butter, for greasing
2 c. (heaping) cranberries
3/4 c. pecans, chopped (measure, then chop)
2/3 c. sugar
1 c. flour
1 c. sugar
1 stick unsalted butter, melted
2 whole eggs, lightly beaten
1 tsp. pure almond extract
1/4 tsp. salt
1 tbsp. sugar for sprinkling

Steps:

  • *Adapted from a recipe by Laurie Colwin* Preheat oven to 350 degrees.
  • Generously butter a cake pan or pie pan. Add cranberries to the bottom of the pan. Sprinkle on chopped pecans, then sprinkle on 2/3 cup sugar.
  • In a mixing bowl, combine flour, 1 cup sugar, melted butter, eggs, almond extract, and salt. Stir gently to combine.
  • Pour batter slowly over the top in large "ribbons" in order to evenly cover the surface. Spread gently if necessary.
  • Bake for 45 to 50 minutes. 5 minutes before removing from oven, sprinkle surface with 1 tablespoon sugar for a little extra crunch.
  • Cut into wedges and serve with ice cream or freshly whipped cream.

1 cup all-purpose flour
1 cup white sugar
¼ teaspoon salt
2 cups cranberries
½ cup chopped walnuts
½ cup butter, melted
2 eggs
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch pie pan.
  • Combine the flour, sugar, and salt. Stir in the cranberries and the walnuts, and toss to coat. Stir in the butter, beaten eggs, and almond extract. If you are using frozen cranberries, the mixture will be very thick. Spread the batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a wooden pick inserted near the center comes out clean. Serve warm with whipped cream or ice cream.

2 cups fresh or frozen cranberries
1/2 cup pecans (roughly chopped)
1 1/4 cup sugar (divided use)
1 cup all-purpose flour
1 stick unsalted butter (melted & slightly cooled)
2 eggs (lightly beaten)
1 teaspoon vanilla extract
1 teaspoon almond extract
1/4 teaspoon salt
1 Tablespoon Turbinado sugar (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare the baking pan (pie pan or round cake pan) by generously greasing the bottom & sides with butter. Now is not the time to be stingy with the butter.
  • Add cranberries, then chopped pecans to the prepared pan, and top with 1/2 cup of sugar.
  • Combine flour, 3/4 cup sugar, melted butter, eggs, vanilla, almond extract and salt in a medium-size mixing bowl. Stir until just combined. The batter will be thick.
  • Pour the batter over the cranberry mixture, completely covering the cranberries. If you need to spread the batter for better coverage - be gentle so you don't pull the cranberries above the batter.
  • Bake for 40-45 minutes, until toothpick comes out clean. If using optional turbinado sugar, remove from oven 5 minutes before done, sprinkle with sugar and return to oven to finish baking.
  • Allow to cool slightly before cutting. May be served warm or at room temperature. Top with whipped cream or ice cream if desired.

2 cups fresh or frozen cranberries
1/2 cup sugar
1/2 cup chopped pecans
3/4 cup butter (softened)
1 cup sugar
2 eggs
1 teaspoon almond extract
1 cup all-purpose flour *
2/3 cup brown rice flour *
1/3 cup tapioca starch *

Steps:

  • Preheat the oven to 350 degrees. Combine the filling ingredients and stir to combine. Pour into a generously buttered 10" pie plate.
  • Combine the butter and sugar in a mixing bowl and beat until smooth. Add the eggs and almond extract and beat again until fluffy. Add the flour and beat once more.
  • Spread the thick batter over the cranberry mixture in the pan. I used a small cookie scoop to quickly dollop spoonfuls across the top of the pie. It doesn't need to look perfect.
  • Bake for 40-50 minutes, test doneness with a toothpick, just to make sure the topping is cooked through. Serve warm with whipped cream or vanilla ice cream. Enjoy!

1 cup sugar, divided
1/2 cup sliced almonds
2 large eggs, room temperature
3/4 cup butter, melted
1 teaspoon almond extract
1 cup all-purpose flour
1 tablespoon confectioners' sugar

Steps:

  • In a small bowl, combine the cranberries, 1/2 cup sugar and almonds. Transfer to a greased 11-in. fluted tart pan with a removable bottom. Place on a baking sheet., In a small bowl, beat the eggs, butter, extract and remaining sugar. Beat in flour just until moistened (batter will be thick). Spread evenly over berries. , Bake at 325° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack. Dust with confectioners' sugar. This recipe was given to me by a friend, and it is the best balance of sweet and tart I've tasted in a cranberry pie. It can be served with vanilla ice cream or yogurt.

2 cups fresh cranberries
½ cup chopped pecans
1 ¼ cups white sugar, divided
1 cup all-purpose flour
¾ cup unsalted butter, melted
2 large eggs, slightly beaten
1 ½ teaspoons almond extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray an 8-inch deep dish pie pan with cooking spray. Pour cranberries, pecans, and 1/2 cup sugar into the pie pan.
  • Combine flour, remaining 3/4 cup sugar, melted butter, eggs, and almond extract in a bowl. Mix with an electric beater until creamy and white in color. Pour over cranberry mixture in the pie pan.
  • Bake in the preheated oven until slightly crusty on the edges, lightly set in the middle, and light golden in color, about 35 minutes. Don't overbake; you do not want to dry it out to a cake-like consistency.
