NAVY BEAN STEW

Navy Bean Stew image

This is an amazing stew and a great recipe for leftover ham. Cooking the navy beans down with the ham bone gave this a savory base. The beans alone are great. Adding cabbage and potatoes is a perfect addition and makes this a hearty stew for colder days. We opted to season with salt, pepper, onion powder, and garlic powder......

Provided by Megan Wood

NAVY BEAN SOUP WITH CHICKEN

Navy Bean Soup With Chicken image

Beans are really healthy, so when I cook them I try not to add anything to them that will make them unhealthy. This bean soup relies on some pepper and the green onions for seasoning. If you want salt, add some. Cooking time includes soaking time for the dried beans.

Provided by GrandmaIsCooking

Categories     One Dish Meal

Time 3h45m

Yield 8 serving(s)

Number Of Ingredients 7

1/2 lb dried navy beans
8 cups water
1 -1 1/2 lb chicken breast, cut in 1/2-3/4 inch chunks
1/2 teaspoon white pepper
5 green onions, including tops (separate tops)
1/4 lb baby carrots, sliced 1/4 ", thick
10 cups water

Steps:

  • Wash and pick over the navy beans, then put in a pot with the 8 cups water; bring to a boil and boil 2 minutes, then remove from heat, cover and let sit at least 1 hour (3 or 4 is okay).
  • Drain and rinse the beans.
  • If chicken is frozen put it in a large pot with the 10 cups of water, bring to a boil and cook about 15 minutes until you can cut it into chunks (For raw chicken, just cut up and put in the pot with the water and proceed to the next step).
  • Cut green onion tops about 1/4 inch long and put aside; thinly slice the rest of the onions and add to chicken along with all other ingredients except the green onion tops.
  • Bring to a boil, reduce heat, cover and simmer 1 ½ to 2 hours or until beans are as tender as you like them.
  • Add green onion tops and cook 15 minutes longer.
  • Serve immediately or refrigerate and warm up for an easy lunch.

NAVY BEAN AND ESCAROLE STEW WITH FETA AND OLIVES

Navy Bean and Escarole Stew with Feta and Olives image

There's no stock in this wintry vegetarian stew recipe-it relies on the starchy bean cooking liquid for its flavor (which is a polite way of saying sorry, but you can't use canned beans here and get the same results).

Provided by Claire Saffitz

Categories     Bon Appétit     Stew     Bean     Escarole     Garlic     Fennel     Feta     Olive     Vegetarian     Dinner

Yield 8 servings

Number Of Ingredients 16

1 head of garlic, cloves separated, divided
6 tablespoons olive oil, divided, plus more for serving
1 medium onion, chopped
1 small fennel bulb, chopped
Kosher salt
1 tablespoon finely grated lemon zest
2 teaspoons finely chopped rosemary
3/4 teaspoon crushed red pepper flakes, plus more for serving
2 bay leaves
2 cups dried navy beans, soaked overnight, drained
8 ounces feta, preferably in brine, brine reserved, cheese crumbled
4 large sprigs basil, plus leaves for serving
1 cup Castelvetrano olives, pitted, torn
1 head of escarole, leaves torn into 2-inch pieces
3 tablespoons fresh lemon juice
4 (1-inch-thick) slices country-style bread

Steps:

  • Slice 1 garlic clove in half crosswise and set aside; smash remaining garlic cloves with the flat side of a chef's knife.
  • Heat 4 Tbsp. oil in a large Dutch oven or other heavy pot over medium. Cook smashed garlic, stirring often, until golden, about 5 minutes. Add onion and fennel and season lightly with salt. Cook, stirring often, until onion is translucent and fennel and onion are browned around the edges, 8-10 minutes. Add lemon zest, rosemary, and 3/4 tsp. red pepper flakes and cook, stirring often, until rosemary is very fragrant, about 3 minutes. Add bay leaves, beans, feta brine (if using; anywhere between 1/2-1 cup is fine), a couple generous pinches of salt, and 8 cups water and bring to a simmer. Partially cover pot, reduce heat to low, and gently simmer stew until beans are creamy and tender all the way through, 60-70 minutes.
  • Add basil sprigs and olives to stew, then add escarole in batches, letting wilt slightly before adding more; simmer just until escarole is tender, about 3 minutes. (If stew is too thick, add more water to reach desired consistency.) Stir in lemon juice; taste and season with more salt if needed. Pluck out bay leaves; partially cover pot and keep stew warm over low while you make the toast.
  • Heat broiler. Drizzle 2 Tbsp. oil total over both sides of bread and place on a rimmed baking sheet; season with salt. Broil until bread is golden and toasted, about 2 minutes per side. Let cool slightly, then rub with the cut sides of reserved garlic clove.
  • To serve, slice toast in half and divide among shallow bowls; ladle stew over. Top with feta, basil leaves, and more red pepper flakes and drizzle with oil.
  • Do Ahead
  • Stew can be made 3 days ahead. Let cool; cover and chill. Reheat covered over low.

  • Toss the dried beans in a large bowl and cover with tap water. Fill the bowl so that the water covers the beans by 2-4 inches. Use a wooden spoon to aggressively stir the beans, being sure to move the beans about the bowl. Set the bowl aside and allow to sit undisturbed for 30 minutes.
  • After 30 minutes, skim the top surface of the water with a spoon. You're removing any debris that may have floated to the surface. (Dried beans tend to need a good wash before consuming!)
  • Once you have cleared anything away, pour the beans into a colander and rinse the bowl out with fresh water. Add the beans back to the bowl and refill with clean, fresh tap water once again until the water reaches 2-4 inches above the beans.

  • The night before, sort through the beans to remove any stones or debris. Place the beans in a bowl and cover them with cool water. Allow the beans to soak in the refrigerator over night.
  • Slice the sausage in to medallions and add them to a large soup pot along with one tablespoon of olive oil. Saute the sausage over medium heat until it is nicely browned (about five minutes). Drain off the excess fat.
  • While the sausage is browning, dice the onion, carrot, and celery into small pieces. Mince the garlic. Add the onion, carrots, celery, and garlic to the soup pot after the sausage fat has been drained off. Saute for about five minutes more. The moisture released by the vegetables will dissolve any browned bits off of the bottom of the pot.
  • Drain the soaked beans and give them a good rinse with fresh water. Add the rinsed beans to the pot along with the bay leaf, thyme, rosemary, some freshly cracked pepper, and 8 cups of water. Stir everything to combine. Turn the heat up to high and allow the soup to come up to a full boil.
