HACIENDA COLORADO-STYLE BEANS ALA CHARRA
This bean dish can be either served as a side, or as a main course with white cooked riced added just before serving.

Steps:
- Sort beans and remove any debris.
- Add beans to water in pressure cooker.
- Add 1/2 teaspoon salt.
- Soak overnight.
- Add the rest of the salt to taste, bacon, onion, and garlic powder.
- Pressure cook beans until tender, but firm.
- Cooking times will vaary with altitude, but 15-20 minutes on a medium rock will cook them well.
- Run cool water over pressure cooker lid before removing lid.
- Wait for vents to drop before rotating the lid from the pot.
- Add tomatos and cilantro.
- Stir and simmer on low until heated through.
- Add liquid smoke, if desired.
NARANJADA
This is essentially a fresh orange cooler with a little sparkling water, so it's kind of like a natural soda. It isn't as bubbly, but it is quite refreshing and flavorful.
Yield makes about 4 cups

- Combine the orange juice and sugar in a pitcher and stir until the sugar has dissolved. Taste and add more sugar if you like.
- Refrigerate until completely chilled. Just before serving, add the sparkling water and serve over ice.

LA HACIENDA MEXICAN CHICKEN SOUP
I had been going to this Mexican restaurant, "La Hacienda," forever. I always ordered the huge bowl of chicken soup. I was shocked to hear that they were closing the restaurant, so I had to make my own makeshift version of the authentic classic. Enjoy!

Steps:
- In a large pot, add everything but the rice and limes. Cook on high heat, bringing the soup to a boil for about 30 minutes.
- Turn the heat down to low and simmer; add the rice and stir as little as possible until you're ready to eat.
- Optional: add avocado chunks into the soup and stir.
- Enjoy! When ready to eat, serve the soup with juiced lime wedges. The juice adds a good flavor to the soup! =).
