PINEAPPLE COCONUT CREAM PIE IN COCONUT COOKIE CRUST
A yummy coconut cream filling over banana slices in a coconut cookie crust and finished off with a topping of crushed pineapple mixed with Cool Whip. This will really please your family and/or guests. Baking time is for crust only.

Steps:
- Mix together cookie crumbs, 2/3 c coconut and melted butter in medium bowl until well blended.
- Press mixture evenly onto bottom and up sides of 9-inch pie plate.
- Bake at 325 degrees for 10 minutes or until golden.
- Cool and arrange banana slices on bottom of crust.
- Pour cold milk into large bowl and add pudding mix.
- Beat with wire whisk for 1 minute.
- Stir remaining cup of coconut into pudding and spoon over banana slices in crust.
- Gently stir pineapple into whipped topping.
- Spread over pudding mixture.
- Refrigerate 4 hours or until set.

STRAWBERRY CREAM PIE TO DIE FOR
I have been baking this pie since my daughters were very small. They are now 40 and 42. So as you can see, I have been making this pie for a long time. It is always the one they request when we have BBQs in the summertime. I even make it for them in the winter when and if I can find fresh strawberries. I think you will like it also. My grand-daughter said I should name it 'To Die For Strawberry Cream Pie.'

- Stir strawberries with glaze in a bowl and place in refrigerator to chill. Stir cream cheese, confectioners' sugar, cinnamon, and vanilla extract together in a bowl.
- Beat cream in a separate bowl with an electric mixer just until it begins to thicken; add cream cheese mixture and continue beating until thick. Pour cream mixture into baked pie crust; top with strawberry mixture. Chill at least 1 hour before serving.

Most fresh strawberry pies call for a regular pie pastry or a graham cracker crust. This crust is similar to shortbread and complements the fresh strawberries wonderfully! Steps:
- Pre-heat oven to 375.
- Mix together crust ingredients til crumbly, and press into a 10" pie plate with floured fingers.
- Bake empty crust in pre-heated oven for 12-15 minutes, (until very lightly browned on edges).
- Remove from oven and cool completely.
- While the crust is cooling, make the glaze by mixing together the dry ingredients in a pot, then add the boiling water, and cook until the glaze is thickened and clear.
- (I use a whisk and stir constantly) Remove the glaze from heat.
- Add the butter and stir into the glaze until melted.
- Cool the glaze.
- While the glaze is cooling, if your crust is cool enough, add your sliced strawberries to the crust.
- When the glaze is cool, pour it over the sliced strawberries in the pie crust, and chill completely in the fridge until the glaze sets firmly.

- Combine cookie crumbs and melted butter. Press into a 8" pie plate and put in freezer.
- Wash, hull and puree pint of strawberries with 2 tbsp sugar and reserve.
- Beat egg whites with remaining 4 tbsps of sugar until stiff. Refrigerate.
- Whip the cream with vanilla extract until smooth and creamy, removing 1/2 cup for garnish.
- Fold the strawberry puree and egg whites into the whipping cream.
- Pour into prepared crust and freeze until hard.
- Just before serving decorate top of frozen pie with the reserved whipped cream and sliced strawberries, then drizzle with chocolate sauce and enjoy.

- Heat oven to 400°F Unroll 1 crust on work surface. Into medium bowl or food processor, crumble almond paste. Add 1 teaspoon cornstarch and the egg white. Mix or cover and process until smooth. Spread on crust to within 1 1/4 inches of edge. Unroll second crust; place on top and pat together gently. Place stuffed crust in ungreased 9-inch glass pie plate. Seal edges; flute. Cover edge with foil; fit second pie plate inside first pie plate on top of crust.
- Bake 10 minutes. Remove top pie plate; gently prick crust surface over filling about 15 times with fork. Bake uncovered about 15 minutes longer or until crust is light golden brown. Cool completely, about 1 hour.
- Meanwhile, in 2-quart saucepan, mix granulated sugar and 3 tablespoons cornstarch. Stir in strawberries. Heat to boiling over medium heat, stirring constantly. Cook and stir 3 to 5 minutes or until filling thickens. Refrigerate about 30 minutes, stirring once, until cool.
- Just before serving, spread strawberry filling in crust. In medium bowl, beat whipping cream, powdered sugar and vanilla with electric mixer on high speed until soft peaks form. Spread on top of pie. Garnish with strawberries.
FRESH PEACH COBBLER
This recipe is adapted from an old community cookbook from Oklahoma. It is different from traditional cobblers because it doesn't have a biscuit or pastry crust. It has a sugar cookie-type crust and the filling has a meringue-like texture. This is delicious served warm with vanilla ice cream.

- Preheat oven to 350ºF.
- In a small bowl, combine the 1 cup flour and powdered sugar. Add the melted margarine and stir until well mixed. Pat this mixture into the bottom of a greased 9x13" baking dish. Bake for 15 minutes. Remove from oven.
- In a medium bowl, beat the eggs until foamy. Add the granulated sugar, 1/3 cup flour, baking powder, salt, vanilla and cinnamon; mix well. Spoon mixture over the baked crust. Spread the peaches over the top.

- Make the pie crust by blending all the crust ingredients together with an electric mixer.
- Grease a 9" or 10" pie pan with cooking spray, and press the crust into it. Be sure to poke some holes in it with a fork.
- Bake at 375 for about 10 minutes or until the crust shows signs of setting.
- Pull the crust out to cool for a bit and lower the oven temp to 350.
- Make the pie filling by first mixing the heavy cream and strawberries together in a blender or food processor.
- Add this mixture to the Nasoya in a mixing bowl.
- Add the sugar.
- Pour the mixture into the pie crust.
- Bake at 350 for 20-35 minutes depending on oven strength, until it looks set.
- When it looks set, turn the oven off and let it cool in there for at least half an hour. Pull it out and let it chill in the fridge for at least 3 hours prior to serving.
- If you like, top with fresh strawberries or toasted almonds. I wanted to put toasted almonds in as part of the recipe but the filling itself is very good and different.
