NANNY'S NEVER FAIL PIE CRUST- 5 STAR FAMILY FAVORITE

Steps:
- Cut crisco and butter into the flour and salt. Beat egg, vinegar and water.
- Mix the egg mixture into the flour mixture.
- Knead together then roll out into 3 pie crusts.
- Nanny would put them into a pie dish and cover and freeze for up to a few weeks.
- For a baked crust bake the crust for about 15 minutes at 375° till golden.

- Simmer 4 hours--the longer the better.

Steps:
- Combine all accept vanilla and cook on low heat until very thick. Stir often to prevent scorching. Remove from heat- let sit a minute or two and stir in vanilla.
- Pour into pie shell.
- Top with meringue and bake as directed.

- Mix all of the ingredients together.
- Chill at least 1 hour before serving.
- Serve while still in their sauce w/ crackers.
- The chili sauce is on the condiment aisle- by the ketchup.
- Great side dish.
- Nanny got this recipe out of a newspaper in 1975. Very good dish.

STUFFED FLOUNDER FOR MAMA
Mama always loved to order this dish when we went to the beach. But many cooks now avoid serving it since the harvesting methods are not considered ecologically friendly. In many instances, the fish are caught using a trawling method. Imagine a bulldozer scraping along the ocean floor, indiscriminately catching intended as well as unintended species. Even though flounder also suffers from overfishing (it seems too many people appreciate one of the best fish in the Gulf): I am calling for flounder here for old times' sake. But you can substitute flat fish like English or Dover sole and turbot, which get better ecological marks and whose flavors are similar to that of flounder.

- Preheat the oven to 350°F. Brush a large baking dish with oil.
- Heat the 1 tablespoon oil in a large skillet over medium heat. Add the onion and celery and cook until clear and translucent, 3 to 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Remove from the heat and transfer the mixture to a large bowl to cool slightly. Add the breadcrumbs, eggs, parsley, paprika, and cayenne. Season with salt and pepper. Using a large spatula, fold in the crabmeat, taking care not to break the lumps.
- Season both sides of the fish fillets with salt and pepper. Place the fillets in the prepared baking dish and top each with an equal amount of crabmeat mixture, patting to a uniform thickness. Top each fillet with a piece of butter. Bake until the fish are cooked through, 15 to 20 minutes. Serve immediately.

Steps:
- To make the Basic Roux: Heat 3/4 cup oil in a iron skillet. When oil is hot, gradually add 1 cup flour, stirring continuously until well mixed. Lower heat and continue to stir until chocolate brown. When roux is chocolate brown remove from skillet and set aside. If it remains in skillet it will continue to cook and get to dark.
- In a large pot-not a black iron pot-saute onion,celery,bell pepper, garlic and okra in butter for about 10 minutes. Add roux, water and worcestershire.
- Cook for 1 hour.
- Add all other ingredients, except for parsley. Cook for 1 more hour.Adjust seasoning if needed- salt and pepper are to taste. Add parsley.
- Serve over rice.
- This is better the next day- if there is any left. This says serves 6 - Nanny usually made a double batch.
