A wonderfully easy recipe that even my young sister-in-law can make. She isn't the best cook in the world because she is new at it. But her family was impressed when she made this simple pie.

1 (8 ounce) package cream cheese, softened
¼ cup white sugar
½ teaspoon vanilla extract
¾ cup sliced fresh strawberries, mashed
1 cup heavy whipping cream
¼ cup confectioners' sugar
¼ cup sliced fresh strawberries
1 (9 inch) prepared graham cracker crust

Steps:

  • Mix cream cheese, white sugar, and vanilla extract in a large bowl until smooth. Stir 3/4 cup mashed strawberries into cream cheese mixture.
  • Beat heavy cream and confectioners' sugar in a glass or metal bowl until stiff peaks form. Lift your beater or whisk straight up: the cream will form sharp peaks. Fold whipped cream into cream cheese mixture until evenly mixed; fold in remaining 1/4 cup sliced strawberries.
  • Spoon strawberry mixture into graham cracker crust. Chill at least 3 hours before serving.

Dough for single-crust pie
1 cup sugar
1/4 cup cornstarch
2 cups 2% milk
1/2 cup butter, cubed
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 450°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 375°., Meanwhile, in a large saucepan, combine sugar and cornstarch; stir in milk until smooth. Bring to a boil. Reduce heat; cook and stir 2 minutes or until thickened and bubbly. Remove from heat; stir in butter and vanilla. Transfer to crust; sprinkle with cinnamon. Bake until golden brown, 15-20 minutes. Cool on a wire rack; refrigerate until chilled.

1-1/3 cups cookie crumbs (chocolate sandwich, graham cracker, chocolate wafer or gingersnap)
6 Tbsp. sugar, divided
1/3 cup butter, melted
1 pkg. (16 oz.) frozen whole strawberries, thawed
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
2 cups thawed COOL WHIP Whipped Topping, divided
1-1/4 cups sliced fresh strawberries

Steps:

  • Heat oven to 350ºF.
  • Combine cookie crumbs, 2 Tbsp. sugar and butter; press onto bottom and up side of 9-inch pie plate. Bake 10 min.; cool.
  • Use pulsing action to process whole strawberries and remaining sugar in food processor just until berries are finely chopped. Add cream cheese; process just until blended. Spoon into large bowl. Add dry pudding mixes; stir 2 min. Gently stir in 1-1/2 cups COOL WHIP; spoon into crust.
  • Refrigerate 2 hours or until firm. Garnish with remaining COOL WHIP and sliced strawberries just before serving.

1/2 cup crushed Oreo cookie crumbs (7 cookies)
2 tablespoons sugar

FILLING:

1/2 cup heavy whipping cream

1 (17.5 ounce) pouch sugar cookie mix
½ cup butter, softened
1 egg
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping
⅓ cup white sugar
2 tablespoons cornstarch
4 cups sliced fresh strawberries, divided
⅓ cup water
1 teaspoon vanilla extract
1 dash red food coloring, or desired amount

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray the inside bottom of a jelly roll pan with cooking spray.
  • Mix sugar cookie mix, butter, and egg together in a large bowl until a soft dough forms; press evenly into prepared pan.
  • Bake in the preheated oven until crust is light golden brown, 10 to 15 minutes. Cool completely, about 30 minutes.
  • Beat cream cheese using an electric mixer on medium speed in a bowl until smooth. Add whipped topping and stir until smooth; spread over crust. Refrigerate.

2/3 cup wheat flour
2/3 cup sugar
1/3 cup brown sugar
1/4 cup butter
1/2 teaspoon vanilla
1/2 teaspoon almond extract
1 (17 ounce) package nasoya silken creations tofu, strawberry flavor
1 cup heavy cream
1/2 cup fresh strawberries
1 teaspoon sugar

Steps:

  • Make the pie crust by blending all the crust ingredients together with an electric mixer.
  • Grease a 9" or 10" pie pan with cooking spray, and press the crust into it. Be sure to poke some holes in it with a fork.
  • Bake at 375 for about 10 minutes or until the crust shows signs of setting.
  • Pull the crust out to cool for a bit and lower the oven temp to 350.
  • Make the pie filling by first mixing the heavy cream and strawberries together in a blender or food processor.
  • Add this mixture to the Nasoya in a mixing bowl.
  • Add the sugar.
  • Pour the mixture into the pie crust.
  • Bake at 350 for 20-35 minutes depending on oven strength, until it looks set.
  • When it looks set, turn the oven off and let it cool in there for at least half an hour. Pull it out and let it chill in the fridge for at least 3 hours prior to serving.
  • If you like, top with fresh strawberries or toasted almonds. I wanted to put toasted almonds in as part of the recipe but the filling itself is very good and different.

It is always the one they request when we have BBQs in the summertime. I even make it for them in the winter when and if I can find fresh strawberries. I think you will like it also. My grand-daughter said I should name it 'To Die For Strawberry Cream Pie.'
