/2 teaspoons Worcestershire sauce
1 teaspoon dried basil
3/4 teaspoon dried oregano, divided
8 ounces ziti or small tube pasta
1 cup part-skim ricotta cheese
1 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese, divided
1 large egg, lightly beaten
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the spaghetti sauce, tomatoes, tomato paste, water, parsley, Worcestershire sauce, basil and 1/2 teaspoon oregano. Cover and simmer for 3 hours, stirring occasionally. , Cook pasta according to package directions; drain. In a large bowl, combine the ricotta, mozzarella, 2 tablespoons Parmesan, egg, salt and pepper., Spread 1 cup meat sauce into a greased 13x9-in. baking dish. Layer with half of the pasta, a third of the meat sauce and half of the cheese mixture. Repeat layers. Top with remaining sauce. Sprinkle with remaining Parmesan and oregano. , Cover and bake at 350° for 1 hour or until heated through.

¾ pound ground Italian sausage

1 teaspoon kosher salt, divided
¾ teaspoon ground pepper, divided
¼ teaspoon crushed red pepper flakes
2 (24 ounce) jars marinara sauce
½ cup water
1 (15 ounce) container whole milk ricotta cheese
¾ cup grated Parmesan cheese, divided
1 large egg
1 tablespoon chopped fresh Italian parsley
1 tablespoon chopped fresh basil
1 ½ (8 ounce) packages mozzarella cheese, shredded

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Bring a large pot of water to a boil. Add 1 tablespoon kosher salt to the boiling water and stir in pasta. Cook until just about tender to the bite, about 8 minutes (or 1 to 2 minutes less than package instructions).
  • At the same time, heat a large, deep skillet or saucepan over medium-high heat. Add sausage and beef and cook, crumbling with the back of a spoon, until browned, about 5 minutes.
