What a sweet deal! Serve this refreshing shortcake parfait recipe made with Gold Medal® all-purpose flour with a layering that makes it all the more impressive.

4 cups sliced fresh strawberries
1/2 cup granulated sugar
2 1/4 cups Gold Medal™ all-purpose flour
3 tablespoons granulated sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup milk
1/2 cup butter or margarine, melted
1 bag (6 oz) semisweet chocolate chips (1 cup)
1 tablespoon shortening
1 1/2 cups whipping cream
1/3 cup powdered sugar
1 teaspoon vanilla
Additional strawberries, if desired

Steps:

Heat oven to 425°F. Lightly grease cookie sheet with shortening. In medium bowl, mix strawberries and 1/2 cup granulated sugar; set aside.
To make shortcakes, in medium bowl, mix flour, 3 tablespoons granulated sugar, the baking powder and salt. Stir in milk and butter until soft dough forms. Onto cookie sheet, drop dough by 8 heaping tablespoonfuls. Bake 10 to 12 minutes or until golden brown. Remove from cookie sheet to cooling rack. Cool completely.
In small microwavable bowl, microwave chocolate chips and shortening uncovered on Medium 1 to 2 minutes, stirring after 1 minute, until melted.
In chilled medium bowl, beat whipping cream, powdered sugar and vanilla with electric mixer on high speed until soft peaks form.
Break shortcakes into bite-size pieces. In parfait glasses, alternate layers of shortcake, strawberries, chocolate mixture and whipped cream. Garnish with additional strawberries.

In a separate medium bowl, whisk the pudding and milk together until smooth. Cover and chill one hour.
Divide 1 cup of cake cubes between 6 parfait cups. Top each with 1/4 cup of the strawberry mixture. Top with 3-4 tbsp. of pudding. Repeat the layers with the remaining cake cubes, strawberries, and pudding.

For the Strawberries: Combine the berries and granulated sugar in a bowl and place in the fridge to chill while you prepare the cheesecake portion.
For the Cheesecake Layer: In a medium sized bowl beat the softened cream cheese for about a minute until smooth and creamy. You can either use a handheld mixer or even a fork or whisk. Mix in half of the Greek yogurt until smooth then add the remaining half, along with the vanilla extract and heavy cream. Continue to mix until smooth. Slowly add the powdered sugar until everything is well combined.
To Assemble: Assemble the parfaits by layering the crumb layer, cheesecake mixture, and strawberries in alternating layers evenly. Top with fresh sliced strawberries and blueberries if desired.
