Napa Cabbage Coleslaw for Non-Slaw Lovers image

I have never liked Cole Slaw, but after tasting this, I've become a convert. No mayo in this recipe, and the nuts and seeds add a nice crunch you don't usually get. Got the recipe from someone I work with who brought it to a pot luck.

1 head napa cabbage
1 bunch minced green onion
1/3 cup butter
1 (3 ounce) package ramen noodles (uncooked, seasoning packet discarded)
2 tablespoons sesame seeds
1 cup slivered almonds
1/4 cup cider vinegar
3/4 cup vegetable oil
1/2 cup white sugar
2 tablespoons soy sauce

Steps:

  • Finely shred the head of cabbage (do not chop).
  • Combine the green onions and cabbage in a large bowl; cover and refrigerate until ready to serve.
  • Preheat oven to 350°F.
  • Break up the ramen noodles.
  • Melt the butter in a pan over medium heat; add the ramen noodles, almonds and sesame seeds and mix together until coated with the butter.
  • Spoon the crunchies mixture onto a baking sheet and bake at 350°F, turning often to avoid burning. Remove from oven when browned.
  • Make dressing: In a small saucepan, heat vinegar, oil, sugar and soy sauce.
  • Bring the mixture to a boil and let boil for 1 minute, stirring constantly. Remove pan from heat and let cool.
  • Immediately before serving, combine the dressing, crunchies and cabbage mixture and serve immediately.
  • Do not mix together ahead of time or the crunchies will get soggy.

1/2 medium head Chinese (napa) cabbage, chopped (about 8 cups)
1 large red bell pepper, coarsely chopped
1 large green bell pepper, coarsely chopped
1 small jicama, peeled, julienned (matchstick-cut) 1x1/4x1/4 inch (2 cups)
3 tablespoons sliced fresh chives
3 tablespoons rice vinegar
3 tablespoons honey
2 tablespoons olive oil
1 teaspoon grated lemon peel
1 to 2 tablespoons fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon grated gingerroot, if desired

Steps:

  • In 3-quart clear bowl, mix slaw ingredients.
  • In small jar with tight-fitting lid, mix dressing ingredients. Cover; shake well. Pour over slaw. Stir and serve immediately, or cover and refrigerate up to 2 hours before serving.

4 cups chopped napa or Chinese cabbage
1 can (11 ounces) mandarin oranges, drained
1 can (8 ounces) sliced water chestnuts, drained
1 cup fresh snow peas, trimmed and cut into thirds
1/2 cup chopped sweet red pepper
1 green onion, chopped
1/4 cup reduced-fat sesame ginger salad dressing
1/2 cup chow mein noodles

Steps:

  • In a large bowl, combine the first six ingredients. Drizzle with dressing and toss to coat. Just before serving, sprinkle with chow mein noodles.

With its long crinkled leaves, Napa cabbage is more delicate in flavor than green or red cabbage, making this slaw recipe unique. Rice-wine vinegar and hot chili oil are available in most supermarkets; white or red radish may be substituted if daikon is unavailable.

1 small garlic clove, minced
Zest and juice of 1 lime
2 tablespoons rice-wine vinegar
2 teaspoons soy sauce
1/4 cup chile oil
Salt
3 cups (1/2 small head) Napa cabbage, very thinly sliced
1/2 red, yellow, or orange bell pepper, stem and seeds removed, very thinly sliced
3 scallions, white and pale-green parts only, cut into 2-inch lengths, julienned
2 ounces daikon, peeled, very thinly sliced into 1/2-by-2-inch pieces
1/4 cup (about 3 ounces) snow peas, trimmed and very thinly sliced
1/4 chives, snipped into 2-inch lengths

Steps:

  • In a small bowl, whisk together garlic, zest and juice of lime, vinegar, soy sauce, and chili oil. Season with salt; set aside.
  • In a medium bowl, toss together cabbage, pepper slices, scallions, daikon, snow peas, and chives. Pour dressing over the slaw, toss to combine, and serve.

3 tablespoons rice vinegar
2 tablespoons Asian chili oil
1 tablespoon mayonnaise
1 tablespoon soy sauce
3 cups finely shredded napa cabbage
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1/2 cup thinly sliced snow peas
3 scallions, thinly sliced
Salt and freshly ground black pepper

Steps:

  • Whisk together the lime juice, vinegar, chili oil, mayonnaise and soy sauce in a large bowl. Add the cabbage, peppers, snow peas and scallions and toss to combine. Season with salt and pepper, to taste. Refrigerate for at least 30 minutes to allow flavors to meld.
