These are delicious no-bake little round ball type cookies.

Number Of Ingredients 7

¾ cup butter
¾ cup white sugar
3 tablespoons unsweetened cocoa powder
½ teaspoon vanilla extract
1 tablespoon water
2 cups rolled oats
⅓ cup confectioners' sugar for decoration

Steps:

  • Soften butter and beat well. Add sugar and mix well. Add cocoa, vanilla and water. Then add oatmeal.
  • Shape into 36 balls and roll in confectioners' sugar. Keep in refrigerator.

15 whole graham crackers
1 cup unsalted butter
1 cup firmly packed dark brown sugar
1 teaspoon vanilla extract
1 1/3 cups chopped toasted pecans
1 (6 ounce) package semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F Lightly butter 11 x 17 inches cookie sheet.
  • Arrange graham crackers side by side, edges touching, on prepared cookie sheet.
  • Stir butter and brown sugar in heavy medium saucepan over medium heat until butter melts and sugar dissolves.
  • Mix in vanilla extract.
  • Increase heat and boil 1 minute.
  • Pour caramel mixture over graham crackers.
  • Sprinkle with chopped toasted pecans.
  • Bake until caramel topping bubbles and turns deep brown; about 10 minutes.
  • Remove from oven.
  • Immediately sprinkle chocolate chips over cookies.
  • Cool 4 minutes.
  • Cut along graham cracker edges to separate.
  • Carefully transfer to rack and cool completely.
  • Cut each cookie in half.
  • (Can be prepared 1 day ahead. Store in airtight container at room temperature).

1 and 1/3 cups pecans toasted and chopped
6 ounces semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees Lightly butter 11x17 cookie sheet Arrange graham crackers side by side, edges touching on prepared cookie sheet. Stir butter and brown sugar in medium pan for 1 minute. Pour caramel mixture over graham crackers. Sprinkle with pecans. Bake until caramel topping bubbles and becomes deep brown (about 10 min) Remove from oven, sprinkle chocolate chips over cookies. Cool 4 min. Cut along graham cracker edges to separate. Carefully transfer to rack and cool completely Cut each cookie in half Store in airtight container.

Steps:

Place butter and brown sugar in a saucepan over medium heat until buttermelts and sugar dissolves. Mix in vanilla. Increase heat to high and boil one minute. Pour caramel over graham crackers. Sprinkle with nuts. Bake until caramel toppping bubbles and turns dark brown, about 10 minutes. Remove from oven. Sprinkle with chocolate chips. Let cool 4 minutes. Transfer to a cooling rack. Break into pieces. Enjoy

  • Put flour, baking powder and sugar in the bowl of a stand mixer with a paddle attachment. Turn the machine on low and blend for 15 seconds. Add the butter, margarine and buttermilk to flour mixture before turning mixer back on. Turn mixer on medium and count to 10. This goes very quickly; the key is to not overmix the dough. There will be large chunks of butter and margarine, the size of quarters, in the dough.
  • Put butter and marmalade in a mini food processor and pulse to combine. Alternatively, whisk together butter and marmalade in a bowl. (Can be made a week in advance and refrigerated.) To serve, bring to a cool room temperature and transfer to a serving bowl. Serve next to hot biscuits.
